Utah farmers markets play a critical role in food access, small business viability, and community connection, yet limited statewide data document their impact. The Utah Farmers Market Network (UFMN) and Utah State University (USU) Extension conducted a mixed-methods evaluation (2023–2025) and found that farmers markets make valuable contributions to the community.

Appetite self-regulation (ASR) among children is thought to have a fundamental role in shaping the development of healthy eating behaviors, dietary intake, and growth during childhood. Parallel to developmental frameworks for understanding "general" self-regulation among children, ASR has been described as involving children's use of "top-down" cognitive processes to moderate "bottom-up" biological drives around food approach and avoidance in the interest of achieving desired eating behaviors or outcomes. Objectives: Behaviour change interventions may support physical activity behaviour in people with chronic respiratory disease. The most effective interventions for long-term physical activity behaviour change in this cohort remains unclear. This aim of this study was to explore the use and perceptions of behaviour change interventions by both providers of physical activity programmes for people with chronic respiratory disease and by people living with chronic obstructive pulmonary disease (COPD) in The Republic of Ireland.

Background: There is growing interest in understanding the link between early life exposures to ambient air pollution and childhood blood pressure; however, existing findings, largely from single site/cohort studies, are inconclusive.
Methods: We examined the association between exposures to fine particulate matter (PM2.5) and nitrogen dioxide (NO2) and blood pressure measured at age 5-12 years in 4863 U.S. children from 20 pregnancy cohorts of the NIH ECHO cohort. Point-based residential exposures were derived from spatiotemporal models with a biweekly resolution and averaged over each trimester, the whole pregnancy, and child age 0-2 years. Introduction: Occupational and physical therapy (OT/PT) referrals and utilization barriers for childhood cancer patients have not been adequately examined. The current study investigated factors influencing referrals to and utilization of OT/PT services among children with cancer at an NIH-designated cancer center.
Methods: This retrospective cohort study included pediatric cancer patients (up to 18.99 years) presenting to the center over a 33.5-month period. PURPOSE: Osteosarcoma is the most common primary bone tumor in childhood and adolescence. Many patients face long-term impairments in their mobility and function after treatment, leading to a decrease in their quality of life. Exercise has been shown to improve functional recovery and improve quality of life in patients with cancer, though data specific to children with osteosarcoma are sparse. This study evaluated the impact of hibiscus and whey as alternative fermentation substrates on the physicochemical, phytochemical, and microbial properties of kombucha. A 2 × 2 full factorial design was used to compare four treatments: black tea + water (BW), black tea + whey (BH), hibiscus + water (HW), and hibiscus + whey (HH). The fermentation solvents (water or whey) were heated to 88 °C, infused with 0.6% (w/v) black tea or hibiscus for 10 minutes, sweetened with 10% (w/v) sucrose, cooled to 22 °C, and inoculated with 20% (v/v) kombucha starter culture. Food insecurity is a growing public health concern consistently associated with elevated rates of nutrition-related chronic disease (NRCD) across the general population. Despite young adulthood being a critical window for dietary pattern formation, this relationship remains minimally explored among college students. This thesis examined associations between food insecurity and NRCD diagnosis, including hypertension, diabetes, hyperlipidemia, and cardiovascular disease, among undergraduate students across the California State University (CSU) system. Cross-sectional data were drawn from the Spring 2021 CSU National College Health Assessment, administered across all 23 campuses. After exclusions, the analytical sample comprised 13,762 students. Objective: To evaluate the feasibility of an online expressive writing (EW) intervention for survivors of adolescent and young adult (AYA) cancer and determine whether iterative, theory-driven modifications can enhance response, adherence, and completion rates.
Methods: In this randomized pilot trial, survivors of AYA cancer were recruited through a hospital-based AYA oncology clinic and an online community. Forty participants were randomly assigned to the EW intervention or control group. To improve on lower-than-expected adherence and completion rates in a previous cohort, the protocol was iteratively revised using the Framework for Reporting Adaptations and Modifications to Evidence-based Implementation Strategies (FRAME-IS). Insufficient fruit set and excessive fruit drop are key challenges faced within the global mango (Mangifera indica L.) industry, affecting yield consistency and grower’s income as well as adversely impacting global mango trade. Glioblastoma multiforme (GBM) is the most lethal primary brain tumor in adults. Emerging evidence endorses that gut dysbiosis contributes to GBM progression through the gut–brain axis (GBA), promoting inflammation and therapeutic resistance via abnormal short-chain fatty acid production and cytokine dysregulation. Exosomes, naturally occurring nanovesicles (30–150 nm), offer promising therapeutic potential due to their blood–brain barrier permeability, biocompatibility, and versatile cargo capacity. This review examines exosome engineering strategies for dual targeting: inhibiting alterations in gut microbiome and inducing regulated cell death mechanisms such as apoptosis and ferroptosis in GBM. Water salinity and scarcity constitute major limitations to crop production in arid and semi-arid regions. Background: Circadian rhythms regulate physiological and metabolic functions across a 24-hour cycle. However, modern lifestyles often disrupt these rhythms. A common example is weekend schedule shifts, when people sleep and wake later than on weekdays, a phenomenon referred to as social jetlag (SJL).
Purpose: The purpose of this study was to; 1) determine whether chronic SJL leads to impaired glucose tolerance, and 2) determine if acute changes in glucose tolerance occur following a weekend of social jetlag (SJL).

