The multibillion dollar agricultural industry is an important part of the United States economy, and the management of factors that affect crop and human health is imperative to maintaining this economic sector. The fungi Botrytis cinerea, Fusarium pallidoroseum, and Fusarium moniliforme are the causative agents of several plant diseases and can cause significant crop loss both before and after harvest in commodities such as strawberries, lettuce, citrus, and grains. Methods for creating precise perforations in respiring produce packaging are being increasingly adopted. Knowledge of oxygen transfer through perforated packaging and oxygen distribution in packages is necessary for successful packaging design of fresh produce. An approach to modeling perforated packaging performance was developed using a cylindrical chamber with precision perforations using Fick’s second law. The model was simulated using two techniques including Finite Element Method (FEM) using commercially available software and Finite Volume Method (FVM) through programming. Perforations were approximated as a source term in the second method. Both simulation techniques showed trends similar to experimental data.

A growing concern throughout the world, especially the United States, is the health of our population. According to the National Health and Nutrition Examination Survey (NHANES) performed in 2009-2010, approximately 35% of both men and women in the United States are obese (Flegal, 2012). In 2005, more than 300,000 deaths in the United States were attributed to obesity. However, the World Health Organization listed obesity as one of ten most preventable health risks (Wilborn, 2005).

The risk of poor food safety is a major focus for managers in the food manufacturing industry. Despite industry-led and regulatory efforts to improve the overall food safety of US packaged consumer foods, product recalls and market withdrawals are increasing. This is especially true for the most frequent cause for food recall: the undeclared allergen. Game meats represent a multibillion dollar industry in the United States with high economic incentives associated with species substitution and mislabeling. However, there is currently a lack of information regarding the prevalence of mislabeled game meat on the U.S commercial market. The purpose of this study was to conduct a market survey of whole-cut game products sold within the United States to identify incidences of mislabeling using DNA barcoding. In this study, we evaluated the chemical and physiological effect of low-dose gamma irradiation on the post-harvest quality of Chandler Pummelos (Citrus maxima (Burm.) Merr.), an emerging crop of interest in the U.S. Chandler pummelos from a local grower in California were irradiated at target doses of 150 Gy and 1000 Gy. Irradiated and untreated pummelos were stored at 12 °C for 3 weeks and at 20 °C for the 4th week to reflect three weeks of sea shipment at ideal temperature for storage of pummelos and an additional week of retail under ambient conditions. “Insomniac of the Soil” is a homage to a landscape that has deeply informed Sarah Golibart's life and her artistic voice – the tidewater flatlands of Virginia’s Chesapeake Bay peninsula where her family lives and where Golibart has worked on farms since high school. Both her poems and essays are earthy, imagistic, and grounded – quite literally – in the soil as well as in a sensibility of ecological ethics and sustainability. “Insomniac of the Soil” is also a love song to the fervent and fallow cycles of the soil.

The seed germination process during sprout production provides suitable environmental conditions for the growth of pathogenic bacteria, such as Listeria monocytogenes. A potential way to control this bacterial growth is through the use of bacteriophages, which are naturally occurring viruses that specifically attack bacterial targets and have been shown to be effective antimicrobials in some foods. O. horridus (a member of the family Araliaceae) is a plant traditionally used by the tribe of Pacific Northwest America for medicinal as well as spiritual purposes. O. horridus is found in the temperate forests of northwestern North America as an understory shrub capable of growing in well-drained to poorly drained, shady sites. Traditional medical preparations of O. horridus include decoction or infusion, preparation as a tea, preparation as a poultice, or preparation as a tonic. Germinated brown rice is commonly consumed in Asia for its enhanced nutritional properties such as gamma-aminobutyric acid (GABA) and softer cooked texture. However germination decreases milling yield and alters some physicochemical properties, and most germinated rice studies evaluated medium-grain and aromatic rice cultivars. This study compared the effects of germination duration and parboiling on milling, physicochemical, and textural properties of a medium- (Jupiter) and a long-grain (Wells) rice cultivars. Starch-inclusion complexes have been proposed as delivery tools for bioactive molecules; however complexation yield is generally low with low solubility, which may limit the bioavailability of the included molecule. It was proposed that chemical (acetylation) and/or enzymatic (isoamylase and beta-amylase) modifications of starches prior to complex formation with fatty acids of different structures, including stearic, oleic and linoleic acid, may help increase complexation yield and solubility of the resulting starch complexes. L. acidophilus DDS1-10 was encapsulated using an alginate, potato starch and type 4 resistant starch (RS4) matrix. The wall material was optimized by varying levels of alginate (1.6 to 4.4%), while maintaining potato starch and RS4 ratio fixed at 2, and the total solid content at 5%. Particles were prepared using an emulsion and an extrusion method. Particles obtained from the emulsion method were smaller with a non-uniform distribution in size while those obtained by the extrusion method were bigger and uniform in size. We have reported that microRNAs (miRNAs, miRs) in bovine milk regulate human genes. In milk, many miRNAs are encapsulated in exosomes, thereby conferring protection against degradation and a pathway for intestinal transport of miRNAs. We hypothesized that the uptake of bovine exosomes in human intestinal colon carcinoma Caco-2 cells and rat primary small intestinal IEC-6 cells is mediated by endocytosis. Transport studies were carried out using fluorophore-labeled exosomes purified from bovine milk. Today, 85% of corn, 93% of soybeans, and 88% of cotton in the U.S. are genetically modified (GM). Using laboratory methods, genes from one species, such as a plant, can be transferred to an unrelated species, such as an animal. Genetically modified crops may lead to higher yields, have improved food quality, texture, and nutritional value, and have an increased shelf life.

