This dissertation evaluates the performance of three on-farm swine carcass disposal methods: whole carcass composting (WCC), ground carcass composting (GCC), and shallow burial with carbon (SBC), focusing on biosecurity factors and groundwater contamination risks. Foreign animal diseases (FADs), such as African swine fever and classical swine fever, pose severe economic and animal well-being risks if introduced to the United States. With confirmation of an FAD, swine movement will be halted, creating an urgent need for practical, biosecure, and environmentally responsible on-farm disposal strategies for swine carcasses. Food science provides an opportunity to engage high school students in Science, Technology, Engineering, and Mathematics (STEM) by connecting classroom concepts to real-world applications. Despite the field’s relevance to public health, food safety, sustainability, and innovation, food science remains largely absent from high school curricula, and few students recognize it as a viable STEM pathway. This research addressed this gap by evaluating immersive summer camp experiences and teacher-focused curriculum review as strategies to increase food science awareness and interest among students and educators. Artificial reefs are deployed to enhance marine habitats and fisheries, yet their role in supporting secondary production and their vulnerability to climate stressors remain understudied. This dissertation investigates the trophic ecology and climate sensitivity of benthic invertebrates at artificial reefs in the northern Gulf of Mexico. Chapter 1 assessed reef food webs using stable isotopes from fishes, invertebrates, and primary producers across six reefs and two seasons. Mixing models showed that most fishes rely on benthic reef carbon, while suspension feeders consume plankton and sediment microphytobenthos. Isotopic niche analysis revealed functional diversity and seasonal shifts in δ¹³C and δ³⁴S, though …

Fluoride has long been praised for its role in preventing dental caries, primarily through its effects on enamel remineralization and antibacterial effects. However, growing evidence from molecular and cellular studies suggests that excessive fluoride exposure, especially during tooth development, can lead to dental fluorosis and systemic toxicity. This paper examines the biological mechanisms underlying fluoride-induced dental fluorosis, with a focus on stress responses in ameloblasts, oxidative damage, impaired autophagy, and disrupted protein processing. Monozygotic (MZ) twins have identical DNA, making traditional profiling methods insufficient in their discrimination. However, MZ twins can be differentiated by their levels of DNA methylation. Our research group previously developed a methodology to detect cg18562578 DNA methylation levels in MZ twins based on a two- step PCR approach and a cg18562578 MethylQuant Assay. That study generated data for only 64% of the samples it investigated, and showed a discrimination power of 77% to discriminate between MZ twins. Here, we used the same methodology but a different approach to determine DNA methylation in 73 previously unsuccessful twin pairs. We diluted …