In this study, the effects of Aronia melanocarpa and Sambucus nigra L. extracts added at different concentrations (0.5%, 1%,and 1.5%) on the physicochemical, sensory, microbiological, antioxidant capacity (DPPH• and ABTS•+ radical scavenging activity, TPC,TFC, and TAC) antidiabetic (α-amylase and α-glucosidase inhibition), and anti-Alzheimer properties (AChE inhibitory activity) of icecream were investigated. According to the statistical analysis results, extract addition did not have an effect on the total dry matter, fatand ash ratios of the ice cream samples (p > 0.05), but it had an effect on the protein ratio, viscosity, and first drip time at the level ofp < 0.05. The addition of extract positively affected the DPPH• radical scavenging activity IC50 and ABTS•+ radical scavenging activityIC50 values of the ice cream samples, and also increased the TPC, TFC, and TAC values. Indeed, a decrease in the IC50 values of DPPH•and ABTS•+ radical scavenging activities indicates an increase in antioxidant activity. The highest TPC, TFC, and TAC values weredetected in the A-1.5 sample (sample containing 1.5% A. melanocarpa extract) as 749.33 mg GA/kg, 434.70 mg QE/kg, and 290.97 mg/kg, respectively. Similarly, the highest α-amylase inhibitory activity (23.08%), the highest α-glucosidase inhibitory activity (10.41%) andthe highest AChE inhibitory activity (14.70%) were observed in the A-1.5 sample. Extract addition had no effect on microbiologicalproperties and sensory properties except texture. The results of this study showed that A. melanocarpa, S. nigra L. extracts can be usedas a natural additive with antioxidant, antidiabetic and anti-Alzheimer activities in ice cream production.

Mayflies are among the most abundant benthic invertebrates inhabiting natural lotic freshwater systems. Their assemblages vary with environmental, geographical, and hydrological conditions along altitudinal gradients and under different types of watershed disturbance. The main objective of this study was to analyze the composition and β-diversity of mayflies across three river watersheds and to assess how these assemblages differ among them. The objective was to produce and characterize a red colorant resulting from interaction of sunflower-derived chlorogenic acid with L-tryptophan/Trp and to evaluate its applications. Yield, intensity, solubility, stability, protein, and metal content of colorants from pH 9 and pH 11 lyophilized sunflower flour- Trp colorants were measured. Red color formation took < 3 h with alkalization and subsequent acidification. The sunflower flour: Trp mixture ratio that produced the greatest redness was 10:2. The highest red pigment was in supernatants and not the precipitates. The red colorant intensity and solubility were highest at neutral pH when compared to acidic pH solutions. The color stability of the new red colorant in icing and refrigerated whole milk matrices, when assessed weekly for a month, showed no color change in refrigerated milk. After 30 min of incubation at 63 °C, pinkness in milk remained unchanged or increased. The pink color, however, faded in icing over time due to exposure to light. The present study established a new natural red colorant developed from sunflower protein-Trp mixtures at alkaline pH, as well as its application in icings and whole milk for commercial strawberry milk products. This colorant could serve as a replacement for the synthetic petroleum-based Red 3.

This study evaluated plant resistance to salinity across varying salt concentrations: 0, 50, 100, 150, and 200 mM NaCl. Thestudy revealed how these salt levels affected the morphological, physiological, biochemical, and developmental characteristics of theplants. At the 50 mM NaCl treatment level, plant height dropped by 8% in comparison to the control. The shoot fresh and dry weightsof every plant subjected to different levels of salt stress decreased noticeably. This study compared the antioxidant capacity, total phenolic content (TPC), phenolic composition, lipid oxidation level, andmineral profiles of extracts obtained from four wild hawthorn species (Crataegus tanacetifolia, C. orientalis subsp. orientalis, C. orientalissubsp. szovitsii, and C. monogyna) collected from northeastern Türkiye. Significant interspecific variations were observed in DPPH,FRAP, and CUPRAC assays. While C. monogyna had the highest reducing capacity and TPC, C. orientalis subsp. szovitsii had the highestDPPH activity. Background: Linear growth in children and adolescents, a key health indicator, is influenced by various factors, including physical activity (PA). The COVID-19 lockdown in Taiwan created a unique opportunity to examine the effect of PA restrictions on growth.
Methods: This retrospective cohort study was conducted at two hospitals in central Taiwan. The study included 72 children and adolescents (26 males, 46 females) who attended a growth clinic.
