Healthy People 2010 breastfeeding goals include 50% exclusive breastfeeding at 6 months. In California, US, Santa Clara County Women, Infants, and Children (SCCWIC) data indicated Asian participants had low (5.6%) 6-month breastfeeding rates. To examine infant-feeding practices, Vietnamese breastfeeding peer counselors surveyed 133 Vietnamese SCCWIC participants (≥ 18 years old, nonpregnant, < 28 months postpartum) using a structured questionnaire regarding intentions, attitudes, and subjective norms toward breastfeeding. Results indicated that 75% initiated breastfeeding in the hospital (33% exclusively, 42% partially), and 25% exclusively formula fed. At survey time, 49% had terminated breastfeeding (average duration 4.4 months). Feeding intentions during pregnancy predicted feeding method used (P < .001). Most prenatal advice was from SCCWIC employees, friends, and doctors who supported breastfeeding. Most postnatal advice was from nurses who supported breastfeeding and bottle-feeding equally. Stronger control beliefs, peer counseling, and education were correlated with breastfeeding (P < .001). Improved postdelivery hospital advice may further increase breastfeeding initiation and duration.

The corn tortilla plays an integral role in the Mexican diet and is an ideal vehicle for micronutrient fortification. Approximately 60% of corn tortillas in Mexico are produced from nixtamal, with the remainder prepared from masa flour. A process for continuous fortification of nixtamal tortillas was evaluated in two commercial mills in Mexico. A commercial powder dosifier was used to add micronutrient premix containing iron, zinc, folic acid, niacin, riboflavin, and thiamin to nixtamal (1 g/kg) as it was milled. For the first part of my thesis, the effects of filtration temperature and heat treatment on the compositional properties of whole milk Ultrafiltration retentate (UF) were studied. Ultrafiltration is primarily run at temperatures in the range of 50-55°C but more and more plants are starting to filter at refrigeration temperatures. This article analyzes ongoing controversy over how to best label rBST-free milk. Recombinant bovine somatotropin is a genetically engineered drug administered by some farmers to their dairy herds to increase milk production. FDA first approved its use in 1994, despite great controversy. The FDA also issued labeling guidelines that allowed voluntary disclosure of rBST-free milk, so long as it carried the disclaimer that no difference could be detected between milk produced with rBST and rBST-free. The controversy continues today as consumers express a preference for rBST-free milk and many rBST-free producers label their milk this way. "Conventional" milk (with rBST) …

She was a local restaurant owner who decided to sell her business and retire. Obesity and overweight are increasing at epidemic proportions in South Carolina for both adults and children, particularly affecting minority groups. Hispanic populations residing in South Carolina are not the exception. It is important to provide nutrition education, exercise, and behavior interventions as they are the foundations to treat parents and children who are overweight, obese, or are at risk for overweight and obesity. After working with the Rice Council, ConAgra Foods, and the Florida Department of Citrus, Diane is currently with McKee Foods.

Rita Hamilton comes from a family with a history in child nutrition. Hamilton’s mother worked at the food service manager at Hamilton’s elementary school in rural Arkansas. After majoring in Home Economics at the University of Arkansas and working as an Arkansas Home Economics extension agent, Rita went on to serve as a state supervisor in the school nutrition programs at the Arkansas Department of Education.

Objective To identify characteristics of dietitians who serve as leaders in the American Dietetic Association (ADA) and their managers, and to compare them to registered dietitians not in volunteer leadership roles and their managers.
Design A cross-sectional survey of volunteer leaders and those who have never volunteered as leaders in ADA.
Subjects/setting The study sample included elected officers in ADA and executive board members of ADA state affiliates (volunteer leaders) (n=259) and their managers (n=115), as well as a sample of registered dietitians not in ADA leadership roles (control) (n=273) and their managers (n=221).

Iron deficiency anemia is a widespread occurrence. Consequently, iron is commonly added in cereal fortification programs. However, many iron sources cause undesirable sensory changes, especially color changes, in the food being fortified. This study evaluated the effect of different iron sources on CIE L*a*b* color values and sensory color perception in fortified corn tortillas. Corn masa flour was fortified with micronutrient premix containing vitamins, zinc, and one of eight iron compounds. Turmeric (Curcuma longa L.) plants that were grown in vitro for 17 or 22 weeks as a fed-batch culture in 2.5 L vessels yielded 39 to 43 g and 62 to 70 g of fresh rhizomes per vessel, respectively (95 % confidence interval). The MS liquid medium was maintained at 6 % sucrose through media addition twice during the experiment. Various methods were employed in attempts to increase secondary metabolism. Antioxidant and total phenolics assays were employed to characterize phytochemical activity. Seven plant pathogenic fungi (Botrytis cinerea, Colletotrichum acutatum, C. fragariae, C. gloeosporioides, Fusarium oxysporum, Phomopsis obscurans, and P. viticola) valuable in screening fungicide efficacy were tested. Optimal and reproducible conditions for germination of these selected fungi were established by incorporating Roswell Park Memorial Institute 1640 (RPMI) as a medium of known composition and washing conidia to remove innate germination inhibitors. This step reduced average fungal germination times between 3.5 h and 21.2 h. The natural product-based fungicide, sampangine, seven sampangine analogs (4-bromo-sampangine, 4-methoxysampangine, benzo[4,5]sampangine, liriodenine Mel AMC-XIII-103, onychine, cryptolepine, and liriodenine CDH-II-37), plus seven conventional fungicides (benomyl, captan, cyprodinil, fenbuconazole, …
