Self-Efficacy Of Dietetics Educators Preparing To Implement A New National Education Model, Janet Millikan, Susan W. Arendt

Internet Journal of Allied Health Sciences and Practice

Purpose: The Future Education Model (FEM) was introduced in 2017 and included changes to the existing dietetics education model, such as a shift in degree requirements and a change in Accreditation Standards based on competency-based programming. Starting in 2019, dietetics educators could apply to begin implementing the FEM at their institutions. Social Cognitive Theory (SCT) served as the framework for this research. SCT can be used to understand individuals’ motivations in various contexts, including workplace environments like higher education. One opportunity unique to Quillen allows students to have an impact close to home, in the Carver Community of downtown Johnson City.

“Color My World Healthy” benefits both young and old in this predominantly Black community.

Navigating College While Homeless: A Phenomenological Inquiry Of The Young Adult Experience, Bertha Fountain

Dissertations, Theses, and Capstone Projects

Purpose: The study aimed to understand the perspectives of students in college who were homeless. The research question guiding this inquiry was: How do young adults describe their experience of being homeless while in college?

Method: Qualitative research using a phenomenological approach guided this descriptive inquiry. Interviews were held with 10 students from three CUNY Community Colleges and the data was analyzed using Interpretative Phenomenological Analysis. Resilience theory helped to understand the barriers along with the strengths and adaptive responses of the students.

Results: Students experienced unstable and inadequate sleeping arrangements and food insecurity along with their academic responsibilities. Homelessness …

Basic needs insecurity has gained recognition as a significant barrier to completing a postsecondary credential. Research has shown that students enrolled at community colleges experience basic needs insecurity at rates higher than their four-year counterparts. After taking a class at UNL about environmental awareness, two honors students paired up to start a hydroponics club at a local Lincoln school. In reaching out to the LPS director of sustainability, they were paired up with Prescott Elementary School. Over the course of a semester, they developed a club that got a hydroponic grow tower functioning for the school and taught students about nutrition and sustainability. This club is only in its beginning stages, but the impacts that it is making around the school can already be seen.

As the area of food studies continues to develop and evolve it has been recognized that, not only is food a necessity to life, but it is uniquely tied to understanding culture, history, and other aspects of a society. This study arose from recognizing this influence and importance and I took the opportunity to better understand how Birchwood College might be an optimal site for a short-term study abroad program based in food studies.
