The fortification of bakery products with bioactive and functional substances is the main focus of food sciences. These nutrients include date fruits (Phoenix dactylifera L.) and their byproducts. This work aims to illustrate the effects of using date components in bakery products and to determine how these effects affect the products' technological, rheological, and sensory qualities. To achieve this purpose, date powder was introduced in bread making procedure with different rates (1, 3, 5, 7 and 9 %). Among E3CHO initiative consists of multiple education, environment, economic, culture, and health engagement sessions aimed at generating a literacy story map, Peta Cerita Berliterasi, as an integrated outcome of community capacities. The method of linear programming (LP) was utilized to determine the relationship between the composition of nutrients of each ingredients, specifications for raw materials, cost and requirements for nutrients of the red tilapia (Oreochromis sp.), in order to define: (1) least cost ration formulation, (2) least cost diet, (3) minimum price of producing a particular diet after meeting a number of requirements. The resulting LP models were solved using the simplex algorithm. Giant swamp taro (GST/Cyrtosperma merkusii), a local North Sulawesi coastal plant, is underutilized but has high po-tential for cultivation as a paludiculture plant on rewetted peatland restorations. GST has high starch content and is currently being explored for potential use. This study explored the potential of using the biomass pulp yielded as resi-dues of the starch extraction process. Endolichenic fungi (Trichoderma reesei and Aspergillus aculeatus) isolated from local lichens, were inoculated on the GST biomass in a solid state fermentation (SSF). The aim of the following work was to investigate and compare curcumin and cayenne pepper in microbeads composed of sodium alginate (SA) crosslinked with montmorillonite (MMT) to act as drug carriers and their antimicrobial resistance. The microbeads were prepared through ion-exchange in multivalent solutions of CaCl2, MgCl2 and AlCl3. The microbeads were characterized by Scanning Electron Microscopy (SEM), Energy Dispersive X-ray analysis (EDX) and the time required for intercalation of curcumin and cayenne pepper with MMT. This study was aimed to evaluate the cost-effectiveness of pembrolizumab with chemotherapy (pembrolizumabcombination therapy) and compare it with standard-of-care platinum-based chemotherapy (chemotherapy alone) as a first-line treatment for metastatic nonsquamous NSCLC from the perspective of Taiwan's third-party-payer public health-care system. We used a partitioned survival model with an estimated time horizon of 10 years. The partitionedsurvival model uses KaplaneMeier estimates of progression-free and overall survival from the KEYNOTE-189 clinicaltrial. Ascorbic acid (AA) is used as a food additive for its antibacterial and antioxidant properties. However, excessive intake of AA is harmful to humans. Therefore, the detection of Fe3+ and AA is generally recognized to be meaningful. In this work, a one-step hydrothermal tactics is developed for the preparing nitrogen and phosphorus co-doped carbon nanoparticles (N, P-CNPs) by using sucrose and ammonium orthophosphate as raw materials. The N, P-CNPs not only exhibited an enhanced fluorescent efficiency with a relatively high quantum yield up to 28%, but also showed satisfactory stability, water solubility and photostability. This study reveals the anti-tyrosinase activity of Ganoderma formosanum extracts, pinpointing compounds including gluconic acid, mesalamine, L-pyroglutamic acid, esculetin, 5-hydroxyindole, and salicylic acid, as effective melanin production inhibitors in melanoma cells and zebrafish embryos. Furthermore, multiple molecular docking simulations provided insights into interactions between the identified compounds and tyrosinase, increasing binding affinity up to -16.36 kcal/mol. The enhanced binding of identified compounds to tyrosinase facilitated synergistic inhibitory effects on melanin production. This study highlights the potential of GFE-EA as a source of natural tyrosinase inhibitors and contributes to understanding the role of active compounds extracted from G. formosanum.

In the current study, the effects of fermentation by Lactobacillus acidophilus, Levilactobacillus brevis or Lactiplantibacillus plantarum (La/Lb/Lp, 1-2.5%) and incubation (30/37℃, C1/C2) of red beetroot juice on the profile of betalains and polyphenols (UHPLC-DAD-MS), and antioxidant capacity using photochemiluminescence (PCL) and spectrophotometric assays (DPPH/ABTS) was investigated. Additionally, anti-glycaemic (anti-AGEs) and anti-cholinergic (anti-AChE) potential in vitro was analysed. Fermentation distinctly initiated isobetanin and neobetaninformation and enhanced flavonoid concentration, emphasising rutin, kaempferol and (+)-catechin. The fermented juices inhibited protein glycation in the BSA-GLU model and showed high DPPH and ABTS values. LP2.5% juice was the only one indicating anti-AChE potential.

