Objective: This study aims to optimize the adsorption of enzymatic hydrolysis of Pueraria protein by macroporous resin and maximize the antioxidant properties in vitro. Methods: The Box-Behnken response surface method was used to determine the optimization of adsorption of enzymatic hydrolysis of Pueraria protein. Using VC as a control, the antioxidant activity of Kase was determined before and after purification under the optimal purification process. Objective: Phytochemistry, microbiology, flavor and functional properties of fermented papaya juice were examined in relation to Lactobacillus plantarum (Lp), Lactobacillus rhamnosus (Lr), Lactobacillus acidophilus (La) and their mixed strains (Lp+Lr、Lp+La、Lr+La), in order to develop a probiotic papaya beverage with improved functionality and health-promoting properties. Methods: In thisstudy, changes in pH, total soluble solids, titratable acid, viable cells, glucose, fructose, sucrose, organic acids and volatile compounds were determined. The contents of total phenolics and total flavonoids, as well as the inhibitory activity against α-glucosidase and tyrosinase enzymes during the fermentation process, were also investigated. Natural rice bran protein has poor emulsifiability, which limits its application in food industry, so it is necessary to adopt appropriate methods to modify it. In this review, the composition, emulsifying properties and modification of rice bran protein were summarized. The conclusion suggested that the emulsifying properties of rice bran protein could be improved by improving the modification technology of rice bran protein or by blending different high technologies, to expand the development and utilization of rice bran protein and accelerate the application process of rice bran protein in food and cosmetics.

Chloramphenicol is a widely used bactericide and highly effective antibiotic in aquaculture and livestock breeding. To protect human health, detecting chloramphenicol residues in animal-derived food products has become increasingly important. This review introduces the properties of chloramphenicol, the limit standards, and the hazards of residual chloramphenicol in animal-derived food products. Furthermore, it describes commonly used chloramphenicol detection methods. In addition, the review thoroughly analyzes and summarizes the advantages and disadvantages of different detection methods, outlining methods to improve the efficiency and precision of chloramphenicol detection to ensure the quality and safety of animal-derived food products. Exosome-like nanoparticles (ELNs) are nano-sized extracellular vesicles enclosed by lipid bilayer membrane and secreted by cells; And carrying a variety of cargo, including lipids, proteins, miRNAs and secondary metabolites. Plant ELNs have received widespread attention due to their unique structure and excellent physiological activity. This review summarizes the isolation methods, characteristics, components and functions of plant ELNs, focusing on the application of multi-omics technologies in plant ELNs. In addition, some suggestions for further study of plant ELNs were put forward.

Objective: This study aimed to develop new, efficient, safe and precise tyrosinase inhibitors. Methods: The orthogonal test was used to optimize the extraction conditions of kojic acid. The inhibitory effect of kojic acid on tyrosinase was studied by enzyme kinetics, and the mechanism of its interaction with tyrosinase from different sources was analyzed by molecular docking technology. Results: The optimum process conditions for extracting kojic acid were as follows: activated carbon content of 5%, decolorization temperature of 75 ℃, pH 2.0, decolorization time of 50 min, and the purity of kojic acid was 97.85%. the IC50 of kojic acid …

Objective: In order to achieve rapid detection of methyl parathion. Methods: An acetylcholinesterase sensor was prepared based on gold nanoparticles and reduced graphene oxide for quantitative detection of Methyl parathion. Reduced graphene oxide, gold nanoparticles and acetylcholinesterase were successively modified on the surface of the screen printing electrode by layer-by-layer assembly method. The catalytic activity and impedance characteristics of the sensor, the relationship between the sensor's inhibition rate and MP concentration, and the actual sample detection were evaluated. Chestnut rose fruit, known as "Three King fruits", has high edible value and medicinal value. Polyphenols are the second major functional component of chestnut rose fruit with pharmacological and health functions such as antioxidant, regulation of glucose and lipid metabolism, anti-inflammatory and bacteriostatic, antialcoholism and liver protection, and have great potential for food development. This review summarized the research progress of the classification, extraction, qualitative and quantitative analysis, and bioactivity of chestnut rose fruit polyphenols in recent years and prospected the future development direction.

