Adult obesity rates are on the rise in the United States according to the Centers for Disease Control (2009) which has led to an increase in obesity-related illnesses such as diabetes and heart disease. Weight-loss surgery (WLS) has become accepted as a "cure" for obesity by the medical community. There has been a dramatic increase in the number of obese individuals electing to undergo WLS every year; 82% of these individuals are women (AHRQ, 2007). There are many reasons why issues of food insecurity and hunger exist. Individuals, families, and households have various barriers to food security, often facing more than one at a time. Barriers include limited fixed incomes, minimum wage not equaling a livable wage, unemployment and underemployment, poverty, lack of personal transportation and/or access to public transportation, limited access to shopping areas (food deserts), and health and medical issues.

This senior environmental studies thesis explains and analyzes edible education through a food and gardening program at a continuation high school in Claremont, California. The first chapter situates the program-specific analysis by providing background information of the edible education movement, a history of the Edible Schoolyard in Berkeley, California, and an explanation of why food is a powerful teaching tool. The second chapter delineates the program by describing all of its components and compiling essential resources and teaching documents. Many college students have inconsistent knowledge of historic and policy contexts where communication and power have played a key role. As Anton Ego, Ratatouillefood critic would say, “What we need is some perspective.” We have found one avenue for the development of such perspective is an advanced course for the consideration of power or, more accurately, the examination of powerlessness and how communication can be brought to bear for both the manifestation and limitation of power. Within the health care provider-health care recipient relationship the communication must be culturally competent to eliminate barriers to equitable health care for all Americans. This assertion has conceptual grounding in Public Law 106-129 (the Health Care Research and Quality Act of 1999) and Public Law 106-525 (the Minority Health and Health Disparities Research and Education Act of 2000). This narrative systematic review examines this assertion by using selection and exclusion criteria to gather interventions, assessments, and testimonies conducted from 2000-2007. This thesis documents the campaign “Make Your Move. Choose Your Food.” This healthy lifestyles empowerment campaign was one of six conducted in Bowling Green, Kentucky during February 2012 for the Public Relations Student Society of America’s (PRSSA) 2011-2012 Bateman Case Study Competition through the public relations capstone courses Journalism 454 and 456. The purpose of this study was to use a content analysis to compare retail trade advertisements made by top U.S. consumer packaged goods (CPG) manufacturers during the December 2007–June 2009 recession. This study extended Lord’s (1987) research that focused on consumer advertising to understand retail trade advertisements. This study analyzed 195 advertisements of U.S. CPG manufacturers in a nationally distributed U.S. retail trade print publication, Supermarket News. The results could indicate that retail trade print advertisements may help to enhance CPG manufacturers’ reputations among their trading partners. Jack LaLanne hosted the first and longest running fitness program in United States broadcast history from 1951 through 1985. Since LaLanne's rise as a broadcasting celebrity, the health and fitness industry has grown from a small, somewhat-maligned field into a multi-billion dollar per year economy of its own. As LaLanne reached iconic status through his show, his name became synonymous with good health and nutrition, but the messages of his show went far beyond simple exercises. He used religious, patriotic, and biomedical messages to get his points across. In addition, he was a showman who sang to his audience, used …

For the last 40 years, Stephen Gaskin has been an adult educator on the fringe, working with tens of thousands of adults in the counterculture movement in pursuit of social change regarding marijuana legalization, women’s rights, environmental justice issues and beyond. Gaskin has written 11 books about his experiences teaching and learning with adults outside the mainstream, yet, he is virtually unknown in the field of adult education. This research focuses on the social media-driven convention of advertising, and seeks to analyze the type of communication that occurs between celebrity endorsers and audiences within social media. Kim Kardashian is used as the most current and successful celebrity endorser. A content analysis, including posts and responses from April and May 2011, is used to analyze the type of advertising messages and celebrity/audience interaction. The Portrayal Of Older People In Marketing Materials For Senior Centers, Jason Robert Gillespie

This content analysis examined 128 senior center brochures and newsletters to determine how older people (those 65 years and older) were portrayed. Findings indicated that portrayals of older people in this medium that targets older people and their caretakers exclusively were overwhelmingly positive. Older people were portrayed favorably in terms of health status, personality descriptors related to level of happiness, interaction with others, mental state, as well as body image and overall evaluation. In several other categories such as energy level and activity level they were portrayed neutrally, and not a single category was dominated by negative portrayals. In fact, …

Through The Looking Glass: Weight Bias Revisited From A Symbolic Interactionist Point Of View, Latisha Lynn Balogh-Robinson

The existence and possible causes of weight bias, stigma, prejudice and subsequent discrimination is well documented in professional journals and scholarly works. Comparatively little focus, however, has been afforded to research targeting the theoretical and practical means to address the social stigma of obesity. This brief literature overview substantiates the pervasive nature of weight bias that exists in our communities, schools, and the workplace, as well as explores the roots and nature of prejudice as it relates to the obese. The concluding discussion proposes that revisiting weight bias through the lens of symbolic interaction theory can yield valuable insight that, …

A Communication Strategy To Address Health Inequities In Municipal Settings, Christine Unson, Ben Tyson, Angela Funaiole, Comfort Agaba
Journal of Health Disparities Research and Practice
This study assessed knowledge of health inequities, importance and benefits/barriers of addressing inequities, and ways of communicating information about inequities among municipal officials. Five focus groups (N=47) were conducted with officials from economic development, land use and housing, public safety, education, and environment departments. Discussions were recorded, transcribed and analyzed for key themes. Findings show that participants had an uneven understanding of the symptoms and causes of health inequities and identified limitations to participating in health equity initiatives and collaborating with local health departments. Recommendations are that a communication strategy to reduce health inequities should aim to increase awareness of …
