USU senior Connor has lived in the Uintah Basin all his life and studies kinesiology. Senior Casey, a Cache Valley native, studies climate science and works at the Utah Climate Center. Junior Bridger, also of Cache Valley, studies nutrition science. They led and funded this project through a student grant. Background: The prevalence of double burden of malnutrition (DBM) is high in low- and middle-income countries (LMICs). Data on malnutrition trends is present for children age, however the data for school-going children and adolescents aged 5-15 years is scarce.
Objective: This systematic review presents the pooled prevalence of nutritional status and dietary intake among school-going children and adolescents (5-15 years of age) in an LMIC of Pakistan and the perspective for broader global nutrition in this age group.

The aim of this study was to examine video-recorded observations of evening family mealtime at home among Mexican American children to help elucidate style of meal service, fathers' and mothers' feeding practices and child's eating behavior. Consistent with guidelines for coding behaviors, we analyzed observational data of evening mealtimes of 71 Mexican American children aged eight to 10 years. Regarding style of meal service, in almost all cases (96%), parents plated the child's food, with more available on the table or counter in 40% of the observations. Aims: (1) To describe changes in arterial stiffness and heart rate variability (HRV) over a 5-year interval, (2) examine changes by sex and race-ethnicity, and (3) evaluate the risk factors associated with the longitudinal changes in arterial stiffness and HRV.
Methods: Participants with youth-onset type 2 diabetes enrolled in the observational follow-up phase of the Treatment Options for Type 2 Diabetes in Adolescents and Youth (TODAY) clinical trial had arterial stiffness [(pulse wave velocity, augmentation index, brachial distensibility] and six indices of HRV measured 5 years apart. Maternal methyl donor supplementation during pregnancy has demonstrated lasting influence on offspring DNA methylation. However, it is unknown whether an adverse postnatal environment, such as high-fat (HF) feeding, overrides the influence of prenatal methyl donor supplementation on offspring epigenome. In this study, we examined whether maternal supplementation of choline (CS), a methyl donor, interacts with prenatal and postnatal HF feeding to alter global and site-specific DNA methylation in offspring. Purpose: A systematic review was conducted to assess how the involvement of a registered dietitian nutritionist (RDN) in healthy behavior interventions (HBIs) potentially affects outcomes in older adults with type 2 diabetes (T2D).
Methods: Literature was searched for primary research published between 2016 and 2020 on HBI involving a RDN affecting outcomes in older adults with T2D. Evaluations of hemoglobin A1c (HbA1c), blood glucose, blood pressure, cholesterol, anthropometry, body composition, medication usage, healthcare cost, and self-efficacy and/or adherence to healthy behaviors outcomes were selected for inclusion. Background: Milk exosomes and their microRNA (miR) cargos are bioavailable. The content of exosomes and miRs is negligible in infant formulas compared to human milk, and dietary depletion of exosomes led to changes in bacterial communities and impaired gut health in juvenile mice. Adverse effects of formula feeding may be compounded by using soy formulas due to exosome binding by abundant lectins in that matrix. Background: Given the utility of the doubly labeled water (DLW) method for determination of energy expenditure, additional techniques for isotope analysis of the samples are welcome. Laser-based instruments are one such new analytical tool, but their accuracy and feasibility for DLW studies are grossly understudied.

Background: Valid biomarkers of fruit and vegetable (FV) intake are needed for field-based nutrition research.
Objectives: To examine criterion-related validity of pressure-mediated reflection spectroscopy as a proxy measure of FV intake, using plasma carotenoids and self-reported FV and carotenoid intake as primary and secondary criterion measures, respectively.

Low total energy expenditure (TEE, MJ/d) has been a hypothesized risk factor for weight gain, but repeatability of TEE, a critical variable in longitudinal studies of energy balance, is understudied. We examine repeated doubly labeled water (DLW) measurements of TEE in 348 adults and 47 children from the IAEA DLW Database (mean ± SD time interval: 1.9 ± 2.9 y) to assess repeatability of TEE, and to examine if TEE adjusted for age, sex, fat-free mass, and fat mass is associated with changes in weight or body composition. Omega-3 and omega-6 fatty acids are important for neonatal development and health. One mechanism by which omega-3 and omega-6 fatty acids exert their effects is through their metabolism into oxylipins and specialized pro-resolving mediators. However, the influence of oxylipins on fetal growth is not well understood. Therefore, the objective of this study was to identify oxylipins present in maternal and umbilical cord plasma and investigate their relationship with infant growth. Liquid chromatography–tandem mass spectrometry was used to quantify oxylipin levels in plasma collected at the time of delivery. Today, while the number of stunted children is decreasing in all geographies, the progress is not consistent. Moreover, there is an increasing prevalence of overweight and obesity among children and adolescent. Globally, about half of all children under five do not receive essential nutrients, often unnoticed until too late. On the other end of the spectrum, the incidence of overweight and obesity in 5-19 year old has increased from 4% in 1975 to 18% in 2016 1. Background: Maternal undernutrition is critical in the etiology of poor perinatal outcomes and accounts for 20% of small-for-gestational-age (SGA) births. High levels of food insecurity, antenatal undernourishment, and childhood undernutrition necessitate the supplementation of fortified balanced energy protein (BEP) during pregnancy in low-income settings especially with scarce literature available in this subject. Scavenger receptors belong to a superfamily of proteins that are structurally heterogeneous and encompass the miscellaneous group of transmembrane proteins and soluble secretory extracellular domain. They are functionally diverse as they are involved in various disorders and biological pathways and their major function in innate immunity and homeostasis. This study intends to identify a predictive resting metabolic rate (pRMR) equation that is predictive of the measured resting metabolic rate (mRMR) in a sample that includes a group of Black Americans. The handful of commonly used pRMR equations, such as the Mifflin- St. Jeor or Harris-Benedict equations, were created without defining the demographics of their populations, while validation of these equations is typically done with almost exclusively Caucasian subjects. Black and brown Americans require the same evidence of precision in predictions of daily energy needs as Caucasian Americans. Background: The Whole-Body Approach (WBA) is a program created by Northern Illinois Food Bank in partnership with Northern Illinois University (NIU) Nutrition and Dietetics Graduate students and faculty. This program has been delivered over the course of six years to various food pantries around the Northern Illinois area and modified in response to participants’ feedback. The topics that are discussed throughout the program include stress management, relationship with food, mindful eating, healthy body image, and enjoyable movement. Objective: Balanced Budget Bites was created to educate individuals of Feeding Brookings about different cooking techniques, food safety, meal planning, budgeting, and financial resources in the Brookings, SD area while highlighting lower-cost food items. Participants and Recruitment: The target audience of Balanced Budget Bites were individuals that participated in Feeding Brookings that were recruited for four weeks via a flyer and a posting of the flyer on Feeding Brookings’ Facebook page. Background: The COVID-19 pandemic has shed new light on inequities in healthcare access faced by immigrant and refugee communities. To address ongoing disparities, there is an urgent need for ecological approaches to better understand the barriers that hinder and resources that facilitate access to healthcare. This study investigates barriers to healthcare system access faced by Yazidi refugees in the Midwestern United States.

