Public Policy Education: Insights From Graduate Dietetics Students, J. Mitchell Vaterlaus, Lindsay Ganong, D. Coleen Kaiser, Emily Patten
Journal of Dietetic Education
Objective: To examine graduate dietetics students’ experiences completing a public policy course outside of their discipline. Methods: Participants were 40 graduate dietetics students at a university in the Western United States. At the conclusion of a public policy course offered through another department, students completed online surveys with fixed-response and open-ended items. Quantitative data were analyzed using paired t tests, and qualitative responses were examined using codebook thematic analysis. Results: Three themes included (1) Recognizing the interconnection between policy and dietetics practice, (2) From policy hesitancy to policy understanding; and (3) Humanizing policy: public policy and holistic client care. Time between learning scientific writing skills and when dietetic students need to transfer that knowledge to discipline-specific research papers in upper division courses may result in a lack of writing skills. Dietetic educators be unfamiliar with writing strategies to improve student writing. A Writing Professional Papers worksheet was developed to help students define components of professional papers, draft a thesis, and then participate in a scavenger hunt using examples of two types of professional papers to identify target issues and avoid common issues seen in student papers. Culinary nutrition has become a promising interdisciplinary field that combines culinary arts and nutritional science to enhance health outcomes through practical, food-based education. As the healthcare landscape increasingly emphasizes preventive care, dietitians are well-positioned to lead culinary nutrition initiatives; however, formal training opportunities remain scarce. To address this gap, Metropolitan State University of Denver (MSU Denver) created a new Culinary Nutrition Certificate that combines experiential cooking coursework from the School of Hospitality with core nutrition education from the Department of Nutrition. Implementing An Interprofessional Virtual Journal Club For Health-Focused Students, Hillary L. Roberts, Cynthia Aurentz, Mccall E. Christian, Jessica K. Willis, Caitlin J. Masterson
Journal of Dietetic Education
Students (N = 135) pursuing degrees in health-focused programs participated in an interprofessional virtual journal club during the spring semesters of 2022 and 2023. The journal club was integrated into multiple courses and facilitated through the university’s learning management system and a web conferencing platform. Students applied the 2016 Interprofessional Education Collaborative (IPEC) Core Competencies throughout the activity. The journal club included four pre-selected articles on ethics in healthcare, and students developed one discussion question per article to guide synchronous virtual discussions. The IPEC Competency Self-Assessment Tool was administered before and after participation. Paired samples t-tests showed statistically significant change …

Student Exposure To Andhii Part Ii: Cross-Cohort Improvements In Confidence Without Parallel Gains In Documentation Quality When Applying The Nutrition Care Process, Casey Colin, Lindsay Woodcock

The purpose of this study was to compare differences in Nutrition Care Process (NCP) confidence and documentation quality across two different undergraduate student cohorts. This quasi-experimental trial was conducted with n = 29 total undergraduate dietetic students (2023 cohort), then compared with results from the previous years’ (2022) cohort (n = 43). NCP confidence was measured before and after students completed traditional case studies (time 1 and time 2) and after completing an ANDHII case study using an electronic and interactive NCP documentation platform (time 3) for each cohort, then compared between cohorts. Perspectives In Learning
Post COVID, the incoming students in CS and IT programs have seen a significant increase in the fail, withdrawal rate. Though some of it is associated with the lack of classes and changes in modalities during COVID and the initial years that followed, most of it is due to the lack of proper foundation after high school and before introducing the programming courses. In this paper we identify the major reasons for the low retention rate and how it can be mitigated by introducing a logic course in the curriculum.

This dissertation investigated the phenomenon of a significant, acute, externally-driven crisis event on university resilience at four-year, tuition-driven, public and private higher education institutions in the United States of America. The study primarily considered the resilience indicators of university undergraduate enrollment and financial stability through the crisis context of COVID-19. It is theorized that a perceived lack of reliability, flexibility, and pace to evolve that higher education exhibited during and shortly after COVID-19 is a sustained point of vulnerability to a field under increasing review from a range of stakeholders and points of financial and public pressure. Rotating Along The Borderlands: Contextualizing Border Rurality Among Queer Transfronterizxs College Students, Carlos A. Fitch
Journal of Queer and Trans Studies in Education
Queer Transfronterizx students at rural higher education institutions experience an array of systemic and racialized inequities related to Queerphobia, residential nativism, and immigration challenges. Through a Critical Race Feminista Methodology (CRFM), seven Queer Transfronterizx college students engaged in testimonios and a Queer plática to shed light into the navigation of their rural higher education contexts and lived experiences. The findings note the collaborators’ experience of (1) endangered educational oases, (2) the dual identity isolation pertaining to Queer and Latinx belongings, (3) transborder hypervigilance emerged from border- crossings practices, and (4) a rural border flexibility that provides Queer privileges. As colleges and universities increasingly transform their STEM courses through the adoption of more active, student-centered pedagogies, there is a growing need to understand the impact of these educational innovations on student outcomes. This study is conducted in the context of a university-wide faculty development and course redesign project, IMPACT (Instruction Matters, Purdue Academic Course Transformation). Hive Minds And Communities Of Practice: A Reflection On Implementing A Casual Peer Community Of Practice, Cathy Stephens

Wenger’s (1998) Communities of Practice theory proposes that knowledge is constructed socially, within communities which share knowledge domains and mutual goals. These communities act as common spaces where knowledge is negotiated and professional identities are formed. While a sense of belonging is pivotal to learner success and engagement, learners in online spaces can experience scarcity of informative social interactions. In this reflective essay, I examine the implementation of a pilot project to facilitate informal communities of practice within an online design course, and utilise observations and informal student feedback to interrogate the effectiveness of the pilot and enable future refinements.
