The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. Carbohydrate is a major composition in oral nutrition supplement. Modification of carbohydrate composition using tapioca resistant maltodextrin (TRM) may improve the glycemic response. This study aimed to investigate the effect of TRM and TRM containing-ONS on glycemic response, satiety, and gastrointestinal (GI) tolerability in healthy individuals. Physicochemical properties and sensory evaluation of developed ONS were also investigated. In Phase I, the peak of plasma glucose and insulin response after TRM (50 g) ingestion was lowest compared to 50 g glucose (GL) and tapioca maltodextrin (TM) in 16 healthy participants. However, the effect of Thai berries on delaying carbohydrate digestion, antioxidant properties, glycation inhibition, and anti-adipogenesis have not been investigated. RD43 rice (Oryza sativa L.) is a cross-breed between Khao Jow Hawm Suphan Buri and Supan Buri1. It is characterized as a low amylose content, soft texture, and mild fragrance. However, its potential of metabolic health effect and food application remains unknown. In the present study, daily consumption of RD43 rice containing 14.10 g of undigestible starch for 12 weeks showed a significant reduction in fasting plasma glucose, insulin, HbA1c, and HOMA-IR in prediabetic participants. The Jawbone deer herd has been monitored on their wintering grounds since the 1950s and recently began decreasing over the last several years. Across much of North America, moose populations (Alces alces) are declining due to disease, predation, climate, and anthropogenic pressures. Despite this, populations of moose in Colorado have continued to grow. Studying successful (i.e., persistent or growing) populations of moose can facilitate the continued conservation of the species by identifying habitat features critical for moose persistence.

Developmental plasticity is the phenotypic variation between organisms that is caused by environmental interactions affecting the developmental systems of organisms. The research focused primarily on nutrition-responsive developmental plasticity. In this research we used the nutritionally determined head horn development of Onthophagus taurus to better understand the developmental mechanisms and genetic underpinnings of nutrition-responsive trait development. Substance use disorder (SUD) is a prevalent problem in the United States, with 19.7 million Americans aged 12 and older battling an SUD in 2017. Multiple factors influence the risk that someone will develop an SUD, including family history, childhood trauma, community factors, and poverty. West Virginia has the highest rate of overdose deaths in the nation, and individuals in WV are at high risk of SUD due to the aforementioned risk factors. Background: Patients with malignant pleural disease (MPD) have advanced cancer and high symptom burden. Goals of patient care are to optimise health-related quality-of-life (HR-QoL) and participation in daily physical activities. Supportive care interventions such as nutrition and exercise could offer benefit to patients. However, there is a lack of information on the prevalence of low muscle mass (i.e., pre-sarcopenia), malnutrition, inactivity and poor physical functioning in patients with MPD. Background/Objectives—γ-Tocopherol has unique properties that protect against nitrogen oxide-mediated cellular damage. To elucidate the potential role of γ-tocopherol in the aging process, we examined the associations of serum γ-tocopherol levels with all-cause and cause-specific mortality.

Subjects/Methods—Among participants in the biorepository subcohort of the Multiethnic Cohort Study, pre-cancer diagnostic serum γ-tocopherol levels were measured in a subset of 3904 men and 4461 women. Of these, 22.7% of men and 13.5% of women died during a mean follow- up time of 9.6±2.6 years. Hazard ratios (HRs) and 95% confidence intervals (95%CIs) for mortality associated with γ-tocopherol were estimated by Cox proportional hazards …

Antioxidant Activity Of Sesame Seed Lignans In Sunflower And Flaxseed Oils, S. Y. Hadeel, S. A. Khalida, M. K. Walsh

This study investigated the antioxidant activity of crude lignan extracts and purified lignans (sesamin, sesamolin, and sesamol) in sunflower and flaxseed oils. Lignan extracts were prepared from roasted sesame seed oil (LRSO) and unroasted sesame seed oil (LUSO). Additionally, the individual lignans were purified from both oils. The crude extracts and purified lignans were added at concentrations of 0.01, 0.02 and 0.03% to the oils and stored at 25 and 65°C over time and peroxide values and thiobarbituric acid values were measured. Each oil showed an increase in oxidation over time, with the samples stored at 65°C exhibiting accelerated oxidation. …
