The Pork Checkoff program was founded in 1986 as a means to strengthen U.S. pork in the market place (Pork Checkoff). Under this program all U.S. pork producers and importers pay $0.40 for every $100 worth of pigs is sold (Pork Checkoff). Funds are then used for pork promotion, research, and education for producers and consumers (Pork Checkoff). BACKGROUND: There are approximately 1 million adults in the United States with multiple sclerosis (MS). Persons with MS are interested in diet as a second-line therapy for improving MS symptoms and disease progression. Examination of desired resources regarding diet among persons with MS is necessary for supporting behavior change.
METHODS: Twenty-five adults with MS completed 1-on-1, online semistructured interviews. An inductive, 6-phase, semantic thematic analysis was applied to identify themes associated with participant preferences for dietary behavior change.
RESULTS: The research team crafted 4 key themes from the data that encompassed participants' desired resources for dietary behavior change. Theme 1, …

Introduction: The gut microbiome is believed to have a significant impact on health throughout the lifespan, and the influence of infant nutrition and other environmental factors are of particular interest in its development. The aim of this research project was to learn more about the microbiome and short chain fatty acid (SCFA) composition of toddlers of differing weights, considering birth history, environment, and diet. There is a large gap between minority representation in the field of dietetics and the United States population, and nutrition students need advanced cultural competence training in preparation for future work with diverse populations. Universal recommendations for delivering and evaluating cultural competence training in nutrition programs are non-existent, and students tend to lack understanding of how to develop this skill. Service-learning in underserved communities with reflective assignments have been used to develop cultural competence skills, but most reported results are anecdotal. Objective: Studies that examine disordered eating in samples of Asian individuals living in the United States frequently combine all individuals of Asian descent into a single group, which can obscure important differences between groups and their experiences of acculturation. The goal of the present study was to establish the relation of acculturation, internalization of appearance ideals, and religiosity as predicting body dissatisfaction and disordered eating in women of South and Southeast Asian (SSEA) descent.

Background: Previous research has identified health disparities between sexual minority and heterosexual women, including increased rates of obesity and binge eating in sexual minority women. Established predictors of binge eating behavior include negative emotions and sociocultural processes; however, these studies are generally conducted in samples of young women where sexual identity is not known or reported. There is a dearth of research evaluating how sexual minority–specific factors (eg, minority stress and connectedness to the lesbian, gay, bisexual, transgender, and queer community) may affect binge eating in sexual minority women. Studies have found that youth are experiencing higher anxiety levels than prior to COVID-19, and youth with type 1 diabetes are at higher risk. Medical specialty camps are a type of camp that provide opportunities for youth with chronic illnesses to share common goals, increase socialization, improve camper well-being, and increase knowledge of diabetes management. The program evaluation sought to determine the impact of a campers’ outcomes of independence and perceived competence and familial impact during COVID-19. Cholangiocarcinoma (CCA) and pancreatic ductal adenocarcinoma (PDAC) are complex and heterogeneous cancers. Conventional therapy approaches often fail to elicit significant responses in patients, resulting in low survival rates compared to other cancer types. This could be due to their immunosuppressive and desmoplastic tumor microenvironment, which renders cancer cells resistant to conventional therapies, highlighting the urgent need for more effective therapeutic approaches. Regulated cell death pathways have been extensively studied in recent years as a promising target for developing new strategies in cancer treatment. The Western diet, which is rich in refined carbohydrates and unhealthy fats but low in dietary fiber, has been linked to an increased risk of metabolic disorders and gut barrier dysfunction. In the present study, the dietary fiber-rich powder from dragon fruit (Hylocereus undatus) peel (DFP) was developed as a functional food ingredient. DFP contains high dietary fiber (65.2%), primarily cellulose and pectin, along with bioactive phytochemicals such as phenolic compounds and betacyanins. Development Of High Protein Beverage From Hydrolyzed Egg White, Nuntorn Charoensak

The primary objective of this study was to examine the impact of enzymatic treatment on pasteurized egg white protein (EWP) and assess its influence on various physicochemical properties and antioxidant activity. Our findings revealed that the addition of SDAY10 enzymes led to a significant increase in lightness (L*), redness (a*), and yellowness (b*) parameters. Furthermore, higher concentrations of the enzyme resulted in a considerable reduction in pH, viscosity, and volume mean diameter (D4,3) of EWP protein compared to the control group (P < 0.05). Additionally, the application of SDAY10 enzyme (0.1-0.3% w/v) for EWP hydrolysis exhibited a noteworthy enhancement in antioxidant activity (measured by DPPH, ABTS, and FRAP assays) compared to lower enzyme concentrations. Notably, the 0.3% concentration of SDAY10 exhibited the highest release of amino acids during in vitro digestion and received the highest sensory evaluation score. Consequently, employing SDAY10 enzymes at a concentration of 0.3% w/v for EWP hydrolysis demonstrates significant potential for improving the physical properties of EWP and enhancing antioxidant activity. However, it is imperative to investigate the sensory evaluation with regards to the bitterness of the product developed using such enzymes.

