The University of Alabama at Birmingham undergraduate and graduate programs’ continued involvement in the Birmingham-Jefferson County community have identified food insecure areas, known as food deserts, and associated health issues negatively impacting the community due to poor diets and lack of access to healthy foods. Farm stands and community gardens around the Birmingham-metropolitan area have increased healthy food availability during the past several years to encourage healthier eating habits. Cryptococcus neoformans is a neurotropic, opportunistic, encapsulated, yeast-like fungus that causes life-threatening meningoencephalitis in both healthy and immunocompromised individuals. C. neoformans infects 1,000,000 people and causes 210,000 deaths worldwide annually, mostly in sub-Saharan Africa. The polysaccharide capsule of C. neoformans is the fungus major virulent factor. Glucuronoxylomannan (GXM), the main component of the capsule is abundantly released into brain tissue during C. neoformans infection, causing immunosuppressive defects in the host. C. neoformans is inhaled from the environment, disseminate via bloodstream, and crosses the blood brain barrier (BBB) to cause cryptococcal meningoencephalitis (CM). Extracellular matrix has been broadly applied and show great promise in medical applications and tissue engineering. Product of extracellular matrix (ECM) should be treated with decellularization and purification process. Supercritical carbon dioxide treatment is of particular interest for purifying ECM because of its medically available and rapid speed of process. งานวิจัยนี้ครั้งนี้มีวัตถุประสงค์ เพื่อพัฒนาไม้ไอศกรีมจากผงกล้วยดิบ โดยอาศัยหลักการออกแบบการทดลอง เพื่อเป็นทางเลือกในการเพิ่มมูลค่าของกล้วยให้กับเกษตรกร และเป็นแนวทางให้กับผู้ประกอบกิจการในการลดขยะที่เกิดจากการทิ้งไม้ไอศกรีมแบบเดิม โดยไม้ไอศกรีมที่ผลิตได้ต้องมีคุณภาพที่เหมาะสมกับการใช้งานและได้รับการยอมรับจากผู้บริโภค ซึ่งเริ่มจากทำการศึกษาวิธีการขึ้นรูปผลิตภัณฑ์ผง ด้วยการค้นคว้างานวิจัยและทดลองเบื้องต้น โดยพบว่าแป้งสาลีมีคุณสมบัติของตัวประสานที่ดีที่สุด และวิธีการผลิตอ้างอิงจากกระบวนการผลิตผลิตภัณฑ์ขนมอบในอุตสาหกรรม จากนั้นทำการศึกษาปัจจัย 3 ปัจจัย คือ สัดส่วนผงกล้วยดิบต่อแป้งสาลีเอนกประสงค์ ปริมาณน้ำตาล และเวลาที่ใช้ในการอบ โดยการออกแบบการทดลองแบบบล็อกสุ่มสมบูรณ์ ซึ่งทำการทดสอบคุณภาพทางกายภาพด้านความแข็ง ความเปราะ และคุณภาพทางจุลินทรีย์ของผลิตภัณฑ์ ซึ่งสามารถสรุปเงื่อนไขที่เหมาะสมในการผลิตไม้ไอศกรีมจากผงกล้วยดิบที่ระดับนัยสำคัญ 0.05 ได้ดังนี้ คือ สัดส่วนผงกล้วยดิบต่อแป้งสาลีเอนกประสงค์ตั้งแต่ร้อยละ 50:50 จนถึง 80:20 ปริมาณน้ำตาลร้อยละ 40 โดยน้ำหนักส่วนผสมแห้ง และเวลาที่ใช้ในการอบ 40 นาที ซึ่งมีผลของค่าความแข็งเฉลี่ยใกล้เคียงกับไม้ไอศกรีมจากไม้มากที่สุดอยู่ในช่วง 31.49 ± 2.19 นิวตัน ถึง 38.53 ± 4.86 นิวตัน และผลการทดสอบค่าวอเตอร์แอคทิวิตี้อยู่ในเกณฑ์ที่ไม่ทำให้เกิดการเจริญเติบโตของจุลินทรีย์ในระหว่างการเก็บรักษาอยู่ในช่วง 0.050 ± 0.002 ถึง 0.112 ± 0.062 นอกจากนี้ ไม้ไอศกรีมจากผงกล้วยดิบยังสามารถรับประทานได้ ซึ่งได้ศึกษาการยอมรับของผู้บริโภคที่มีต่อไม้ไอศกรีมจากผงกล้วยดิบ โดยการประเมินคุณภาพทางประสาทสัมผัสจากการทำแบบสอบถาม และผลทดสอบการยอมรับผลิตภัณฑ์ไม้ไอศกรีมจากผงกล้วยดิบในคุณลักษณะด้านต่างๆ ได้แก่ สี กลิ่น รสชาติ เนื้อสัมผัส และความชอบโดยรวมพบว่าอยู่ในระดับปานกลางถึงมาก โดยผลิตภัณฑ์ที่มีเงื่อนไขสัดส่วนผงกล้วยดิบต่อแป้งสาลีเอนกประสงค์ร้อยละ 50:50 ปริมาณน้ำตาลร้อยละ 40 โดยน้ำหนักส่วนผสมแห้ง และ เวลาที่ใช้ในการอบ 40 นาที มีระดับความชอบโดยรวมมากที่สุด และจากการประเมินต้นทุนในการผลิตไม้ไอศกรีมจากกล้วยดิบผงจะมีต้นทุนค่าใช้จ่ายโดยประมาณอยู่ที่ชิ้นละ 1.57 บาท

