After harvesting the animal, pork muscle continues to undergo changes as it turns from muscle into meat. During this early period, the muscle uses up energy and produces acid, which lowers pH and can affect important quality traits such as color and how well the meat holds water. A key driver of these early changes is calcium, a natural mineral inside muscle cells that helps control contraction and energy use. In this study, we tested whether mitochondria (the cell’s “powerhouse”) help control calcium after harvest and, in turn, influence early postmortem changes in pork. Protein is a priority nutrient in the American diet, being fueled by the demands of weight loss drugs, diet culture, and new dietary guidelines. However, meeting these elevated protein goals sustainably requires diversifying beyond standard sources like whey protein isolate. 3D printing offers an opportunity to present a variety of protein sources in a palatable, customized, and consumer-acceptable format. In this study, 3 protein sources (cricket, whey, and pea), were optimized within food inks for 3D printing. Food Insecurity can affect certain groups more than others. At the College of Saint Benedict and Saint John's University we've observed it in international students, student-athletes, and those without transportation. Although CSBSJU offers several dining options, it can still be difficult for students to access meals due to limited availability during breaks, limited dining hours for student-athletes, and transportation barriers. This paper examines how food insecurity and nutrition insecurity impact students’ overall well-being while also exploring how these challenges appear within the CSBSJU community. Type 2 diabetes mellitus (T2D) is one of the leading causes of morbidity and mortality in the United States, with approximately 25% of healthcare expenditures directed toward its management and associated metabolic complications. In response to the urgent need for novel therapeutic strategies, recent research has focused on bioactive compounds derived from dietary sources. In light of that, we identified the plant lignan matairesinol (MA) and its gut-derived metabolite, enterolactone (ENL), as agents capable of enhancing glucose uptake in 3T3-L1 differentiated adipocytes. Foot-and-mouth disease (FMD) is a highly contagious viral disease that may impair reproductive efficiency in dairy cattle. This study aimed to evaluate changes in the reproductive performance of Friesian Holstein crossbred dairy cows following an FMD outbreak at UPTD BPTSP and HPT Cikole, Lembang, West Java, Indonesia. A retrospective study was conducted using reproductive records collected from 2019 to 2023. The reproductive parameters analyzed were calving interval, service per conception, conception rate, service period, and first mating postpartum. This study aims to determine the optimal incubation time for goat milk kefir that produces the highest antibacterial peptides, and to determine the antibacterial activity of purified goat milk kefir. Protein levels were determined using the microassay method. Kefir, which is known to have the best incubation time for producing the highest antibacterial activity when ultrafiltered with a 10 kDa cut-off membrane, was analyzed for its molecular weight using SDS-PAGE. Cow’s milk and egg allergies are prevalent IgE-mediated food allergies that pose significant public health concerns worldwide. Although strict avoidance remains the primary management strategy, unintended exposure can still occur through allergen cross-contact, particularly in commercial and industrial food operations that utilize shared frying oils. The objective of this study was to identify and quantify allergen transfer in shared frying oil and assess the robustness of existing targeted mass spectrometry methods (LC-MS/MS) for detecting milk and egg proteins in heated oil matrices.

Autistic teens are at greater risk for having heart disease and diabetes as adults. Food particularity, sensory issues, fixed mindset, and anxiety over trying new things can slow down their interest in preparing food for themselves. Nurturing basic cooking skills and gently encouraging trying new foods would provide more nutritional options to teens as they move into adulthood. A cooking class preceded by Motivational Interviewing (MI) developed further interest in preparing food afterward in teens, both autistic and non-autistic, and in trying new foods for autistic teens with food concerns.

Comparative Evaluation Of Five Bacterial Strains For The Fermentation Of Camel Milk, Sifatun Nesa Ali

In this study, the comparative fermentation performance of lactic acid bacteria Streptococcus thermophilus, Lactobacillus delbrueckii subsp. bulgaricus, Lb. helveticus, Lb. casei, and Lactiplantibacillus plantarum in Camel Milk (CM) and Bovine Milk (BM) was investigated. Fermentations were carried out at 42°C for 48 hours, and was monitored through bacterial growth, titratable acidity, pH evolution, proteolytic activity, microstructural properties, and rheological characteristics. Although comparable bacterial viability was observed in CM and BM, acidification kinetics varied significantly between CM and BM (p < 0.05). Proteolysis was significantly higher in fermented CM than in BM (p < 0.001), with consistently greater o-Phthalaldehyde Assay (OPA) values in CM across all strains during fermentation (p < 0.001). Scanning electron microscopy revealed more porous, loose protein matrices in fermented CM than in BM, which supports the rheological results showing weaker gel networks and lower rheological strength in fermented CM. Among the tested bacteria, Lb. casei demonstrated superior adaptability, enhanced viability, balanced acidification, and favorable rheological properties in both milks. Overall, the results of this thesis demonstrate strain-specific fermentation responses and support the possible suitability of different starter cultures for improving the technological performance of fermented camel milk products.

