Public Policy Education: Insights From Graduate Dietetics Students, J. Mitchell Vaterlaus, Lindsay Ganong, D. Coleen Kaiser, Emily Patten
Journal of Dietetic Education
Objective: To examine graduate dietetics students’ experiences completing a public policy course outside of their discipline. Methods: Participants were 40 graduate dietetics students at a university in the Western United States. At the conclusion of a public policy course offered through another department, students completed online surveys with fixed-response and open-ended items. Quantitative data were analyzed using paired t tests, and qualitative responses were examined using codebook thematic analysis. Results: Three themes included (1) Recognizing the interconnection between policy and dietetics practice, (2) From policy hesitancy to policy understanding; and (3) Humanizing policy: public policy and holistic client care. Time between learning scientific writing skills and when dietetic students need to transfer that knowledge to discipline-specific research papers in upper division courses may result in a lack of writing skills. Dietetic educators be unfamiliar with writing strategies to improve student writing. A Writing Professional Papers worksheet was developed to help students define components of professional papers, draft a thesis, and then participate in a scavenger hunt using examples of two types of professional papers to identify target issues and avoid common issues seen in student papers. Culinary nutrition has become a promising interdisciplinary field that combines culinary arts and nutritional science to enhance health outcomes through practical, food-based education. As the healthcare landscape increasingly emphasizes preventive care, dietitians are well-positioned to lead culinary nutrition initiatives; however, formal training opportunities remain scarce. To address this gap, Metropolitan State University of Denver (MSU Denver) created a new Culinary Nutrition Certificate that combines experiential cooking coursework from the School of Hospitality with core nutrition education from the Department of Nutrition. Implementing An Interprofessional Virtual Journal Club For Health-Focused Students, Hillary L. Roberts, Cynthia Aurentz, Mccall E. Christian, Jessica K. Willis, Caitlin J. Masterson
Journal of Dietetic Education
Students (N = 135) pursuing degrees in health-focused programs participated in an interprofessional virtual journal club during the spring semesters of 2022 and 2023. The journal club was integrated into multiple courses and facilitated through the university’s learning management system and a web conferencing platform. Students applied the 2016 Interprofessional Education Collaborative (IPEC) Core Competencies throughout the activity. The journal club included four pre-selected articles on ethics in healthcare, and students developed one discussion question per article to guide synchronous virtual discussions. The IPEC Competency Self-Assessment Tool was administered before and after participation. Paired samples t-tests showed statistically significant change …

Student Exposure To Andhii Part Ii: Cross-Cohort Improvements In Confidence Without Parallel Gains In Documentation Quality When Applying The Nutrition Care Process, Casey Colin, Lindsay Woodcock

The purpose of this study was to compare differences in Nutrition Care Process (NCP) confidence and documentation quality across two different undergraduate student cohorts. This quasi-experimental trial was conducted with n = 29 total undergraduate dietetic students (2023 cohort), then compared with results from the previous years’ (2022) cohort (n = 43). NCP confidence was measured before and after students completed traditional case studies (time 1 and time 2) and after completing an ANDHII case study using an electronic and interactive NCP documentation platform (time 3) for each cohort, then compared between cohorts. Problem
Early career researchers in low- and middle-income countries (LMICs) face substantial barriers when writing research grants and have limited writing support. A designathon approach was applied to organize a grant writing workshop (grant-o-thon) tailored for early-career LMIC researchers. This study describes the planning, implementation, and participant-reported outcomes of the grant-o-thon as a participatory training approach.
Approach
Grant-o-thons were organized in 2023, 2024, and 2025. Consistent with the designathon model, the grant-o-thon was structured in three stages: preparation using co-creation with end-users, intensive collaborative teamwork supported by mentor feedback and weekly writing deliverables, and structured follow-up. This study examines the relationship between student-serving staff’s wellness engagement and overall well-being, their job satisfaction, and their perceived support for students. A convergent mixed-methods approach was applied while maintaining a theoretical framework rooted in Self-Determination Theory (Deci & Ryan, 1985), integrating the concepts of Hettler’s Six Dimensions of Wellness (1976). Forty-one student-serving staff across universities in a public university system in Pennsylvania participated in this study. A quantitative survey was used to measure overall well-being, wellness engagement, and support to students, while concurrent focus groups were conducted to gather insight on work-life well-being and staff’s perceived support to their …

The Americans with Disabilities Act (ADA) has been in place for over 35 years, yet the systems it created to ensure equity are riddled with inherent barriers and often fail to provide equal access because of the ableism baked into American society. Institutions of higher education exemplify this failure as they largely treat disability as a compliance-issue, not as a marginalized identity that deserved dedicated inclusion efforts. Most institutions provide disability inclusion solely through the ADA-mandated accommodation process for students and employees, which falls far short of creating fully accessibility cultures. Between The Rails: Experiential Education And Its Impact On Compliance And Consistency In Racetrack Surface Management, Heather Mackenzie
Theses and Dissertations--Community & Leadership Development
Recent regulatory requirements within the Thoroughbred racing industry have increased expectations for consistent collection and reporting of racetrack surface data. Despite clear standards, implementation in daily operations remains inconsistent, highlighting a gap between regulation, knowledge, and practice. This study examined the impact of an experiential education curriculum on racetrack personnel’s self-efficacy and reporting consistency.
Using a quantitative design, data were collected through pre- and post-surveys measuring self-efficacy and records of the number of days surface data were entered. Descriptive statistics, paired-samples t-tests, and effect size analyses were used. Results showed a statistically significant increase in self-efficacy (p < .001) with large effect sizes, indicating meaningful gains in confidence and comfortability. Reporting consistency did not show a statistically significant change (p = .885).

Behavioral health concerns among adolescents and young adults have increased in recent years, placing greater expectations on athletic trainers (ATs) to recognize and respond to these conditions in clinical practice. Although accreditation standards require behavioral health competencies within professional athletic training education, variability may exist in how faculty are prepared to teach this content. This study examined athletic training faculty preparation for teaching behavioral health, how programs implement and assess behavioral health content, and faculty perceptions of student satisfaction with behavioral health education.

This course portfolio describes the design and development of a new course focused on data analysis and visualization in animal research at the University of Nebraska – Lincoln. The course was developed to meet the needs of students enrolled in Master of Science and Doctor of Philosophy graduate programs in the Department of Animal Science as well as those in the Master of Applied Science in Beef Cattle Production program.
