Food Preferences Among Children At Arcadia Elementary School, Laurel Lee
Food Preferences Among Children At Arcadia Elementary School, Laurel Lee
Community Based Research
My research, conducted from September through November of 2017, showed that the children preferred more processed foods and starches instead of healthier options such as fruits and vegetables, even when healthy options were available. According to the parents/caregivers surveyed, their children prefer to eat processed American meals. Parents/caregivers desired for their children to eat a variety of different foods including fruit, vegetables, proteins, and traditional Hispanic food. This study acknowledges that healthy meal options are available at schools, but there needs to be more research on how to best encourage students to take advantage of these nutritious choices in order …

Effectiveness Of Individual Nutrition Education Compared To Group Education, In Improving Anthropometric And Biochemical Indices Among Hypertensive Adults With Excessive Body Weight: A Randomized Controlled Trial, Danuta Gajewska, Alicja Kucharska, Marcin Kozak, Shahla M. Wunderlich, Joanna Niegowska
Department of Nutrition and Food Studies Scholarship and Creative Works
Objective: The study aims to compare the effectiveness of individual and group nutrition education methods in improving key anthropometric and biochemical markers in drug-treated, overweight-obese hypertensive adults. Methods: The randomized trial included 170 patients with pharmacologically well-controlled primary hypertension and body mass index (BMI) ≥ 25 kg/m2. For six months, the patients received six sessions, either one-to-one individual nutrition education (IE, n = 89) or group education (GE, n= 81), developed by dietitians. Anthropometric measurements, body composition, and fasting measures of biochemical parameters were obtained at baseline and after six months of intervention. Results: 150 patients completed the …
Assessing Prevalence Of Eating Disorders Among College Students, Taylor Jordan Duncan
Assessing Prevalence Of Eating Disorders Among College Students, Taylor Jordan Duncan
Honors Theses
Eating disorders have become a subject of concern for college-aged young adults in recent years. Risk factors like social media use are contributing to an increase in affected students, and research suggests that gender along with other variables plays a significant role. This thesis examined the current research on eating disorders and risk factors associated with their development. Through an online survey, information from freshman, sophomore, junior, senior, and graduate students at The University of Southern Mississippi regarding their current eating behaviors, feelings toward food and body, and demographic information was collected. Data collected indicated the student population’s level of …

Effects Of Dietary Copper, Zinc And Manganese Source And Level On The Acute Inflammatory Response Of Broilers, Chelsea Ellington
Graduate Theses and Dissertations
Trace minerals, particularly copper, zinc and manganese, play a role in ensuring optimal immune function. To examine the effects of diets containing different levels and sources of trace minerals on the inflammatory response, Cobb 500 broilers were fed four experimental diets containing 5 mg/kg Cu and 45 mg/kg of Zn and Mn or 10 mg/kg Cu and 90 mg/kg Zn and Mn in either the sulfate or hydroxychloride form. When the broilers were 5 weeks of age, 16 μg of lipopolysaccharide (LPS) was injected into the pulp of growing feathers (GF; 16 GF per chicken; 1 μg LPS per GF). …
Effects Of Video Technology On Cooking Self-Efficacy, Zakary Kaesberg
Effects Of Video Technology On Cooking Self-Efficacy, Zakary Kaesberg
Theses and Dissertations
College students, on average, have poor nutritional habits associated with increasing risk of obesity and chronic disease later in life. Today’s average student has low self-efficacy for cooking meals in the home and thus, is highly dependent on convenience-type food items. A valuable technique for improving cooking skill in individuals is through the use of video technology to teach cooking. Undergraduate students are likely Millennials, and prefer to use technology for learning purposes. The objective of this study was to test the effect of video technology on cooking self-efficacy in undergraduate college students living off-campus at a public Midwestern University. …
Does Macronutrient Consumption Affect Aerobic Capacity?, Jordan Bush-Means
Does Macronutrient Consumption Affect Aerobic Capacity?, Jordan Bush-Means
Health, Human Performance and Recreation Undergraduate Honors Theses
Background: Fitness in the United States is declining as the prevalence of obesity rises. It is known generally that exercise and diet both play a part in becoming fit, therefore veering away from being obese and/or overweight. Although people are aware they need to eat healthy foods and participate in physical activity, the role that dietary behaviors have on exercise, particularly aerobic capacity, remains unresolved. Purpose: The purpose of this study was to analyze dietary behaviors and to examine associations with maximal aerobic capacity. We hypothesize that those who consume each food group will have a higher volume …

Accessing Healthy Food: Behavioral And Environmental Determinants Among Low-Income Populations, Abiodun Tolulope Atoloye
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
On average, low-income individuals have poorer diet quality compared to their high-income counterparts. However, improved food access may offer opportunities to improve diet among this population. This study examines how the low-income population navigates between barriers, resources, and opportunities to acquire healthy foods in different settings.
Chapter 3 examined how the use of a farmers’ market incentive program among the low-income population impacts F&V consumption. We observed no effect on F&V consumption due to program participation but users of the program have a significantly higher F&V consumption than non-users. Chapter 4 identified transportation difficulties as a barrier to the uptake …

The Effects Of Caffeine Ingestion On The Hemostatic Response To Simulated Firefighting Activities, Sierra Wassell
Showcase of Graduate Student Scholarship and Creative Activities
The leading cause of death among firefighters is sudden cardiac event, and it is acknowledged that most ischemic events are due to an occlusive thrombus formation. In addition, due to the demanding job requirements and shift work, firefighters are commonly known to overuse caffeine as an ergogenic aid. The purposes of this study were to examine the potential effects of caffeine on the hemostatic response to simulated firefighting activity.

Department of Nutrition and Health Sciences: Faculty Publications
Background: Exosomes transfer regulatory microRNAs (miRs) from donor cells to recipient cells. Exosomes and miRs originate from both endogenous synthesis and dietary sources such as milk. miR-200a-3p is a negative regulator of the proinflammatory chemokine (C-X-C motif) ligand 9 (CXCL9). Male Mdr1a−/− mice spontaneously develop clinical signs of inflammatory bowel disease (IBD).
Objectives: We assessed whether dietary depletion of exosomes and miRs alters the severity of IBD in Mdr1a−/− mice owing to aberrant regulation of proinflammatory cytokines.
Methods: Starting at 5 wk of age, 16 male Mdr1a−/− mice were fed either milk exosome– and RNA-sufficient (ERS) or milk exosome– and …

Iodine deficiency is one of the major causes of brain damage in childhood. However, iodine supplementation during early pregnancy and lactation can prevent the ill effects of iodine deficiency. This study evaluated maternal and infant thyroid function and infant visual information processing (VIP) in the context of maternal iodine supplementation. A community-based, randomized, supplementation trial was conducted. Mother infant dyads (n = 106) were enrolled within the first 10 days after delivery to participate in this study. Mothers were randomly assigned either to receive a potassium iodide capsule (225 μg iodine) daily for 26 weeks or iodized salt weekly for …