In foods, browning is a complex set of reactions known as the Maillard Reaction (MR). As food is cooked, MR yields flavor, color and changes to the chemical properties of the initial food item. Conjugated linoleic acid-rich soy oil (CLARSO) has been shown to have numerous health benefits, including anti-obesity and anti-carcinogenic properties. This study was designed to compare the fatty acid and fruit and vegetable intake of people with and without periodontal disease. Periodontal disease affects approximately 15 percent of the developed world population. Participants filled out a food frequency questionnaire (FFQ) for both fruit and vegetable and fat intake. A sample of whole blood (EDTA) was collected to determine the fatty acid profile of participants’ red blood cell (RBC) membrane. Consumer evaluation, proximate data, Warner-Bratzler shear force (WBSF), fatty acid (FA) composition and volatile compounds were analyzed from the ribeye steaks (LT) finished on conventional feedlot (FL) and forages, including a perennial legume, birdsfoot trefoil (BFT; Lotus corniculatus), and a grass, meadow brome (Bromus riparius Rehmann, Grass). Representative retail forage (USDA Certified Organic Grass-fed, COGF) and conventional beef (USDA Top Choice, TC) were investigated (n = 6) for LT. The worldwide demand for organic produce has been on the rise in recent years. This is a result of consumer concerns about the environment and chemicals used in food production. In the United States, the major dietary source of protein is poultry meat, particularly chicken. Phosphorus absorption in chickens is a critical problem in poultry production. It therefore is important to understand the cellular and molecular regulation of phosphorous absorption in intestine to increase efficiency of the process. This would provide the benefits of reducing feed costs and reducing phosphorous excretion, thereby contributing to the sustainability of agriculture in the United States. Therefore, the focus of this thesis is determining the effect of vitamin D metabolites involved in phosphate homeostasis using the chicken as a model.

Atrial fibrillation (AF) is a common cardiac arrhythmia that requires extensive medical and pharmaceutical management. The coagulation antagonist warfarin is commonly prescribed to reduce AF-associated stroke. Although warfarin effectively mediates thromboembolitic risk, its management is complex as many factors influence its therapeutic range including: genetics, diet, medication, and herbal and dietary supplement (HDS) interactions. Lack of patient knowledge regarding these factors contributes to poor patient outcomes. With the emerging epidemic of AF, readily available educational tools are necessary to improve patient outcomes while reducing clinician burden.

Characterization And Investigation Of Fungi Inhabiting The Gastrointestinal Tract Of Healthy And Diseased Humans, Mallory J. Suhr

Gastrointestinal microbiome studies have failed to include fungi in total community analyses. As a result, their diversity and function in the gut is poorly understood. Recent work has begun to uncover the role intestinal fungi play in diet, immune system development, interactions with other microorganisms in the gut, and pathogenesis of diseases. Advances in sequencing technologies allow for the ability to profile the fungal gut microbiome (“mycobiome”) in healthy and diseased states. This thesis explores the mycobiome in 1) healthy humans with a vegetarian diet and 2) pediatric small bowel transplant recipients that develop fungal bloodstream infections.
