Studies On The Levels Of Acetylcholine In The Brains Of Thiamine-Deprived And Thiamine-Antagonized Rats, Darwin Leroy Cheney

Thiamine deficiency has been reported to cause nerve degeneration in the peripheral nervous system and hemorrhage with associated cellular damage in the central nervous system (Prickett, 1934). Koedam (1958) observed convulsions in thiamine-deficient pigeons, but convulsions have only rarely been seen in rats (Gubler, 1961). Rats treated with the thiamine antagonist, pyrithiamine (PTh)* always develop ataxia and convulsions but these neurological symptoms have never been reported in those treated with oxythiamine (OTh), another thiamine antagonist (Gubler, 1961). Hosein, Chabrol, and Freedman (1966) concluded that neurological symptoms occur only when the brain thiamine content is diminished to 2.5%o r less of …

The discovery of a substance in rice polishings that was useful in preventing beriberi was first shown by Grijns and Vedder (Wuest, 1962). In 1926, Jansen and Donath (Wuest, 1962} crystallized this substance which was subsequently synthesized independently by Williams and Cline (1936} and Grewe (1936). This substance was named thiamine by Williams (1936) because of its structure having the vital thiazole ring and because it was an "essential amine."

Investigations were carried out to isolate, identify, and to characterize, major volatile components of tomato fruit. Simultaneously, the confirmation was extended to the reported tomato volatiles. The volatile extracts from field- and artificially-ripe fruits were compared qualitatively as well as quantitatively. The changes which occurred in the volatile components of the fruit at the onset of senescence also were delineated.

A typical chromatogram from field-ripe tomatoes contained 60 peaks. The functional group properties of individual peaks were derived by chemical analysis. The short-chain (C3-C6) alcohols represented 10 per cent, aldehydes and ketones 32 per cent, and …

Synthesis of piperidine-2-carboxylic acid (pipecolic acid) in soybean was studied by infiltration of radioactive carbon labeled precursor and by experiments using enzyme extracts from control and fluoride-fumigated plants.

Pipecolic acid was synthesized from lysine in both control and treated plants. Normal plants, in which pipecolic acid had not been detected by conventional procedures, were capable of synthesizing pipecolic acid. Greater pipecolic acid synthesis was shown in treated plants than in controls, and was attributed to increased enzyme concentration induced by fluoride treatment.

The effects of controlled atmosphere on the metabolism of Golden Delicious and Rome Beauty apples, Anjou pears, and Lambert and Bing cherries were studied with respect to changes caused in the normal metabolic functions carried on during storage of these fruits. Atmospheres consisting of 1.5 per cent CO2 and 2.5 per cent O2 for the apples and pears and 10.5 per cent CO2 and 2.5 per cent O2 for the cherries were employed.

Volatiles of peach (Prunus persica L., cultivar, Gleason Early Elberta) fruit were studied by gas-liquid chromatography, thin-layer chromatography, and infrared spectrometry. Hard mature, firm mature, soft mature, tree ripe, and artificially ripened hard mature fruit obtained from four seasons, 1964 to 1967, were used. A total of 86 peaks were observed in the chromatogram of the tree ripe peach volatiles. Major components of the volatiles identified were mainly esters, gamma and delta lactones, aldehydes, alcohols, and terpenes. A study of the adaptive changes of some enzyme activities to the dietary protein intake was made in the liver, kidney, and pancreas of rats and serum of humans.

The rats fed the 40 per cent casein diet had a higher rate of weight gain and the weights of the liver and kidney were higher than in the rats fed the 10 per cent casein diet.

Three enzymes involved in the elimination of excess nitrogen from the body were found to show a similar response to increased dietary protein intake. These enzymes were: D-amino acid oxidase in the kidneys, arginase …

A method was developed for the extraction of rennet from fresh frozen vells. Frozen vells were partially thawed and minced in a Hobart "Wonder worker." The tissue was treated with 2.0 per cent potassium alum and allowed to stand for 20 hours before sufficient 0.45 M disodium phosphate was added to bring the pH of the mixture to 5.7. Dry sodium chloride was added until the salt concentration in the moisture of the mixture was 10 per cent. The tissue was then mixed with 3/4-inch pumice gravel in a volume ratio of 1 to 2 and packed into extractor columns. …

A written objective-type waiver examination for the introductory foods course at Utah State University has been developed and evaluated.

Results of the study showed that the examination improved with revision. In addition, it was found that there was a statistically significant relationship between the score students achieved on the waiver examination and the total numerical score representing the final grade in the basic foods course.

