Buy Fresh, Buy Local: Nebraska Working Together For Local Food, Margaret Milligan Jan 2021

Buy Fresh, Buy Local: Nebraska Working Together For Local Food, Margaret Milligan

Cornhusker Economics

Direct market farms in Nebraska are made up of people passionate about raising good food for their fellow Nebraskans. They grow vegetables, fruits, meat, grains, and value-added products to sell directly to consumers in their communities.

During the pandemic, these small farms have experienced restaurant sales vanishing, farmers’ market attendance de-creasing, and slots filling up at the small meat processors where they take their livestock. At the same time, there has been a renewed interest from consumers seeking reliable, transparent food produced close to home. It’s been a volatile year, and it has required quick pivoting, group coordination and action …

Animals In Our Lives: An Interactive Well-Being Perspective, Nancy V. Wünderlich, Jill Mosteller, Michael B. Beverland, Hilary Downey, Karen Kraus, Meng-Hsien (Jenny) Lin, Henna Syrjälä

College of Business Faculty Publications and Presentations

Humans have long interacted with animals. Recently, market-based responses to societal challenges, including loneliness and mental well-being include the use of animals. Considerable research concerning consumer–animal relationships has also examined the benefits (micro, meso, and macro) of human-animal interaction and companionship. However, much of this research is fragmented and lacks a broader organizing framework. It also suffers from an anthropomorphic bias, whereby the interests of animals are excluded. To address this, we provide a macromarketing perspective on consumer–animal relations and explore the interdependencies of consumer–animal relationships on consumer, animal, and community well-being. We introduce and apply the Interactive Well-Being framework …

Similarity Measure Selection And Optimization For E-Commerce Product Matching, Maryetta Morris Jan 2021

Similarity Measure Selection And Optimization For E-Commerce Product Matching, Maryetta Morris

Theses and Dissertations

Since its birth in 1979, e-commerce has grown to become a generation-defining phenomenon. There are millions of platforms from which online transactions can be made, and billions of products available for purchase. As these numbers continue to grow, there is an increased need to exchange, process, and store data about these products. There are also services such as review aggregators and price comparison sites that rely on collecting and integrating data from all over the web. When combining data from multiple sources, it is important to be able to identify which references refer to the same real-life product. Product matching, …

Consumer Preferences For Foods With Clean Labels And New Food Technologies, Kara Grant, R. Karina Gallardo, Jill J. Mccluskey Jan 2021

Consumer Preferences For Foods With Clean Labels And New Food Technologies, Kara Grant, R. Karina Gallardo, Jill J. Mccluskey

Faculty Publications - College of Business

Foods with “clean labels,” that is, foods with few ingredients, may mitigate the stigma from the lack of healthfulness in processed food products. However, with conventional technologies, clean labels are difficult to achieve. We conducted a survey, including choice experiment scenarios, in which half of the respondents were presented scenarios to purchase a shelf‐stable ready meal with a clean label/fewer ingredients, and the other half were presented scenarios including the clean label/fewer ingredients and a new technology that al-lows for processed foods to be produced with fewer ingredients. In general, respondents were willing to pay a price premium for the …

Improving Volunteer Retention With Nonprofit Organizations Through Implementing Onboarding Training, Tawanda Lashone Carpenter Jan 2021

Improving Volunteer Retention With Nonprofit Organizations Through Implementing Onboarding Training, Tawanda Lashone Carpenter

Education Projects

Many nonprofit organizations are staples in the community as they provide services for disadvantaged and marginalized groups that seek services that are not easily accessible to them through for-profit organizations. Hence, the retention of volunteers is a challenge for many nonprofit organizations as they depend on volunteers to assist with the day-to-day tasks that cannot be accomplished by paid employees (Garner & Garner, 2011). During the time of this project, One Step Further, Inc. (OSF) Community Support and Nutrition Program (CSNP) was faced to deal with the national pandemic of COVID-19, leaving this organization to depend on paid staff exclusively. …

Follow-up meetings are required to enable a successful team involvement relationship. Job satisfaction ensures a lower turnover rate in the hiring process for the company. Hiring processes involving onboarding and orientation ensure stability, trust, and comfort for the employee within an organization.