Cystic Fibrosis (CF) is a degenerative disease, which causes thickening of the airway surface liquid and reduced mucociliary clearance, which provides an ideal habitat for bacterial infections. Early treatment of CF in children can prevent chronic infection, improve quality of life, and increase life expectancy. The most predominant bacteria found in CF-diseased lungs is Pseudomonas aeruginosa (Pa), which can be treated with inhaled tobramycin. Aims: To establish the impact of uncomplicated type 2 diabetes on cognitive and neuropsychological performance in midlife. Methods: We performed a cross-sectional study of middle-aged adults with uncomplicated type 2 diabetes and a cohort of healthy control participants. General cognition was assessed using the Montreal Cognitive Assessment test and neuropsychological assessment was undertaken using a detailed neuropsychological assessment battery. Results: A total of 152 participants (102 with type 2 diabetes and 50 controls) were recruited (mean age 52 ± 8 years, 51% women). "Presently, approximately one-third of all biopharmaceutical drugs are derived from biological sources like gram-negative bacteria. Gram-negative bacteria like E.coli are much cheaper to cultivate and provide higher biotherapeutic yield compared to mammalian cells. On extracting the useful biotherapeutics from the gram-negative bacterial cells (E.coli), endotoxin present in the bacteria is released in the surrounding media thus contaminating the lifesaving biotherapeutics. Application of the endotoxin-contaminated therapeutics to humans or animals can cause serious health issues like septic shock, tissue injury and ultimately death. With the increase in world population, the continued advances in modern greenhouse agriculture and plant growth practices are expected to help overcome the global problem of future food shortages. This research investigates a way to assist in stemming the problem of food shortage by using optimised light irradiation (within the constraints of the experiment) on a sample plant species of lettuce (Lactuca sativa, L.). Aiming at the on-site and quick safety evaluation of the dissolved trace copper ions (Cu2+) in drinking water source, an electrochemical detection platform was developed on the basis of the square wave anodic stripping voltammetry using the gold nanoparticles (Au NPs) modified glassy carbon electrode, where Au NPs were deposited via electrochemical cyclic voltammetry. Shape memory polymer (SMP) foams provide a promising new option for hemorrhage control on the battlefield; however, they lack a mechanism to control wound infections that can delay healing processes. The Speedy Seeder or ”SS” is a device designed to decrease the time it takes to fill one seed plot by hand to roughly sixteen percent of the time. The customer of the SS is EarthDance Organic Farms School. EarthDance fills a large number of plots each year by placing a seed in every single compartment which come in three sizes: 32, 72, and 128 compartments per plot. Mold grows in moisture-rich environments and requires only minimal sources of nutrition to support growth. It has long been identified to cause damage to buildings and construction materials and its presence in buildings has been connected to many major health concerns with various studies and reviews published on this matter.2

For my senior project, I perform data analysis using statistical methods to determine body metrics that correlate with blood glucose levels. Working with Dr. Tina Smilkstein, I take repeat measurements from 6 different volunteers to establish trends in bodily metric data. The data taken includes weight, body fat, pulse rate, VO2, blood glucose, blood pressure, hours slept, and quality of sleep. Using these values, I use the program MiniTab to view results.

The fecal indicator bacterial species Escherichia coli is an important measure of water quality and a leading cause of impaired surface waters. We investigated the impact of the filter-feeding metazooplankton Daphnia magna on the inactivation of E. coli. The E. coli clearance rates of these daphnids were calculated from a series of batch experiments conducted under variable environmental conditions. Batch system experiments of 24 to 48 h in duration were completed to test the impacts of bacterial concentration, organism density, temperature, and water type. The purpose of this research is to explore the current methods of fluid resuscitation and other possible methods of measuring the body fluid levels of burn patients in order to fully understand the fluid increase patterns in the torso area.
