Deviation of beef from the bright cherry-red color preferred by consumers is often discounted or discarded at retail, resulting in substantial annual economic loss to the beef industry. One such deviation is dark cutting beef, which is characterized by a darker lean appearance that is undesirable to consumers and often rejected. Similarly, beef from mature cattle tends to exhibit a darker surface color, which can also reduce consumer acceptability. Impacts associated with traumatic brain injury (TBI) induce a multitude of neurological morbidities mediated by a spread of biochemical dysfunction. Redox stress is a significant contributor to TBI pathophysiology and several redox stress markers have substantial evidence to support their role in diagnosing preclinical and clinical TBI. However, there is a critical need to verify their translational utility through correlations with behavioral, imaging, and molecular modalities. While free choice vitamin and mineral supplements are widely used within the cow/calf sector, large knowledge gaps exist around the proper management of those supplements. This thesis discusses two factors affecting the efficacy of supplementation. The first interest was the stability of vitamin A when stored with a common free choice mineral supplement. This research addressed a critical data gap by generating information on vitamin A stability within the beef industry, as current data are predominantly based in the swine industry. This study compared five solvents - urea, carbonate-bicarbonate, citrate, phosphate, and water - for their ability to extract proteins from beech (BM) (Hypsizygus marmoreus) and Swiss brown (SB) (Agaricus bisporus) mushrooms. Using mass spectrometry-based proteomics and bioinformatics, we found that urea produced the highest total protein identifications by data-dependent acquisition at 1% false discovery rate (FDR): BM: 1739, SB: 1907; and by data-independent acquisition: BM: 1969, SB: 2172 proteins, especially enriching cytosolic and ribosomal proteins. Carbonate-bicarbonate favoured the extraction of metabolic and translational proteins, while citrate targeted extracellular and membrane-associated proteins related to cell wall dynamics. Preventive strategies targeting modifiable lifestyle factors related to food, nutrition, and health are needed as chronic health conditions continue to rise. Nutrition literacy refers to having the knowledge and skills needed to obtain, understand, and apply nutrition information to make informed dietary decisions. Without adequate nutrition education and food security, vulnerable populations are at risk of malnutrition and poor dietary behaviors. Protein is a priority nutrient in the American diet, being fueled by the demands of weight loss drugs, diet culture, and new dietary guidelines. However, meeting these elevated protein goals sustainably requires diversifying beyond standard sources like whey protein isolate. 3D printing offers an opportunity to present a variety of protein sources in a palatable, customized, and consumer-acceptable format. In this study, 3 protein sources (cricket, whey, and pea), were optimized within food inks for 3D printing. Honeybee health is a complicated issue. Studies were conducted to scale honeybee (Apis mellifera) health from the microbiome to the landscape. Colony health parameters were measured in response to probiotic administration. Colony capped brood production, colony summer weight gain, and Varroa mite incidence were measured. I found that applications of over-the-counter probiotics did not improve the measured parameters of honeybee health compared to a control group. Results suggest that probiotic application was not beneficial but positive benefits may depend on application method, brand, or strain of probiotics used. Ethanol disrupts neural circuits involved in addiction and withdrawal, yet the molecular mechanisms underlying these effects remain poorly understood. One possibility is that ethanol alters an animal’s perceptual or internal state, causing a stimulus learned while intoxicated to be processed differently when the animal is sober. This study examined how ethanol exposure affects odor learning, recall, and discrimination in honey bees, a useful model because of their robust olfactory learning and experimentally accessible neural systems. The development of insecticide resistance in Aedes aegypti, a major vector of dengue and Zika viruses, threatens vector control efforts, particularly in endemic regions such as South Texas. Insecticides remain widely used; however, their overuse has accelerated metabolic resistance mediated by cytochrome P450 enzymes. Environmental factors such as larval nutrition may influence mosquito physiology and resistance-associated gene expression, yet this relationship remains poorly understood. Snap bean (Phaseolus vulgaris L.) is an economically and nutritionally important vegetable crop whose production is increasingly threatened by rising temperatures and emerging bacterial diseases, particularly in the southeastern United States. Heat stress during reproductive development can significantly reduce yield, while newly emerging pathogens such as Pseudomonas capsici present additional risks to crop productivity. Recovery of an immature fossil rhinoceros (Teleoceras aepysoma) skeleton (ETMNH 32999) from the Gray Fossil Site in Tennessee offers the first insights into the ontogeny of the species. ETMNH 32999 is interpreted to be a subadult male in an age class equivalent to ~17-20% of potential lifespan. Comparative analyses support the hypothesis that subadults of related taxa are typically ~91% of average adult size in most dimensions. However, certain cranial dimensions are substantially lower than expected in ETMNH 32999, averaging only ~74% of the average conspecific adult. Mosquitoes rely on sugar feeding for survival, primarily from flowering plants, yet mosquito–plant interactions remain understudied. I examined plant-feeding associations of the mosquito Culex antillummagnorum in the Luquillo Experimental Forest of Puerto Rico, which may clarify patterns of habitat use, disease dynamics, and broader species interactions. First, plant DNA was extracted from field-collected Cx. antillummagnorum to identify potential nectar sources. DNA barcoding produced positive matches to the flowering plant genera Billia, Aesculus, Cladium, Fimbristylis, Xyris, Cakile, and Habenaria. Cycling is a commonly used exercise because it provides a controllable cardiovascular and musculoskeletal demand while imposing relatively low impact on the rider. High-cadence cycling (HCC) has been shown to influence subsequent running performance and gait performance by increasing cadence and reducing work rate when cycling prior to running. Crops are continually challenged by biotic stresses, including fungal, bacterial and viral pathogens and insect pests, which cause substantial yield and quality losses worldwide. WRKY transcription factors constitute a plant-specific and functionally diverse family that is central to immune regulation. Recent advances in genomic resources and multi-omics approaches have accelerated the identification and functional characterisation of WRKYs in crops. This review summarises the structural features and classification of WRKY genes and their genome-wide distribution across crop species. Increasing land costs and labor constraints continue to challenge beef producers. More intensive practices can increase harvest efficiency; however, many producers are deterred from implementing them due to increased labor and management considerations. Virtual fencing (VF) may provide a reduced labor alternative to traditional fencing for managing intensive grazing. This dissertation evaluated management strategies and VF technology to improve grazing efficiency of stocker cattle systems. In Experiment 1, VF was used to effectively manage groups of steers grazing in adjacent paddocks separated by only virtual boundaries. Over the last thirty years the mortality rate of the undocumented population at the US-Mexico border has risen, requiring methods distinguishing US-born individuals from immigrants to improve the likelihood of identification and repatriation through foreign consulates. Forensic anthropologists with the Pima County Office of the Medical Examiner (PCOME) have advocated for the use of the biocultural profile, combining the biological profile with factors including oral health, osteological stress, and personal effects. The biocultural profile serves two purposes, functioning both as a tool for identification and with which to document structural inequality within communities of origin.