To Fee Or Not To Fee? Satisfaction, Service Quality, And Support Of An Entrance Fee Of A State Park System, Hund-Ling Stella Liu, I-Chun Nicky Wu, Michael J. Bradley

Faculty Publications - Tourism

In the past decade, state government appropriation reductions have forced park agencies to seek other sources of revenue to support park operations. To overcome shrinking budgets, many public park agencies embrace private-sector business models and investigate customer satisfaction, service quality, and user fee structures. The purpose of this study was to obtain public input regarding service quality, general satisfaction, and experience use history of state park visitation. A total of 382 Oklahoma state park users completed an online survey and were sorted into Pro-Fee (n = 200,52%) and No-Fee (n = 182,48%) groups for one-way multivariate analysis of variance (MANOVA) …

Banking On Her: The Effects Of Microfinance On Women’S Autonomy In Developing Economies, Zena Pare Jan 2021

Banking On Her: The Effects Of Microfinance On Women’S Autonomy In Developing Economies, Zena Pare

Mahurin Honors College Capstone Experience/Thesis Projects

Once applauded as a way to empower the world’s poorest, and in particular benefit women, the practice of microfinance is now perceived with a much more cautious and nuanced lens. Some perspectives state that microfinance improves women’s lives and uplifts communities, while others claim that it increases over-indebtedness and does not provide a viable path to escape poverty. In order to determine if microfinance is an effective use of resources to empower women, this paper analyzes the relationship between women’s autonomy and microfinance to provide further insight into its proposed positive and negative effects. Using ordinary least squares regression analysis, …

The Psychological And Technological Intersectionality In Game Design And Development, Nicholas Saladino Jan 2021

The Psychological And Technological Intersectionality In Game Design And Development, Nicholas Saladino

Undergraduate Honors College Theses 2016-

Over the past number of decades, video games and game design have been evolving and pushing technology forward. This is quite obvious when comparing the original Pong (1972) to God of War (2018). Pong is a simple recreation of table tennis, on the other hand, God of War is a large-scale action-adventure game with highly realistic graphics. What brings these two games together is that they are both meant for a player to enjoy. At the time of each game’s creation, the developers were utilizing the available technology to its fullest. While technology has been advancing, the psychology and philosophy …

Consumer Valuation Of And Attitudes Towards Novel Foods Produced With New Plant Engineering Techniques: A Review, John C. Beghin, Christopher Gustafson Jan 2021

Consumer Valuation Of And Attitudes Towards Novel Foods Produced With New Plant Engineering Techniques: A Review, John C. Beghin, Christopher Gustafson

Department of Agricultural Economics: Faculty Publications

We follow the PRISMA extension for scoping reviews to review the emerging international body of empirical evidence on consumers’ attitudes and willingness to pay (WTP) for novel foods produced with New Plant Engineering Techniques (NPETs). NPETs include genome/gene editing, cisgenesis, intragenesis, and RNA interference. These novel foods are often beneficial for the environment and human health and more sustainable under increasingly prevalent climate extremes. These techniques can also improve animal welfare and disease resistance when applied to animals. Despite these abilities of NPETs, evidence suggests that many, but not all, consumers discount these novel foods relative to conventional ones. Our …

High Bmi Predicts Attention To Less Healthy Product Sets: Can A Prompt Lead To Consideration Of Healthier Sets Of Products?, Christopher Gustafson, Kristina Arslain, Devin Rose

Department of Agricultural Economics: Faculty Publications

While the food environment has been implicated in diet-related health disparities, individuals’ ability to shape the food environment by limiting attention to a subset of products has not been studied. We examine the relationship between BMI category and consideration set—the products the individual considers before making a final choice—in an online hypothetical shopping experiment. Specifically, we focus on the healthiness of the consideration set the individual selected. Secondly, we examined the interaction of a health prompt (versus a no-prompt control) with BMI category on the healthiness of the consideration set. We used linear probability models to document the relationship between …
