Reduction Of Fat Content In Processed Meats Using Hot-Boning And Cold-Batter Mincing Technology, Morgan P. Wonderly
Master's Theses
Processed meats have received negative publicity due to high fat contents that have been linked to adverse effects on human health. Fat is an essential ingredient in many processed meat products, so reducing this all while maintaining the desired characteristics of the product is a challenge. The purpose of this study was to generate low-fat meat products using a combination of hot-boning/crust-freeze-air-chilling (HB-CFAC) and cold-batter mincing (CBM) technologies. Pork hams were subjected to HB-CFAC or chill-boning/crust-freeze-air-chilling (CB-CFAC) prior to 3 min pre-mincing and 6 min mincing for control gels with back-fat addition or low-fat gels with water addition instead of …

Exopolysaccharide From The Liquid Culture Of Ganoderma Lucidum As Feed Additive For Red Hybrid Tilapia (Oreochromis Sp.), Thiran Jaganath Puvanen
Student Works (2020-2029)
Feed additive plays a significant role in sustaining fish production. Exopolysaccharide (EPS) obtained from the fermented mycelium of Ganoderma lucidum produced by using submerged-liquid fermentation (SLF) was proposed as a feed additive in this study for red hybrid tilapia (Oreochromis sp.). Body composition, organosomatic indices, and haematological parameters were observed in fish fed with three different diets supplemented with EPS (1 g/kg, 2 g/kg, and 3 g/kg). Although higher concentration EPS feed was observed to produce minor effect on body composition and organosomatic indices, significant effect on both parameters was observed in fish fed with 1 g/kg diet. All diets …

Type I Interferon Underlies Severe Disease Associated With Junín Virus Infection In Mice, Brady T. Hickerson, Eric J. Sefing, Kevin W. Bailey, Arnaud J. Van Wettere, Manuel L. Penichet, Brian B. Gowen
Animal, Dairy, and Veterinary Science Student Research
Junín virus (JUNV) is one of five New World mammarenaviruses (NWMs) that causes fatal hemorrhagic disease in humans and is the etiological agent of Argentine hemorrhagic fever (AHF). The pathogenesis underlying AHF is poorly understood; however, a prolonged, elevated interferon-α (IFN-α) response is associated with a negative disease outcome. A feature of all NWMs that cause viral hemorrhagic fever is the use of human transferrin receptor 1 (hTfR1) for cellular entry. Here, we show that mice expressing hTfR1 develop a lethal disease course marked by an increase in serum IFN-α concentration when challenged with JUNV. Further, we provide evidence that …
Reviewing The Potential Link Between Grain-Free Diets And Dilated Cardiomyopathy In Canines, Larissa J. Webster
Reviewing The Potential Link Between Grain-Free Diets And Dilated Cardiomyopathy In Canines, Larissa J. Webster
University Honors Theses
Grain-free diets for dogs are becoming increasingly popular, but concerns are emerging following the FDA's recent investigation that there might be a link between grain-free diets and Dilated Cardiomyopathy (DCM) in dogs with no known genetic predisposition. Contrary to the majority of the public thought, dogs do nutritionally require grains, and there is rarely a medical reason to switch to a grain-free diet. Not all cases of DCM are linked to diet, and many dogs who are fed grain-free diets do not develop the disease; the extent of this issue therefore is not entirely known. This review aims to explore …

Size Selective Parasitism Of Rainbow Trout (Oncorhynchus Mykiss) By Chestnut Lampreys (Ichthyomyzon Castaneus) In An Artificial Setting, Jeremiah M. Salinger, Ronald L. Johnson
Southeastern Fishes Council Proceedings
Paradigms of optimal resource utilization by animals, both classical and more recent, were not originally developed in the context of parasitism. Though this oversight has slowly been reversed, little attention has been paid to optimal resource utilization by parasitic fishes, such as lampreys. Multiple explanations for host size selection by parasitic lampreys may be plausible, but results from previous studies have been inconsistent. We studied host size selection by Chestnut Lampreys (Ichthyomyzon castaneus) parasitizing Rainbow Trout (Oncorhynchus mykiss) in fish hatchery raceways in north central Arkansas during the late winter and early spring of 2013. Parasitized …
The Gut Microbiome And Its Potential Role In Paradoxical Anaerobism In Pupfishes Of The Mojave Desert, Brian Hedlund
The Gut Microbiome And Its Potential Role In Paradoxical Anaerobism In Pupfishes Of The Mojave Desert, Brian Hedlund
Life Sciences Faculty Research
Background: Pupfishes frequently enter paradoxical anaerobism in response to endogenously produced or exogenously supplied ethanol in a dose-dependent manner. To decipher the role of the gut microbiota in ethanol-associated paradoxical anaerobism, gut microbial communities were depleted using a cocktail of antibiotics and profiled using 16S rRNA gene sequencing. Results: Compared to the control group (n = 12), microbiota-depleted fish (n = 12) spent more time in paradoxical anaerobism. Our analysis indicated that the bacterial phyla Proteobacteria, Fusobacteria, Bacteroidetes, Firmicutes, Actinobacteria, Patescibacteria, and Dependentiae dominated the pupfish gut, which is consistent with other fish gut microbiota. Although the gut microbial communities …