The Tamaulipan thornscrub is a transition zone between the neotropics and the temperate regions, harboring high biodiversity. This habitat supports a diverse insect community, including many pollinators of native and cultivated plants in Texas and northeastern Mexico. Sea turtles exhibit distinct behaviors before and after egg laying, however, not all individuals successfully oviposit. Some females display disruptions in their typical nesting behavior, returning to the water without laying eggs, which is referred to as a non-nesting emergence (NNE). This thesis explores plant stress adaptation mechanisms through two interlinked studies that address different aspects of gene regulation. Honey bees detect sweet nectar, but not all sweet-tasting sugars provide nutrition. Unlike fruit flies, which can learn to avoid non-nutritious sweet foods, bees may lack this ability. To test if bees form caloric frustration memory (CFM), we conditioned them using odors paired with L-glucose (sweet but non-nutritious) or D-glucose (sweet and nutritious). Bees rewarded with L-glucose showed lower learning and long-term memory compared to D-glucose. Bees cannot differentiate between an odor associated with rewards containing malaise-causing compounds and an odor associated with a reward alone during differential conditioning. In nature, plant carotenoids are 40-carbon isoprenoids with polyene chains that may have double bonds. They are vital components of all photosynthetic organisms, playing several roles in the plant cell, including photosynthesis, pigmentation, phytohormone synthesis, signaling and photoprotection. In this study, we investigated protein-protein interactions among key enzymes involved in the carotenoid biosynthesis pathway using the Bimolecular Fluorescent Complementation (BiFC) assay. Our results revealed several interactions that suggest a coordinated regulation of enzymatic activity within this pathway, highlighting potential regulatory complexes that influence carotenoid production. Dispersal is crucial in maintaining healthy ecosystems, but little is known about mechanisms influencing fungal spore dispersal by animals. We aimed to develop a more mechanistic understanding of the influence of fungal spore traits and small mammal traits on gut retention time. We fed three species of small mammals (shrew, mouse, vole), which differ in gut morphologies, digestive strategies, and activity a combination of markers including: liquid digesta phase (CrEDTA), small particle (fungal spores with diverse morphologies), and large particles (glitter and beads, representing plant cells and seeds, respectively). Despite being available nationwide since 2016, enrollment in Pasture, Rangeland, and Forage (PRF) insurance remains low in many regions of the country. The program's performance also presents regional discrepancies, with loss ratios varying significantly. Studies that have simplified the complexity of interval selection for producers have been shown to positively affect PRF enrollment. Such studies remain limited in several forage-producing areas. This study aims to address the lack of information in Arkansas specifically. Arkansas has among the nation's lowest participation rates and loss ratios. Cardiovascular disease is the leading cause of death worldwide, associated with high sodium intake being a primary contributor to elevated blood pressure. The US Dietary Guidelines for sodium intake is 2,300 mg per day; however, studies indicate that the average daily sodium consumption among Chinese adults is 5,013 mg. The Dietary Approaches to Stop Hypertension (DASH) diet is often recommended to those diagnosed with hypertension. This project aims to develop a cookbook featuring lower-sodium Chinese recipes following the DASH diet guidelines. The relationship between plants and their pollinators is often framed as a food-for-service exchange in which plants provide pollinators with nutrients in exchange for transport of their gametes. However, in addition to essential nutrients, many floral rewards (nectar, pollen) also contain defensive toxins such as alkaloids, with largely unexplored consequences for plant-pollinator interactions. I investigated how three psychoactive and addictive plant alkaloids — caffeine, nicotine, and morphine — affect foraging behavior in generalist bumblebees (Bombus impatiens) using robotic flowers. Microbial communities inhabiting floral nectar, known as the nectar microbiome, are important mediators of plant-pollinator interactions. However, the ecological and environmental factors that shape the composition of these microbial communities remain poorly understood. While previous studies have examined the effects of a few microbial groups, typically independent of one another, on one plant or pollinator species, this dissertation takes a wide-scale approach to explore how abiotic conditions and biotic interaction’s structure microbial communities within floral nectar. Anthropogenic salinization resulting from road salt application can degrade aquatic environments by altering the structure and function of phytoplankton communities, ultimately reducing flows of resources through aquatic food webs. However, physiological mechanisms underlying taxon-specific responses to salinization are often poorly linked to higher-order ecosystem dynamics, limiting our ability to predict community responses to salinization. Background: The SPAN (Stroke Preclinical Assessment Network) is a confirmatory multicenter trial network to test cerebroprotective interventions in experimental acute stroke. In a first-of-its-kind trial, SPAN tested 6 interventions in a rodent model of transient focal ischemic stroke. Here, we report the efficacy of fasudil, an isoform-nonselective rho-associated kinase inhibitor, on primary and secondary outcomes in the SPAN trial.

Objective: Family-based health promotion and disease prevention strategies are recommended as best practice; however, there is limited knowledge regarding the family-level factors that influence modifiable behavior risk factors like physical activity (PA) among Latinx adolescents. This study addressed this knowledge gap by using qualitative methods to identify perceptions of family-level factors that influence PA among Hispanic youth.

Methods: We conducted semistructured, open-ended interviews with 20 Latinx adolescents (14-16 years) with obesity (body mass index ≥95th percentile) to identify their perceptions of how family influences PA. The rumen microbiome plays a critical role in ruminant health and performance. As a consequence, many studies investigate microbial community composition using 16S rDNA based sequencing. As such, data quality and data filtering are critical to accurately identify microbial community composition. In this study we use mock communities to empirically select data filtering parameters to reduce artifact populations and compared the effect of filtering using different bioinformatic pipelines using rumen bacterial community data. The filtering parameters identified provides consistent estimates of rumen microbial diversity, regardless of bioinformatic pipeline utilized and provides a more accurate view of microbiome structure and composition. …

Traditional hydrostatic weighing (HW) involves full body submersion at residual volume (RV), which may be uncomfortable. Thus, the purpose of this study was to investigate a more comfortable way to perform this method. HW with the head above water (HWHAW) was compared to the traditional method of HW with head below water (HWHBW) and to another method that also measures density by displacement, air displacement plethysmography (ADP).