Several behavioral change theories posit that normative influences contribute to breastfeeding behaviors and disparities. Given that media has historically presented a narrow view of what is deemed normative in human milk feeding, this study describes who and what is represented in breastfeeding images available in a stock image bank, and whether differences exist based on the breastfeeding parent’s skin color. Using content analysis, the most relevant 2% (n = 2284) of breastfeeding and lactation images in Adobe Stock were coded for 60 variables within 12 categories, such as skin color, ability, setting, skin exposure, etc. Descriptive statistics were used …

Lipases can catalyze synthesis reactions in a micro aqueous system, producing useful partial glycerides (mono- and diglycerides), and these compounds are commonly utilized in different products as surfactants. Depending on the microbial sources for lipases, immobilization conditions, and starting substrates for synthesis reaction, the composition and yields of the resulting partial glycerides could be variable. These differences could lead to the final efficacy of partial glycerides as surfactants in targeted products. This study aimed to evaluate the influence of low-concentration rennet on the chemical, rheological characteristics, and protein fractions of skim milk (SM) at 4 ± 1 °C. Skimmed milk (SM) was divided into four lots of 500 mL, and diluted rennet (1:10,000) was added at different levels at 4 ± 1 °C. The treatments included control (no rennet), T1 (0.001 mL/rennet), T2 (0.01 mL rennet), and T3 (0.1 mL rennet) treatments, which were incubated for 24 h. Lactose is manufactured from permeates of cheese whey, milk protein concentrate and a mix of both using a crystallisation process. Several factors, such as solute supersaturation, cooling rate and impurities, influence lactose crystallisation. This study focussed on the effect of soluble soybean polysaccharides (SSPS) on crystallisation during lactose manufacture from concentrated permeate solutions by evaluating lactose crystal growth and recovery with and without SSPS addition. Adding 0.1% (w/w) SSPS resulted in a significant difference (P > 0.05) in lactose crystal size and yield. The results suggest that using SSPS during lactose manufacturing from permeate concentrates could influence lactose crystallisation and recovery

Understanding The Impact Of Food Insecurity Among First-Generation College Students On The University Of Arkansas Campus, Madison Price, Jennie S. Popp Ph.D., Nathan Paul Kemper, Louise Michelle Hancox

The purpose of this study was to: 1) better understand food insecurity among first-generation college students and how it might differ from that of other college students, and 2) gather opinions from students that may serve as solutions to alleviate food insecurity. This study was conducted with a mixed-methods survey that included both open-ended and closed-ended questions. This survey had 670 responses. Nearly 10% of respondents stated that they were experiencing food insecurity. Almost 18% stated they were first-generation college students. A greater percentage of African American (P = 0.0022) and Hispanic Latino (P < 0.0001) students were first-generation compared to all other students, while a lower percentage (P < 0.0001) of Caucasian students were first-generation compared to other students. The results suggested that first-generation students were more likely to experience nine food insecurity impacts than non first-generation students. Further, both first-generation and non first-generation students indicated low levels of knowledge and/or use of existing resources on the University of Arkansas campus that can help address food insecurity needs. Finally, both first-generation and non first-generation respondents overwhelmingly favored food insecurity solutions centered around expanding access to campus food programs through lower costs and increased awareness of existing campus resources via improved advertising.

Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. Consumer research, crucial to the success of new products, relies traditionally on rational judgements and opinions, which may not reflect the real reasons for consumer choice. The goal of this research was to apply and further develop the concepts of Kansei engineering to quantify an emotional response to product use. Consumers consider the surface color of fresh lamb as the indicator of freshness and wholesomeness, which affects their purchase decisions. The redox chemistry of myoglobin (Mb) determines the color of fresh lamb. Artificial raising on milk replacer (a pre-weaning strategy) as well as red clover supplementation are management strategies used in lamb production. This thesis focuses on the effects of artificial raising on milk replacer and red clover supplementation on the color and oxidative stability of fresh lamb.

Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Alcohol alternatives beverages, including no-alcohol and low-alcohol products, are increasing in popularity and can function as compliments to alcoholic products to decrease the total alcohol volume consumed or as substitutes for alcoholic products. Objective: A study involving 7 experiment stations evaluated the effects of a second iron injection administered before weaning on growth and hematological measures of pigs.
Materials and Methods: Pigs (n = 514) were given an iron injection (100–200 mg) on the first day of life. Piglets were then allotted to pairs of similar-weight, samesex siblings 3 to 5 d before weaning (on d 18–24) with one piglet from each pair receiving a second iron injection. Cocoa powder is one of the most used ingredient in food products, especially beverage and bakery product since it gives the unique and favoured taste. However, cocoa powder is limited water dispersibility. Therefore, ball milling (BM) has been explored its effect of cocoa powder on its size reduction and physicochemical properties in this study.