Animal, Dairy, and Veterinary Science Faculty Publications
Lupus is a debilitating multi-organ autoimmune disease clinically typified by periods of flare and remission. Exposing lupus-prone female NZBWF1 mice to crystalline silica (cSiO2), a known human autoimmune trigger, mimics flaring by inducing interferon-related gene (IRG) expression, inflammation, ectopic lymphoid structure (ELS) development, and autoantibody production in the lung that collectively accelerate glomerulonephritis. cSiO2-triggered flaring in this model can be prevented by supplementing mouse diet with the ω-3 polyunsaturated fatty acid (PUFA) docosahexaenoic acid (DHA). A limitation of previous studies was the use of purified diet that, although optimized for rodent health, does not reflect the …

Time Allocation To Resources By Three Species Of Rats (Rattus Spp.) In A Radial Arm Maze, Gary Witmer, Nathan P. Snow, Rachael S. Moulton
United States Department of Agriculture Wildlife Services: Staff Publications
Context. Introduced rats (Rattus spp.) can pose a serious threat to native flora and fauna, especially on islands where most species have evolved in the absence of terrestrial predators. Effective detection and eradication methods for introduced rats are essential to the maintenance of insular ecosystem integrity. Thus, it is important to better understand the behaviour of rats when they first arrive in a new setting.
Aims. To determine whether rats would find some novel stimuli to be significantly more attractive than other novel stimuli.
Methods. An eight-arm radial maze was used to study the behaviour of three species of Rattus …
Evaluating Moose Alces Alces Population Response To Infestation Level Of Winter Ticks Dermacentor Albipictus, Daniel D. Ellingwood, Peter J. Pekins, Henry Jones, Anthony R. Musante
Evaluating Moose Alces Alces Population Response To Infestation Level Of Winter Ticks Dermacentor Albipictus, Daniel D. Ellingwood, Peter J. Pekins, Henry Jones, Anthony R. Musante
United States Department of Agriculture Wildlife Services: Staff Publications
Many wildlife populations are experiencing a variety of environmental pressures due to the direct and indirect consequences of a changing climate. In the northeast, USA, moose Alces alces are declining in large part because of the increasing parasitism by winter tick Dermacentor albipictus, facilitated by high host density and optimal environmental conditions. To test this hypothesis, and better understand the influence of this interaction on the stability of the regional population, we constructed a population viability model using data collected through comprehensive survival and productivity studies in 2002–2005 and 2014–2018 in northern New Hampshire. Years of heavy tick infestation (epizootics) …
Investigation Of Rapid Diagnostic Tests For Characterization Of Mycobacterium Avium Complex (Mac) From Various Isolates And Identification Of Virulence Factors Of Porcine Reproductive And Respiratory Syndrome Virus (Prrsv) In Vitro, Claudia Antonika
UCARE: Research Products
Chapter 1
Mycobacterium avium complex (MAC) has become one of the major problems in public health and livestock. Members of MAC, such as M. avium subsp paratuberculosis (MAP) and M. avium subsp hominissuis (MAH), are responsible for many opportunistic infections and the loss of livestock. MAP is economically significant to the beef and dairy industries because it is the etiologic agent of Johnes’s disease, a chronic and fatal enteritis in ruminants. Tracing the infection sources of MAC could be difficult since it infects many types of hosts in the natural environment. Furthermore, there is less information known about MAP pathogenicity …
Effects Of A Noni-Supplemented Diet On Intestinal Tight Junction Proteins And Stress Biomarkers In Heat-Stressed Broiler Chickens, Guillermo Tellez
Effects Of A Noni-Supplemented Diet On Intestinal Tight Junction Proteins And Stress Biomarkers In Heat-Stressed Broiler Chickens, Guillermo Tellez
Poultry Science Undergraduate Honors Theses
Heat stress hampers gut health by impeding its ability to absorb nutrients which leads to a lower feed efficiency and sicker birds. Therefore, there is a critical need to identify mechanism-based strategies to alleviate these effects. Polynesian poultry farmers have been supplementing broiler feed with Morinda Citrifolia (Noni), a medicinal plant high in anti-oxidants, to address this problem. The purpose of the present study was to evaluate the effect of Morinda Citrifolia (Noni)-supplementation on the expression of tight junction proteins. Male Broilers (Cobb 500, 3 wks, n=480) were subjected to 2 environmental conditions (TN, 24°C vs. HS, 35°C, 1 …

Aldo Leopold, famous ecologist and “father” of North American wildlife management, once said, “These are two things that interest me: the relation of people to each other, and the relation of people to land” (Leopold 1947). Ever prescient, Leopold recognized that natural resource management is fundamentally about humans and their relationship with nature well before conservation became an established way of thinking, much less the bedrock of entire professions. Similarly, amid the Green Revolution to increase agricultural production, in part, through widespread use of pesticides, renowned environmentalist and journalist Rachel Carson noted that we are all “a part of nature, …
The Effects Of Storage Temperature On The Bovine Nasal Microbiome, Hunter Usdrowski
The Effects Of Storage Temperature On The Bovine Nasal Microbiome, Hunter Usdrowski
Animal Science Undergraduate Honors Theses
Bovine respiratory disease (BRD) is one of the largest economic burdens facing United States beef producer’s modern day. The complexity in the onset and development of this multifactorial disease necessitates further insights into its functions to alleviate the tremendous consequences it generates for producers. The respiratory microbiome and their metabolomics play an important role to maintain health and predict BRD. However, due to low biomass, new technology is needed to increase the microbial concentration for omics (e.g. metatranscriptomics) research. In this study, a novel self-enrichment storage technique on the bovine nasal microbiome was performed and compared to a traditional nasal …