Including cheese products in daily diet will give tangible results, enriching body with nutrients rich in high-quality proteins. The aim of the research is to create an Italian semi-hard cheese, caciotta, from local cow's milk. In the experiment, pepsin of the CHY-MAX® Powder Plus NB brand was used. The resulting product contained 1.46 mg/kg zinc (Zn), which is approximately 34 times lower than the permissible limit (50 mg/kg), which is considered a high quality indicator. Food loss and waste (FLW) present pressing environmental and economic challenges. Upcycling technologies provide a sustainable pathway by transforming food by-products into value-added products; however, consumer acceptance remains a critical barrier. Guided by Self-Determination Theory (SDT), this study investigates how environmental motivations influence consumers’ attitudes and purchase intentions toward milk enriched with upcycled peanut skins. Data were collected from a nationally representative sample of 1488 U.S. adults. Structural equation modeling (SEM) was employed to test hypothesized relationships among motivational constructs, and cluster analysis was used to identify consumer segments based on motivational profiles. This study evaluated the impact of hibiscus and whey as alternative fermentation substrates on the physicochemical, phytochemical, and microbial properties of kombucha. A 2 × 2 full factorial design was used to compare four treatments: black tea + water (BW), black tea + whey (BH), hibiscus + water (HW), and hibiscus + whey (HH). The fermentation solvents (water or whey) were heated to 88 °C, infused with 0.6% (w/v) black tea or hibiscus for 10 minutes, sweetened with 10% (w/v) sucrose, cooled to 22 °C, and inoculated with 20% (v/v) kombucha starter culture. The objective was to produce and characterize a red colorant resulting from interaction of sunflower-derived chlorogenic acid with L-tryptophan/Trp and to evaluate its applications. Yield, intensity, solubility, stability, protein, and metal content of colorants from pH 9 and pH 11 lyophilized sunflower flour- Trp colorants were measured. Red color formation took < 3 h with alkalization and subsequent acidification. The sunflower flour: Trp mixture ratio that produced the greatest redness was 10:2. The highest red pigment was in supernatants and not the precipitates. The red colorant intensity and solubility were highest at neutral pH when compared to acidic pH solutions. The color stability of the new red colorant in icing and refrigerated whole milk matrices, when assessed weekly for a month, showed no color change in refrigerated milk. After 30 min of incubation at 63 °C, pinkness in milk remained unchanged or increased. The pink color, however, faded in icing over time due to exposure to light. The present study established a new natural red colorant developed from sunflower protein-Trp mixtures at alkaline pH, as well as its application in icings and whole milk for commercial strawberry milk products. This colorant could serve as a replacement for the synthetic petroleum-based Red 3.

Electric pressure cookers (EPCs) offer convenience, versatility, and efficiency in everyday cooking. EPCs offer multiple cooking functions beyond pressure cooking, including sautéing, slow cooking, steaming, cooking rice, and preparing yogurt. They are not suitable for pressure canning, as confirmed by multiple Extension research studies and national guidelines. When used properly, EPCs provide a safe and effective way to prepare meals quickly while saving counter and storage space.

This study presents the innovative Food Choice Map (iFCM) as a methodological innovation for investigating food choice motivations using an integrated qualitative and quantitative approach. One hundred in-depth interviews were conducted with adults living in the United States, during which participants constructed individualized visual maps of their typical weekly diet. These maps documented specific foods and beverages, eating occasions, frequencies of consumption, and self-articulated motivations for each choice. Nutritional Neurocriminology Today

An expanding body of research suggests that diet and nutrition may play an influential yet underrecognized role in problematic and criminal behaviors. This article synthesizes research linking excessive consumption of sugar and ultra-processed foods to adverse neurobehavioral outcomes, impaired impulse control, aggression, mood dysregulation, and sleep problems. Integrating research suggests that metabolic disruption, neuroinflammation, and gut–brain axis dysfunction may influence cognitive and emotional regulation. While criminal behavior is complex and multifactorial, this article emphasizes nutrition as a modifiable factor to inform forensic mental health practice, correctional policy, and rehabilitative strategies.

Penelitian ini bertujuan mempelajari pengaruh suplemen Zn-Proteinat, Cu-Proteinat dan Ca-Minyak dalam ransum berbasis pucuk tebu diamoniasi terhadap pertumbuhan dan efisiensi ransum pada domba jantan persilangan Priangan x Barbados. Percobaan dilakukan terhadap 5 ekor domba jantan yang sedang tumbuh dengan menggunakan rancangan Bujur Sangkar Latin (BSL) 5x5,  lima macam ransum yaitu R1 = campuran 50% pucuk tebu amoniasi + 50% konsentrat, R2 = R1 + 2% Zn-proteinat, R3 = R1 + 2% Cu-proteinat, R4 = R2 + 2% Cu-proteinat, dan R5 = R4 + Ca-minyak ikan. Penelitian ini bertujuan untuk mempelajari potensi pakan asal limbah tanaman pangan dan daya dukungnya terhadap populasi ternak ruminansia di wilayah kabupaten Garut. Penelitian dilakukan dengan cara survey dan pengumpulan data sekunder.  Hasil penelitian menunjukkan bahwa Potensi pakan asal rumput alam dan jerami asal limbah tanaman pangan di seluruh wilayah kabupaten Garut adalah 414.211,1 ton bahan kering (BK) yang terdiri atas 151.395,6 ton BK asal rumput dan 262.815,5 ton BK asal limbah tanaman pangan. Daya dukung pakan terhadap populasi ternak adalah 124.706 satuan ternak (ST), yang terdiri atas 45.580,5 ST ternak ruminansia kecil dan 79.125,5 ST ternak ruminansia besar.

Penelitian ini bertujuan untuk mempelajari potensi pakan asal limbah tanaman pangan dan daya dukungnya terhadap populasi ternak ruminansia di wilayah kabupaten Sumedang.