Polycyclic aromatic hydrocarbons (PAHs) are primarily generated through the incomplete combustion or pyrolysis oforganic materials in various industrial processes. Hummus consumption has risen but multiple foodborne outbreaks due to Salmonella contamination have been reported. Essential oils (EOs) eugenol and carvacrol have been found to inhibit the growth and survival of Salmonella in food products. The objective was to evaluate antibacterial properties of various concentrations of eugenol (EU) and carvacrol (CA), alone or in combination (EUCA) against Salmonella in vitro and in hummus. Eugenol demonstrated a MIC of 0.125 mg/mL and an MBC of 0.25 mg/mL, while carvacrol showed a MIC of 0.0625 mg/mL and an MBC of 0.125 mg/mL. In the hummus study, 2% EUCA was the most effective …

Understanding the bacterial profile of chicken during processing is essential to identify spoilage-related bacteria. Using advanced methods like Oxford Nanopore sequencing, specific bacterial species on chicken meat can be identified. This study aimed to characterize bacterial composition and diversity on chicken breast during processing. Results showed a reduction in aerobic bacteria, E. coli, coliform, and lactic acid bacteria counts. However, three thermophilic bacteria, Anoxybacillus contaminants, Neobacillus thermocopriae, and Anoxybacillus flavithermus, dominated across processing steps. Notably, Pseudomonas species were undetected by conventional plating but identified via Nanopore sequencing, highlighting the need for molecular detection methods. Sweet potatoes are a worldwide staple crop and granola bars are popular with consumers. This study aims to create a granola bar utilizing sweet potatoes and to assess its changes over time. Initial formulations tested minimum and maximum concentration of sweet potato (SP) puree, formulations, cooking type and time/temperature, humectants and preservatives. Bars containing 30 and 45% SP butter were chosen. Changes over time and descriptive sensory evaluation were conducted every 14d for 70d, with four treatments: a control bar and a bar with a preservative, each held at 25°C and 47°C. Dry-cured hams may become infested with Tyrophagus putrescentiae (ham mites) during the aging process. Traditionally, methyl bromide (MB) fumigation has been used to control these infestations, but its phase-out due to environmental concerns has prompted the need for alternative methods. This study evaluated the effectiveness of acetic acid-coated ham nets and carboxymethyl cellulose (CMC)-based edible films with propylene glycol (PG) in mitigating mite infestations. Laboratory trials assessed the impact of these treatments on mite orientation, reproduction, infestation rates, and sensory quality. Chickpea (Cicer arietinum L.) is the second most widely grown legume crop after soybean. Here, we measured the macronutrients and performed proteome profiling of eight chickpea cultivars using two complementary protein extraction solvents. The total protein, starch, and soluble sugar contents significantly differ between cultivars, and we quantified 2434 and 1809 proteins, respectively, from urea- and water-based extraction solvents using a data-independent acquisition approach. The proteome-level differences can vary from 9-25% for the urea-extracted proteins, and the storage protein abundances significantly differed between the cultivars, where legumin content was detected as the highest, followed by vicilin and albumin. It presents with symptoms such as irregular menstrual cycles, insulin resistance, high testosterone levels, anxiety, depression, and infertility, significantly impacting quality of life and health (OASH, 2021). Fresh produce is traditionally labeled with plastic Price LookUp (PLU) stickers that are environmental contaminants and can easily detach during handling and disrupt traceability. The CO2 laser-labeling technology (LLT), an alternate method of produce labeling, has been gaining attention. This study evaluated the efficacy of five commercially available sanitizers to reduce Salmonella (sessile and biofilm forms) count on experimentally inoculated materials representative of harvesting bins and picking bags in the fresh produce industry. Sessile Salmonella cells were grown onto tryptic soy agar to create a bacterial lawn, while multistrain Salmonella biofilms were grown in a Centers for Disease Control and Prevention (CDC) reactor at 22 ± 2 °C for 96 h. Atherosclerosis is the process of cholesterol buildup within arterial cells, which is considered a leading factor that causes certain cardiovascular diseases. Cholesterol accumulation within pro-inflammatory endothelial cells is thought to induce atherogenesis and accelerate atherosclerosis progression. Evidence suggests inhibiting the microRNA miR-33a in arterial cells may promote atheroprotection via increasing ABCA1 protein expression. MiR-33a is processed into two functional strands, miR-33a-5p and miR-33a-3p. The aim was to determine the effect of packaging on the acceptance of natural peanut butter, especially concerning the acceptance of the undesirable oil layer. The jars of peanut butter differed by color, label size, and inclusion of qualifying statements. 119 participants across two groups completed this study. Both groups completed an eye-tracking study in a mock grocery setting. The first group rated all five jars in appearance, expected quality, and overall rating. In this study, both untreated and pre-treated green pea grain samples dried at different microwave output powers (90, 180, and 360 W) were rehydrated at three different temperatures (30ºC, 50ºC, and 70ºC). The rehydration kinetics of dried peas were analyzed using both the Peleg and the first-order kinetic models. Observations revealed that the Peleg model exhibited better agreement with the experimental data. As both microwave power and rehydration temperature increased, the rehydration capacity also increased in both pre-treated and untreated peas. This study comprehensively evaluates the effects of environmental conditions, transportation, and storage practices on the quality of milled rice using three cultivars: CLL16 (long grain pureline), XP753 (long grain hybrid), and Titan (medium grain pureline). Three distinct objectives guided the research: (1) assessing the impact of relative humidity (RH), temperature, and exposure duration on rice quality post-milling and post-storage; (2) analyzing seasonal and locational influences on rice quality during transportation and storage; and (3) investigating the effects of subfreezing storage on key quality attributes.

Post-processing contamination of Listeria monocytogenes has remained a major concern for the safety of ready-to-eat (RTE) meat products that are not reheated before consumption. Mathematical models are rapid and cost-effective tools to predict pathogen behavior, product shelf life, and safety.
