Near infrared spectroscopy data from 135 apple samples of different storage periods were determined, the charactar of them was extracted and analyzed using principal components analysis. Therefor an ANN model for detection of apple chewiness was established. Our results showed that the preprocessing of spectrum scattering was the weighted multiple scatter correction(WMSC) and mathematics processing was “2441”. The structure of the artificial neural network mode was 3—16—1, established after extracting 3 principle component as the characteristic variables of the original information. Study On Isolation And Preliminary Identification Of Endophytic Fungi In Trollius Chinensis, Lu Jun, Qin Peizhen, Shan Qiji, Li Zhonghai

Fresh plants of T. chinensis collected from Inner Mongolia were used to isolated the endophytic fungi from their roots, stems and leaves after superficial disinfection. According to the morphological characteristics observation and microscopy examination, 6 endophytic fungi strains were isolated from the T. chinensis, including four strains from the leaves, one from the stems, and one from the roots. All the separated fungi strains were identified as penicillium genus (Pinicielium).

In order to explore the mutagenic and anti-mutagenic effect on the different storage periods of Korean soybean paste. In this study, on the basis of detecting mutagenicity effect by modified Ames test, and detecting the anti-mutagenic effects of the Korean soybean paste samples with different storage time have on Mouse bone marrow micronucleus test. Result: the mutagenicity of Korean soybean paste were negative; Anti-mutagenic effect were enhanced with the extension of storage time and the concentration, the anti-mutagenic effect of TA100 and TA98 strains induced by Trp-p-1 and MNNG reached the maximum value at 12 months of storage. Louisiana Native Co-Culture of Microalgae (Chlorella Vulgaris L. and Cyanobacteria Leptolyngbya sp.) (CCA) was studied. CCA is a viable coculture for further investigation as a food component. This research characterized the proteins, carbohydrates, and lipids present in CCA. Algae cultivation parameters were controlled and analyzed. Treatment (Trt) 1 was CCA grown in cultures exposed to average scalar irradiance (ASI) of 1041 ± 269.18 μmol m-2 s-1 PAR and trt 2 was CCA grown in cultures exposed to ASI of 430 ± 96.03 μmol m-2 s-1 PAR. Diaphorina citri (Hemipteran: Psyllidae), the Asian citrus psyllid, is a phloem-feeding, invasive species endemic to southern Asia that was first identified in the United States in Florida in 1998. Since introduction, D. citri has spread across the major citrus growing regions of the United States. This is of great concern to the citrus industry because D. citri is the primary vector of Candidatus Liberibacter asiaticus the causal agent of Haunglongbing (HLB). The resistant starch (RS) in enzymatic branch-chain elongated waxy corn starch (WCS) was separated by using in vitro digestion method. Then, the physicochemical properties and molecular structure of RS were characterized. The results showed that the morphology of starch was significantly changed after digestion, and irregular cracks appeared on the surface of RS. Moreover, the improvement of thermal stabilities of RS wasalso observed. These results revealed that the amorphous regions of modified starches were preferably to be hydrolyzed during digestion. Nutrition and solubility were evaluated by assaying amino acids composition, AAS, EAAI, NSI and TCA-NSI of hydrolysate from Urechis unicinctus body wall muscle. The results showed that there were all of 18 types of amino acids, and umami amino acids were rich. In umami amino acids, the highest was Glu, 218.263 mg/100 mL, followed by Gly and Ala, third for Asp. Hydrolysate had strong delicious taste and it was a good seafood seasoning base. AAS of EAA was at range of 96~141, and EAAI was 86.50. They showed that EAA was rich and hydrolysate had a high nutritional value. When …

The viscosity, foaming properties, emulsifying capabilitiy and synergetic action of Camelina sativa gum were studied by comparison to other gums. The results showed Camelina sativa gum solution in low concentration exhibited high apparent viscosity and good emulsifying and foaming properties. The viscosity of the compound gum increased sharply and the optimum ratio was 5∶5 of Camelina sativa gum to xanthan gum, and 9∶1 of Camelina sativa gum to guar gum. Camelina sativa gum improved the shear resistance and it could be well co-opperated with other gums. Meanwhile, the additive Camelina sativa gum had good properties.

To study the effect on preservation of sugarcane juice with chitosan and lemon juice, the mass fraction of chitosan, sterilization temperature, sterilization time and dosage of lemon juice were studied by the single factor, then L9(34) was designed. The preservation effect were determined by the change of physicochemical characteristics (pH, Vc content, sugar content, acidity and soluble solids) and sensory evaluation of the sugarcane juice, meanwhile the samples were characterized by ultraviolet spectrum. Food derived bioactive peptides are a series of specific functional hydrolysates of food proteins with relatively small molecular weight, containing deferent number of amino acid residues. And food-derived immunoactive peptides are those bioactive ones that play important roles on antibacterial, anti-inflammatory, and immunoregulation. Thus it is significant to investigate them because of their wide distribution and high bioactivities. The recent research status and the immune functions of immunopeptides are summarized. Moreover, some methods of producing immunoactive peptides were also introduced. Finally it is prospected that the research tendency of the immunoregulatory mechanism of immune peptides and their advanced utilization.

In this paper, the effects of light, temperature and elicitor on the biosynthesis of carotenoids are reviewed, which is hoped that the production of carotenoids can be improved by external regulation in the production process.

Effects of sodium citrate were investigated on the growth, the serum biochemical parameters and intestinal flora of mice. Mice were randomly divided into four groups: control group, low-dose group (added 0.65% sodium citrate), middle-dose group (added 2.6% sodium citrate) and high-dose group (added 5.2% sodium citrate).The diet intervention lasted for four weeks. Stool samples and weight data were collected weekly, and the composition of intestinal microbiota and the serum biochemical parameters were determined at the end of the fourth week. Relatively little is known about their ability to inhibit the carbohydrate-hydrolyzing enzymes α-amylase and α-glucosidase from releasing glucose from starch and/or disaccharides. The objective of this project was to determine the optimum procedures for extracting total phenols (TP), total flavonoids (TF) and total condensed tannins (TCT) from black beans (Phaseolus vulgaris), and then to determine the ability of the phenolic rich extracts to inhibit α-amylase and α-glucosidase. Biofortified foods are being introduced in sub-Saharan Africa as an important strategy to help address micronutrient malnutrition. However, there has been little research on factors that could play decisive roles in their successful introduction. This paper investigates the determinants of consumer acceptance of biofortified orange-fleshed sweet potato (OFSP) using data from a choice experiment conducted in Ghana. In the present study, we characterized the antioxidant and hepatoprotective mechanisms underlying of wild grape seed procyanidins (WGP) against oxidative stress damage in ethanol-treated HepG2 cell and Sprague-Dawley (SD)-rat models. In HepG2 cells, WGP not only diminished the ethanol (EtOH, 100 mM)-induced reactive oxygen species (ROS) formation and cytochrome P450 2E1 (CYP2E1) expression, but also renovated both the activity and expression of antioxidant enzymes including catalase, superoxide dismutase, and glutathione peroxidase. In the United States, autism spectrum disorders (ASD) had a prevalence of 1 in 150 children in 2000. In the year 2012, the prevalence of ASD in the United States jumped to 1 in 68 children (Centers of Disease Control and Prevention, 2012). A low-carbohydrate ketogenic diet (LCKD) is a popular approach to weight and fat loss. CrossFit is a high-intensity power training (HIPT) type exercise for all levels of age and fitness that has gained recognition as one of the fasting growing sports in America.