Advancements in technology have allowed for the development of applications for supporting the nutrition care process. The objectives of this study were to develop and validate a nutrition application incorporating the food and nutrtion databases, and to assess the satisfaction of dietitians toward the developed application. Seventy registered dietitians were recruited to evaluate two sets of the food photographs prepared based on Thai food exchange list (Thai FEL) and Thai food based dietary guideline (Thai FBDG) for three consecutive days. How do we manage fish species, and how do fish, in turn, impact us? This portfolio of three stories will explore some of the ways in which humans interact with aquatic landscapes. First, we’ll go to Flathead Lake in Montana, where invasive lake trout have all but decimated native trout species, and learn what the Confederated Salish and Kootenai Tribes are doing to address the issue. Then, we’ll examine stories of a legendary Big Fish in Alaska’s Lake Iliamna, and think about what it means to scientifically prove something as real. Introduction Home parenteral nutrition (HPN) is essential for patients with intestinal failure requiring long-term nutritional support. The Amerita Quality Improvement Project for HPN Patients (QIP-PN) explored the effect of a physician nutrition expert (PNE)-led multidisciplinary nutritional support team (MNST) on HPN care for patients under its service.

Introduction: Nutrition professionals face implementation challenges due to their lack of knowledge to incorporate D&I science into intervention design. To improve intervention outcomes, nutrition professionals must be trained in D&I science, which are currently absent in the field.
Aims: To identify and assess nutrition educators and practitioners perceived motivations, self-efficacy, and attitudes in using D&I science to inform the educational design and strategies of a nutrition-specific D&I curriculum for nutrition educators. Diabetes is a chronic health condition that affects millions of Americans. It can have significant, lasting effects on an individual’s mental and physical wellbeing, especially when it goes unmanaged or untreated. Diabetes has been a growing problem in West Virginia (WV), which has the highest adult rate of diabetes at 15.7% in the US. Aim The aim of this research was to understand the eating behaviour traits and food choice motivations of Irish teens, and to investigate the social, psychological, and attitudinal determinants of these eating behaviour traits and influences on food choice.
Methods Mixed methods were used in this research, using quantitative analysis of data from the National Teens’ Food Survey II (NTFSII), a cross-sectional study of teens aged 13-18 years old (N=428). Objectives The aim of this study is to fill a key information gap on the nutrition-related epidemiology of orphaned and vulnerable children living within institution-based care (IBC) across six countries.
Design A retrospective analysis with Shewhart control charts and funnel plots to explore intersite and over time variations in nutritional status.

Pada tahun 2015, sebanyak 65% dari total kelahiran mati diseluruh dunia disumbang oleh sepuluh negara dengan jumlah kelahiran mati terbanyak. Indonesia menempati posisi ke-8 dengan total sebanyak 73.400 kejadian dengan angka lahir mati (stillbirth rate/SBR) sebesar 13 per 1.000 kelahiran. Rendahnya cakupan layanan antenatal diduga berhubungan secara kuatdengan rendahnya lahir mati antepartum. Studi ini dilakukan dengan tujuan untuk melihat hubungan riwayat kunjungan antenatal (antenatal care/ANC) dengan kejadian lahir mati diIndonesia menggunakan data sekunder yang bersumber dari IFLS 5 tahun 2014. Kejadian luar biasa (KLB) Hepatitis A Kabupaten Bogor terus meningkat setiap tahunnya. Pada tahun 2018 terdapat 29 kasusdan pada tahun 2019 meningkat hingga 495 kasus. Penelitian ini bertujuan untuk menggambarkan epidemiologi berdasarkan orang, tempat, waktu. Hasil penelitian ini diharapkan dapat digunakan sebagai dasar upaya intevensi yang lebih optimaldan tepat sasaran. Data penelitian diambil dari laporan KLB dandari data kasus Hepatitis A di Dinas Kesehatan Kabupaten Bogor dari Januari-Desember 2019 dan didokumentasikan ke dalam tabel observasi, pengambilan data dilakukan pada Bulan Februari2020 dengan desain penelitian case series. Covid-19 (Coronavirus Disease-2019) adalah penyakit yang disebabkan oleh virus SARS-CoV-2 (Severe Acute Respiratory Syndrome-Coronavirus-2). Usia tua (>65 tahun), jenis kelamin laki-laki, hipertensi, penyakit kardiovaskular, diabetes, PPOK dan kanker dapat meningkatkan risiko kematian akibat Covid-19. Kota Tangerang Selatan berpotensi mengalami kenaikan kasus Covid-19 karena berbatasan langsung dengan DKI Jakarta yang merupakan episentrum persebaran Covid-19, sehingga peneliti tertarik untuk melakukan penelitian ini. Status gizi merupakan ukuran keberhasilan dalam pemenuhan nutrisi anak yang diukur berdasarkan berat badan dan tinggi badan anak. Data status gizi pada anak usia umur 5-12 tahun di DKI Jakarta menunjukkan underweight 14,0%, stunting 22,7%, wasting 9,9%, dan overweight 6,8%. Data secara spesifik untuk wilayah Jakarta Selatan adalah underweight 7,4%, stunting 17,8%, wasting 6,3%, dan overweight 7,3%. Dari data tersebut didapatkan gambaran mengenai permasalahan gizi yang terjadi di DKI Jakarta. Permasalahan gizi memiliki dampak pada tumbuh kembang anak. Low-hierarchy selenoproteins are sensitive to selenium (Se) deficiency and are proposed to confer the protection of body Se against age- and development-related diseases. Selenoprotein H (SELENOH), a low-hierarchy selenoprotein, is greatly downregulated by both dietary Se deficiency and age. To explore physiological roles of SELENOH, Selenoh knockout mice were employed.
Segregation analyses demonstrated reduced frequencies of homozygotes and heterozygotes among the neonates of the breeding combinations of Selenoh+/- males vs. Selenoh+/- or Selenoh-/- females, demonstrating essential roles of SELENOH in embryogenesis. Litter sizes from these two breeding groups were comparable with control, suggesting a role of SELENOH …