There was apparently no significant relationship between the number of years experience students had in food preparation, the type of experience in food preparation, and their performance on the waiver examination. Apparently depth of knowledge …

The effect of oven temperature, dry-roasting, and breed on the eating quality of beef was determined by sensory and objective methods. Two adjacent standing rib and two adjacent chuck roasts of prime, choice, and good grades from animals of Hereford, Shorthorn, and Charolais breeding were dry-roasted. Control roasts (9-12th ribs) were cooked at 325 F. Experimental roasts (6-8th rib and two chucks) were assigned an oven temperature of 325 or 250 F at random. All roasts were allowed to reach ah internal temperature of 155 F as recorded on a potentiometer.

Five normal healthy young university women while on self-chosen diets and living under normal conditions served as experimental subjects in this study. Urinary pregnanediol was measured for 10 days of the menstrual cycle. Meal frequency (3 meals vs. 2 meals with no breakfast) was also included in the study.

A modification of the method of Eberlein and Bongiovanni on thin layer chromatography was used to determine pregnanediol in the urine sample.

The effect Leuconostoc mesenteroides and Lactobacillus plantarum has on the physical and chemical properties of fresh and dehydrated sauerkraut was tested. Sauerkraut inoculated with L. plantarum was slower in fermenting and significantly lower in acidity and higher in pH. Dehydration of sauerkraut by freeze-conventional hot-air and micro-wave processes produced a significant loss in volatile components, ascorbic acid , lactic acid and an increase in pH. Each of the dehydration processes caused browning of the sauerkraut . These changes were less with freeze-drying and increased with conventional hot-air drying and microwave drying. A comparative study of phytoseiid populations was made of two well-cultivated and regularly sprayed apple orchards with two unsprayed orchards in Cache Valley, northern Utah.

Two phytoseiid species, Typhlodromus mcgregori Chant and T. occidentalis Nesbitt were observed on the apple leaves, under the bark, and occasionally in the litter and soil. Amblyseius cucumeris (Oudemans) occurred in the soil and litter and occasionally under bark. T. mcgregori was dominant in the unsprayed orchards, and T. occidentalis in the sprayed.

A study of nucleic acid changes influenced by gibberellic acid and chilling treatments in peach seed was performed in an attempt to reach a better understanding of the mechanism involved in breaking seed dormancy.

Gibberellic acid and the chilling treatment increased the RNA content. These two treatments which break dormancy also increased RNA, suggesting a similar mechanism involving RNA. Chilled seeds contained more RNA than did the gibberellic acid treated seeds.

DNA content remained unchanged regardless of treatment.

Dry seed had a greater ribonuclease activity than with soaked seeds. Enzyme changes did not correlate well with the RNA content in …

A survey of 360 respondents in metropolitan Salt Lake City was made to determine their attitudes about fluid milk products and the affect of these attitudes on consumption levels. The fluid milk products studied were regular whole milk, two percent milk, skim milk, and nonfat dry (powdered) milk.

The respondents had the most positive attitudes about regular whole milk. Their attitudes about the other three products were highest for those which most nearly resembled regular whole milk. The consumption levels of the four products followed the same pattern.

The respondents' attitudes about four attitude parameters affected their consumption levels. Those …

In May 1965, the first investigation and research in the native desert bighorn sheep in Utah was undertaken. The study was centered in the White Canyon area, San Juan County, in southeastern Utah. Seven other areas along the Colorado River were found to have smaller reminant populations of desert bighorns.

The White Canyon population was determined to be between 124 and 144 desert bighorns (Ovis canadensis nelsoni), excluding lambs.

Considerable information has been presented on the nutritive value of domestic crops but little is known about the nutritive content of range forage. Such information is fundamental to the management of ranges for effective livestock production.

The shortage of suitable spring range in the Intermountain region has caused increased interest in seeding depleted foothill areas to supply more spring forage. A preliminary study was conducted on the ensiling of aspen bark in laboratory silos for the production of animal food. Several types of silo, both with and without an enzyme preparation, were tested. Results of physical and chemical tests on the contents indicate that definite changes occur when bark is ensiled, and that these changes differ with ensiling conditions. Several of these changes suggest possibilities for future research.

Comparative analysis of the nutritional status of white and Indian children living in an "economically distressed" area in Northern Minnesota was carried out by assessment of skeletal, fat, and muscle development and by dietary records from a limited sample of the subjects. Diets of the two groups were found to be roughly equivalent in caloric, protein, fat, and carbohydrate content; and the average heights and weights were generally similar. Yet the white children were on the whole fatter and had either equivalent or greater muscle development than the Indian children while the Indians tended to have more robust skeletons. Though …

Symbiodinium microadriaticum were found localized in the mesoglea of Cassiopeia, the upside-down jellyfish. Axenic cultures of the symbiont were produced, utilizing chemically defined media. Studies of the life cycle established the presence of isogametes which had previously been postulated. Reactions to various bands of the spectrum were noted, and tolerance tests for survival in darkness and under temperature stress were carried out. Nutritional experiments established nitrates as the best nitrogen source and verified the fact that vitamins B12 and Thiamine, though not essential far life, hove a stimulating effect on the growth and motility of these zooxanthellae.
