Correlates Of C-Reactive Protein Levels In Young Adults: A Population-Based Cohort Study Of 3827 Subjects In Brazil, Aydin Nazmi, I. O. Oliveira, Cesar G. Victora
Food Science and Nutrition
The socio-demographic, behavioral and anthropometric correlates of C-reactive protein levels were examined in a representative young adult Brazilian population. The 1982 Pelotas Birth Cohort Study (Brazil) recruited over 99% of births in the city of Pelotas that year (N = 5914). Individuals belonging to the cohort have been prospectively followed up. In 2004-2005, 77.4% of the cohort was traced, members were interviewed and 3827 individuals donated blood. Analyses of the outcome were based on a conceptual model that differentiated confounders from potential mediators. The purpose of this study was to determine the effectiveness of dry heat, steam, and microwave treatments in decreasing lipase activity, while retaining antioxidant activity, to stabilize whole wheat flour against lipid degradation during storage. Bran was heat-treated in 230-g batches using four levels (exposure times) for each of the three treatment methods. Lipase activity and antioxidant activity were quantified for all treatment combinations. None of the treatments significantly decreased antioxidant activity; the levels determined to be optimal, inasmuch as further heating did not significantly decrease lipase activity, were 25 min of dry heat, 60 sec of microwave (1000W), and …

Eat Smart. Play Hard™. San Luis Obispo!, a multi-component primary prevention program targeting low-income, Hispanic children 6-8 years, focuses on promoting healthy dietary and physical activity behaviors using an innovative child-adult buddy system approach. The child-adult buddies participate in multiple activities to increase their consumption of fruits and vegetables, and level of physical activity and decrease their consumption of sweetened beverages. The results of the pilot program show high program satisfaction and improvements in dietary and physical activity behaviors. Such programs provide an opportunity to establish and promote healthy behaviors among young children and ultimately prevent overweight development.

We investigated whether lipid extract from a blue-green alga, N. commune, modulates proinflammatory gene expression in RAW 264.7 macrophages. The cells were incubated with N. commune lipid extract (0–100 μg/mL) and subsequently activated by LPS (100 ng/mL). Quantitative real-time PCR analysis showed that mRNA abundance of proinflammatory mediators, including TNF-α, COX-2, IL-1β, IL-6, and iNOS, was significantly reduced by N. commune lipid extract in a dose-dependent manner. Secretion of TNF-α and IL-1β into cell culture medium was also significantly decreased by N. commune lipid extract. Thin-layer chromatography-densitometry analysis showed that N. commune …

America's current food labeling scheme, as illustrated by the example of salt, is flawed when examined from the consumer and public health perspective. While the Food, Drug, and Cosmetic Act has sound scientific standards, those standards as currently applied to labels do not efficiently signal health information to consumers. Without better information on labels, consumers will continue to make poor choices at the grocery store. However, there are promising new ways to label. Both the United Kingdom and the domestic supermarket chain Hannaford’s have implemented simple health labeling on food packaging or grocery shelves to improve the amount and location …

Nonambulatory cattle may be at higher risk of harboring foodborne pathogens such as E. coli O157:H7, Salmonella, and, very rarely, the infectious agent that causes bovine spongiform encephalopathy, colloquially known as “mad cow disease.” The exclusion of nonambulatory cattle from slaughter for human consumption may strengthen the safety of the food supply and is a prudent measure already in place throughout the European Union.

BACKGROUND: Epidemiological studies suggest that physical activity reduces the risk of colon cancer in humans. Results from animal studies, however, are inconclusive. The present study investigated the effects of voluntary exercise on intestinal tumor formation in two different animal models, Apc(Min/+) mice and azoxymethane (AOM)/dextran sulfate sodium (DSS)-treated mice. METHODS: In Experiments 1 and 2, five-week old female Apc(Min/+) mice were either housed in regular cages or cages equipped with a running wheel for 6 weeks (for mice maintained on the AIN93G diet; Experiment 1) or 9 weeks (for mice on a high-fat diet; Experiment 2). Two cottonseed oil biodiesel samples (cottonseed oil methyl esters, COME) produced in Clemson lab, together with other two commercial cottonseed oil biodiesels were evaluated on their engine performance with the No. 2 diesel fuel as a reference. The results revealed that emission of CO, CO2 and NOx from cottonseed oil biodiesels was lower than that of the No. 2 diesel fuel. CO decreased by 13.8%, CO2 by 11.1% and NOx by 10%, though there was no significantly statistical difference at p<0.05. The engine test also showed a slightly higher amount of consumption and less tendency of coke formation from COME than the No. 2 diesel fuel. The oxidative stability study showed COME with acceptable stability. COME exhibited friendly environmental benefits and acceptable stability, demonstrating its feasibility as an alternative fuel.

