This study investigated the individual and combined effects of chitosan (CH) and titanium dioxide (TiO₂), both with and without UV exposure, on delaying ripening, minimizing weight loss, and preserving the postharvest quality of mangoes stored at 25 ± 2 °C for up to 12 days. Key parameters assessed included physicochemical attributes, antioxidant content, in vitro antioxidant capacity, and microbial deterioration. This thesis contains 5 chapters: an introduction, three study sections, and a conclusion. Chapter 1 highlights the rationale and significance of studying dysphagic drinks through rheology. It introduces new high-protein, plant-based formulations and literature review of hydrocolloid studies for dysphagia management, utilizing both shear and extensional rheology to explore fluid behavior during swallowing. Chapter 2 presents the first study, which developed six high-protein soy-based supplement formulations for dysphagia management with varying caloric densities. Formulations with higher caloric densities than 1.5 kcal/mL showed increased viscosity and visual cohesiveness, making them suitable for extensional flow analysis. Plant diseases pose a significant threat to global food security, affecting crop yield, quality, and overall agricultural productivity. Traditionally, diagnosing plant diseases has relied on timeconsuming visual inspections by experts, which can often lead to errors. With the rapid growth of technology, machine learning (ML) and artificial intelligence (AI) have opened new possibilities for automating this process. Hydrogel scaffolds are an important component to cellular agriculture. There is a need for a sustainable alternative to the commonly used gelatin-sodium-alginate hydrogels. Specific edible fungus species may provide a suitable alternative. Many fungi possess high protein contents, ease of cultivation, and strong functional properties. Vegetables are healthy foods with nutritional benefits; however, nearly one-third of the world's vegetables are lost each year, and some of the losses happen due to the imperfect shape of the vegetables. In this study, imperfect vegetables (i.e., broccoli and carrots) were upcycled into freeze-dried powders to improve their shelf-life before they were formed into food inks for 3D printing. The rheology of the food inks, color analysis of the uncooked and cooked designs, and texture analysis of the cooked designs were determined. Genome-to-phenome research in agriculture aims to improve crops through in silico predictions. Genome-wide association study (GWAS) is potent in identifying genomic loci that underlie important traits. As a statistical method, increasing the sample quantity, data quality, or diversity of the GWAS dataset positively impacts GWAS power. For more precise breeding, concrete candidate genes with exact functional variants must be discovered. Many post-GWAS methods have been developed to narrow down the associated genomic regions and, ideally, to predict candidate genes and causative mutations (CMs). This research evaluated the influence of reducing salt on outgrowth of L. monocytogenes on ready to eat (RTE) deli-style sliced ham cured with natural celery powder, fully cooked sausage links cured with traditional sodium nitrite and sausage links cured with natural celery powder, vacuum packaged and stored at 4⁰C on the outgrowth of L. monocytogenes. Agricultural water productivity is crucial for sustainability amidst the escalating demand for food. Cereals are pivotal in providing nutritious food at affordable prices. This study was based on Ghanaian data spanning from 1992 to 2021 to evaluate water usage in the cultivation of major cereals. It also examined the virtual water losses or gains in cereal trade alongside influencing factors. The analysis utilized secondary data encompassing the virtual water content, production quantity, export and import quantities, distance, GDP per capita, population, and land per capita of Ghana and its 75 trade partners. The effects of caffeine and additives commonly found in energy drinks were tested on crayfish to record changes, if any, in their metabolism. Three experimental groups were studied: 1. Caffeine; 2. Caffeine + Glucuronolactone; 3.) Caffeine + Glucuronolactone + Taurine. Caffeine is a common stimulant used to improve mental awareness, headaches, memory, and athletic performance. Glucuronolactone is connected with cardiovascular issues and aggressive behavior. Taurine is said to improve mood and focus. Scope: Edible insect proteins are increasingly introduced as an alternative sustainable food source to address the world's need to feed the growing population. Tropomyosin is the main insect allergen; however, additional potential allergens are not well characterized and the impact of extraction procedures on immunological reactivity is unknown. Methods and results: Proteins from different commercial food products derived from cricket (Acheta domesticus) and black soldier fly (BSF) (Hermetia illucens) are extracted using five different extraction buffers. The proteins are analyzed by SDS-PAGE and immunoblotting using allergen-specific antibodies and crustacean allergic patient sera. IgE binding bands are analyzed by mass spectrometry …