Ephemeroptera taxa are not frequently used in toxicity testing; however, some mayfly taxa may be more sensitive to aquatic pollutants than standard test organisms used to determine anthropogenic effects on aquatic ecosystems. Additionally, some standard test organisms are not native to the Appalachian region and may not be truly reflective of the effects on native organisms. With mayflies not being the typical test organism, there is not a great deal of literature on culturing methods for this organism. For a standard acute toxicity test, there must be 80% survival within the control organisms for the test to be considered viable. …

Within the past few years, various nutrition-relevant considerations related to the care of transgender and gender-diverse (TGD) individuals have been emphasized. However, the preparedness of registered dietitian nutritionists (RDNs) to provide nutrition care to this highly marginalized group with unique health concerns is unknown. Available research on the knowledge, attitudes, and beliefs of RDNs as it relates to the care of the TGD community is scarce. Introduction: Home Economics (HE) is within the main curriculum for primary school students in Zambia, yet it remains unclear what is included.
Methods: Survey research conducted between May-June 2022 on 6-7th-grade students within 9 Zambian schools. Classroom observations were made, and teachers were interviewed in primary and secondary public schools.
Results: Most know how to cook and sew. Zambian women cook more than men and learn at an older age. Both males and females are trained to sew learning at a much younger age.

Objectives: SFSP, as a federal food assistance program, could ensure that children have sufficient nutritious food during summer. According to a 2016 USDA report, only 0.4–0.6% of eligible children participated in this program in Nebraska, which makes for one of the lowest SFSP participation rates in the U.S. This study aims to better understand how the COVID-19 pandemic has impacted SFSP implementation in urban and rural settings across the state.
Conclusions: Insights from this study may inform the development of policies that expand food access to vulnerable families. On the organizational level, this includes providing participating kids and their parents …

The purpose of this study was to determine how communicating authentic agricultural information using an infographic affects Millennial and Generation Z students’ perceptions of genetically modified organisms (GMO) and to determine the perceptions of college students regarding the infographic used to convey agricultural messages. This study used survey research methods with open- and closed-ended questions administered through Qualtrics. The questionnaire was designed with five sections including a pre-questionnaire, content presentation, post-questionnaire, infographic perception questionnaire, and demographics section. Cost-effective weed suppression is an important consideration for tomato growers. Growers often choose methods which minimize hand labor, as hand weeding can be prohibitively expensive. This project determined economic viability of high tunnel tomatoes treated with several methods of weed control, both organic and chemical. These methods included: 2-week hand weeding, 1-week hand weeding, preemergent herbicide application (plots sprayed with herbicide prior to weed emergence), straw mulch (plots bedded with straw), landscape fabric (plots covered in fabric), and untreated weedy control plots. Digestibility markers are used to determine total digestibility without collecting total feces, which reduces time and labor and allows greater numbers of animal observations to be obtained. The goal was to determine if the digestibility marker acid detergent insoluble ash (ADIA) was fully recovered, and based on that information, determine the accuracy of total digestion predictions using ADIA. Different proportions of sericea lespedeza hay and alfalfa silage were offered to 16 gestating Dorper ewe lambs (Ovis aries) (41.8 ± 4.61 kg body weight) to determine digestibility. Background: Metabolic adaptations reduce resting and non-resting energy expenditure to account for approximately 120 kcal/day. Weight loss promotes greater skeletal muscle efficiency, reducing the energy cost of physical activity and is correlated with declines in skeletal muscle glucose oxidation. Maximal Strength Training (MST) has the potential to upregulate glucose utilization and may offset these metabolic adaptations. Objective: To determine if MST offsets markers of metabolic adaptation by increasing resting and non-resting energy expenditure in sedentary individuals classified as obese. Residents of the Appalachian region of Kentucky are disproportionately affected by poor social determinants of health that contribute to the persistence of food insecurity and diet related diseases in this region. Poverty levels persist in rural areas of the Appalachian region while they improve throughout the rest of the United States. As this further perpetuates food insecurity in rural Appalachia, it is critical to identify culturally sensitive solutions to food insecurity.