Nixtamalization is the process of steeping dried corn in hot water with calcium hydroxide (lime) with subsequent removal of all or most of the pericarp through washing. The resulting product is called nixtamal. Approximately 60% of corn tortillas in Mexico are produced from nixtamal, with the remainder prepared from nixtamalized corn flour. Nixtamal was fortified with micronutrient premix containing iron, zinc, folic acid, niacin, riboflavin, and thiamin. Premix composition followed a proposed Mexican regulation for corn flour fortification, adjusted for moisture. Grape pomace, a by-product of juice and wine processing, is a rich source of anthocyanins, antioxidant compounds that may afford protection against cancer and coronary heart disease. Unfortunately, traditional extraction of these antioxidants involves use of organic solvents, which pose serious safety and disposal problems for industry. Clearly a need exists for “green” extraction technologies—such as use of subcritical water—that eliminate or reduce the amount of organic solvents. Very few U.S. studies have looked at the accidental food allergen ingestion rate in adults. It has long been recognized that limitations exist in the analytical methodology for amylose determination. This study was conducted to evaluate various amylose determination methods. Purified amylose and amylopectin fractions were obtained from com, rice, wheat, and potato and then mixed in proportion to make 10, 20, 30, 50, and 80% amylose content starch samples for each source. These samples, considered amylose standards, were analyzed using differential scanning calorimetry (DSC), high-performance size-exclusion chromatography (HPSEC), and iodine binding procedures to generate standard curves for each of the methods. The average intake of vegetables in Ireland falls below the recommendations of Bord Glas and FSAI. Carrots are the third most consumed vegetable in Ireland and they are an excellent source of vitamins A and B as well as phytochemicals. Lactic acid bacteria (LAB) are well-known in food for their benefits such as improvement of the nutritional value of food and improvement of the digestion of lactose. Optimisation of short time blanching (steaming) was investigated using response surface methodology by analysing quality and microbial and nutritional markers over the shelflife of packaged fresh-cut lettuce. Steamer treatment time (5–10 s) and storage (1–10 days) were used as independent factors in order to optimise the process. Longer treatments (>10 s) were not feasible because of extensive damage caused to lettuce tissue. Significantly (p < 0.05) higher values of luminosity (L*), greenness (−a*) and sensory panel scores (fresh appearance, general acceptability and absence of browning) were obtained with samples treated for longer times with the steamer. Activity of browning-related enzymes present in photosynthetic tissue decreased in all the cases, however, longer treatment time (7.5–10 s) was needed with vascular tissues to reduce to similar activity values. These differences could be explained by the variation in tissue thickness. The longest steam treatment (10 s) reduced and maintained significantly (p < 0.05) lower mesophilic load than shorter treatments (5–8.5 s). However, significant (p < 0.05) decreases in vitamin C and carotenoids were observed in samples treated with longer treatments. Steamer treatment of 10 s could be considered the optimum time for maintaining the shelflife (mainly texture and browning) of fresh-cut lettuce for 7–10 days in optimum conditions.

Experiments were conducted to determine the effectiveness of different treatments based on the use of neutral electrolysed water (EW) on fresh-cut lettuce. EW was diluted to obtain different free chlorine concentrations (120, 60 and 12 ppm) and compared with standard washing treatment of 120 ppm chlorine solution. Shelf-life quality and safety markers were studied at the beginning and at the end of the 7-day storage at 4 ºC. Quantitating fat and lean tissue in isolated body regions may be helpful or required in obesity and health-outcomes research. However, current methods of regional body composition measurement require specialized, expensive equipment such as that used in computed tomography or dual energy x-ray absorptiometry (DEXA). Simple body size or circumference measurement relationships to body composition have been developed but are limited to whole-body applications. We investigated relationships between body size measurements and regional body composition.
