Findings From A National Assessment To Support Implementation Of Cooperative Extension’S 2021 National Framework For Health Equity And Well-Being, Diana Charbonneau, Kerry Gabbert, Latoya O'Neal, Dawn E. Burton, Maggie Jones, Kate Katzman, Roger Rennekamp

Journal of Extension

Cooperative Extension’s National Framework for Health Equity and Well-Being provides a roadmap for improving the health of communities. Core concepts include installing health equity a systemwide value and catalyzing community-level changes that ensure all people have an opportunity to be as healthy as they can. This article presents findings from a national readiness assessment for implementing the Framework across Extension. Results from a literature scan, national survey, and regional listening sessions identified internal facilitators and barriers to adoption. The article provides ideas for how Extension practitioners can engage in this work and shares an action plan developed from assessment results.

Purpose – This study examines the impact of COVID-19 on Physical Activity (PA) on hospitality & tourism, kinesiology, and recreation students at California State University. The findings will help understand a direct impact on what is needed to be in place on campus in order to support and promote normal levels of PA as recommended by the World Health Organization.

Methodology/Design/Approach – PA was measured by a modified version of the International Physical Activity Questionnaires (IPAQ) questionnaire. There were 116 students that participated in this study, respondents were mostly students who are majoring in hospitality & tourism, kinesiology, and recreation. …

The use of simulation holds promise for the future of dietetics education for its use as an alternative for up to 30% of the 1,000 supervised practice hours for the training of Registered Dietitian Nutritionists. Even more so, simulation is a teaching tool. When done well, simulation can challenge students in a safe environment where they can receive constructive feedback from expert guides and meaningfully reflect on their learning. Aim: To evaluate the impact of a conceptual diagram assessment task on dietetic student knowledge of and confidence applying the Nutrition Care Process. Methods: Situated within a pragmatic research paradigm, this mixed methods study applied a survey administered before and after a conceptual diagram assessment task using the Nutrition Care Process to explore changes in student knowledge, self-reported confidence, perceptions towards the Nutrition Care Process, and student experience. A Qualitative Analysis Of 14- To 17-Year-Olds’ Perceptions Of And Interest In Dietetics, Andrea Barney, Kelsey Mueller, Emily Patten

Objective: To understand 14-17-year-old youth’s perceptions of the field of dietetics and what would influence them to pursue or not pursue dietetics as a career. Design: Researchers developed an electronic survey asking about youth’s perceptions of the dietetics profession. Setting/Participants: The survey was distributed to a diverse population of youth aged 14-17 in the USA. Main Outcome Measures: Researchers aimed to understand what qualities 14-17-year-olds associate with dietetics professionals and if youth are interested in and/or view themselves as capable of becoming a dietitian. Teaching and Learning in Communication Sciences & Disorders

The American Speech-Language-Hearing Association (ASHA) Code of Ethics (2023) requires all practitioners to uphold the welfare of others without discrimination. Graduate programs in communication sciences and disorders, therefore, must guide future clinicians to apply theoretical knowledge to clinical practice equitably and inclusively. This grounded theory study investigated how an instructor in a graduate communication sciences and disorders (CSD) class used case-based learning (CBL) to fill the theory-practice gap and guide students to think equitably and inclusively for future complex cases. An Evaluation Of Sports Nutrition Knowledge And Influencing Factors In Ncaa Division Iii Athletes, Kerrie Berends, Michael J. Wierenga, Madeline Frens

Introduction:This study evaluated the sports nutrition knowledge of NCAA Division III (DIII) athletes, examining the influence of demographic and sport-specific factors. Nutrition is a critical component of athletic performance, recovery, and overall health, yet prior research indicatescollegiate athletes often lack adequate nutrition knowledge.

Methods: A total of 412 athletes, representing 17 different sports across endurance, power, and skill categories, completed the validated Abridged Nutrition for Sport Knowledge Questionnaire (A-NSKQ). The sample included freshmen through fifth-year seniorathletes, predominantlyCaucasian (85%).

Results: The average A-NSKQ score was 17.1 out of 35 (48.9%), indicating suboptimal knowledge. Significant differences were found across …

In higher education, a growing interest exists in fostering partnerships between institutions and community-based programs to enhance the lives of individuals. These initiatives have encompassed a variety of programs, including life skills development and civic engagement opportunities facilitated by academic experts. Despite the plethora of educational prospects surrounding health, community engagement, and civic improvement, assessing the efficacy of adult learning in community settings remains challenging. Previous research has indicated inadequacies of conventional prenatal education programs in addressing the complex needs of expecting mothers.

Honors education has long been praised for its potential as a test bed for curricular innovation. A wide variety of high-impact practices have been employed to prepare honors students to think critically and tackle complex problems. Examination of the use of systems thinking within pedagogical practices in honors education is, however, nearly nonexistent in the literature. Honors students are goal-oriented, motivated, and engaged achievers. As such, they often experience heavy course loads, manage multiple responsibilities, have limited free time, and sacrifice their health (relationships, sleep, nutrition) in pursuit of their goals. This essay presents an evidence-based wellness retreat designed for honors students at a medium-sized university. The authors describe the retreat’s inception, development, curricular advantages, and administration, with specific examples of targeted evidence-based programming. Eight workshops, designed to build resilience and coping skills, address mental agility and mindset, emotion regulation, social connection, and wellness habits. Although the collaboration between the University Honors Program (UHP) at the University of Nebraska-Lincoln (UNL) and UNL's Center for Transformative Teaching involves several elements, this essay focuses on one element with significant impact: the development of curricular components and co-curricular programming facilitating students’ engagement with experiential learning. Experience-based education is learning that occurs through direct, hands-on experiences such as internships, research, education abroad, and teaching practicums.