Chickpea (cicer arietinum) samples from five distinct varieties (crown, royal, orion, sierra, and frontier) were subjected to varying storage conditions to investigate the impact of temperature and relative humidity (rh) on their chemical, functional, physical properties, and vitamin b profile. over 360 days, samples were stored at two temperatures (21°c and 40°c) and three rh levels (40%, 55%, 65%), with collections made every 90 days. initial observations focused on key chemical properties including moisture, protein, fat, and total starch content. subsequently, protein and starch fractions were isolated for further analysis, employing techniques such as sodium dodecyl sulfate-polyacrylamide gel electrophoresis (sds-page) …

Enfleurage is a technique that uses fat or oil as an adsorbent to extract essential oils and aromas from flowers. In this study, butter was used to adsorb the aroma from dried lavender flowers (Lavandula angustifolia). The aim of the study was to determine the optimal conditions for extracting the aroma from lavender flowers using the response surface methodology (RSM). The effects of temperature (40–65°C), extraction time (20–70 min), and the ratio of dried lavender flowers (15–27.6 g) to butter (200 g) on the linalool content and aroma liking scores were investigated. Microbial attack is a major factor in fruit and vegetable deterioration. One non-thermal method that has shown promise in overcoming these limitations is cold plasma (CP) technology. This study evaluates the impact of dielectric barrier discharge (DBD) cold plasma treatment on the quality, shelf life, and disease incidence of tomatoes. This study aims to 1) evaluate the efficacy of H2O2-peroxyacetic acid (PAA) mixer to inactivate Listeria monocytogenes in 0.1% buffered-peptone-water; 2) evaluate the reduction and mitigation of cross-contamination on peppers. For the study-1, aliquots of 1.0-ml mixer solutions (0.25, 0.50 and 0.84%) were added to the first 3-well of 8-strip-deep-well microplates. Then, the 0.1 ml of 10-fold dilution the Nalidixic-acid-resistant (NaL) L. monocytogenes was added and mixed immediately with a multichannel pipette. During the feedlot receiving period, newly weaned beef cattle face various stressors, including weaning, transportation, vaccination, and exposure to pathogens. Additionally, changes in diet and low dry matter intake contribute to nutrient deficiencies, heightening susceptibility to disease and performance declines. Therefore, we examined the effects of dietary supplementation with a multicomponent blend of prebiotics and probiotics on the health, immune status, metabolism, and performance of newly weaned beef steers during a 35-day receiving period. Jackfruit (Artocarpus heterophyllus Lam.), also known as ‘vegetarian’s meat’, is an excellent source of carbohydrates, protein, fiber, vitamins, minerals, and several phytochemicals. It is a climacteric fruit that exhibits an increase in ethylene biosynthesis and respiration rate during fruit ripening. The market value of jackfruit is reduced due to the deterioration of fruit quality during storage and transportation. There is a lack of standardized harvest maturity index in jackfruit, where consequently, fruit harvested at immature or overmature stages result in poor quality ripe fruit with short storage life. Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. The goal of this research is to highlight food additives in the formulations of food supplements consumed by cancer patients. It is a survey conducted at the Cancer treatment center in Annaba to collect a list of food supplements used by these patients. Following a screening of their ingredients for incorporated food additives, which we then classified according to the degree of toxicity, these supplements were classified according to their origin (local or imported). Purification And Comparison Of Enzymatic Properties Of Endogenous Transglutaminase Between Silver Carp And Black Carp, Yi Lin, An Yueqi, Liu Ru, Hu Yang, Xiong Shanbai

Objective: This study aimed to investigate the differences in enzymatic properties of endogenous transglutaminase (TGase) in silver carp and black carp. Methods: STG and BTG were purified from the muscle of silver carp and black carp, respectively, by 80% ammonium sulfate precipitation, Q-Sepharose FF, and Sephacryl S-200 HR chromatographies. Two enzymes were analyzed for relative molecular weights, peptide sequences, secondary structures, optimal reaction conditions, and thermal inactivation kinetics. Results: The purified STG and BTG showed similar relative molecular weights, of which the enzyme activities were 14.34 U/mg and 12.67 U/mg, respectively.
