Bees are important plant pollinators in both natural and agricultural ecosystems. Managed and wild bees have experienced high average annual colony losses, population declines, and local extinctions in many geographic regions. Multiple factors, including virus infections, impact bee health and longevity. The majority of bee-infecting viruses are positive-sense single-stranded RNA viruses. Bee-infecting viruses often cause asymptomatic infections but may also cause paralysis, deformity or death. The severity of infection is governed by bee host immune responses and influenced by additional biotic and abiotic factors. Herein, we highlight studies that have contributed to the current understanding of antiviral defense in bees, …
Agricultural Market Liberalization And Household Food Security In Rural China, Lia Nogueira, Kathy Baylis, Linlin Fan
Agricultural Market Liberalization And Household Food Security In Rural China, Lia Nogueira, Kathy Baylis, Linlin Fan
Cornhusker Economics
Recent World Trade Organization (WTO) disputes have brought China’s agricultural trade policy back into the spotlight. In November 2008, China issued the nation’s first Outline of Medium and Long-term Plan for National Food Security (China Central People’s Government, 2008), in which they stipulate that the country will seek to stabilize the area sown to grain and achieve more than 95% grain self-sufficiency. Trade restrictions are argued to support implementing this plan because increased imports of grains and soybeans will lower prices, causing grain and soybean farmers to leave farming, thereby generating food insecurity (Wong and Huang, 2012). Others suggest that …

Agricultural Economics Faculty Publications
Despite the growing interest of producers and consumers toward grass-fed, local, and organic beef, the supply chain for these products to reach consumers is not always clear-cut. Among the available options are direct-to-consumers and the conventional food supply chain. Although consumers may pay a premium for beef differentiated by quality attributes, the willingness to pay (WTP) difference across point-of-sales is unclear. In this study, we contrast the WTPs for conventional, grass-fed, local, and organic beef by brick-and-mortar supermarkets (B&Ms), farmers’ markets, and via online stores. We conduct a choice experiment with a nationwide online sample of American consumers. The findings …

The Old Versus The New Equestrian Circus: Demonstrating And Promoting Equine Welfare, Veronica Painter
Theses and Dissertations
Circus is an art form that was originally considered as a humanitarian art, promoting equine welfare by shedding a new light on the horse and human relationship. During a time where horses were used for war, work, and transportation; fancy riding and liberty stood as the framework for a new togetherness between man and beast. The animal activist revolution centered on exotic animals in circus, yet the effects of these demanding pressures caused a major blow to the equestrian circus. This comparative study examines possible improvements to the industry in order to keep this art alive. Keeping up with eclectic …

Comparison Of Traditional And Alternative Ingredients On Meat Curing Reactions Using A Model System, Faith Rasmussen
Department of Animal Science: Dissertations, Theses, and Student Research
Consumer’s negative perception of “chemical-sounding” ingredients has increased the use of alternative ingredients. The objective of this study was to determine the effect traditional (sodium nitrite with or without sodium erythorbate) or alternative (celery juice powder with or without acerola cherry powder) curing systems with different ingoing concentrations of sodium nitrite using model meat solutions. Curing systems with reducing agents developed the most cured meat pigment (p < 0.001). Using more than 50 ppm of nitrite did not further increase cured meat pigment (p < 0.001). Curing systems with reducing agents and 50 ppm or greater nitrite had the least residual nitrite (p < 0.001). Alternative curing systems had the most residual sulfhydryl groups when formulated with 100 ppm or more nitrite (p < 0.001). Treatments with reducing agents had greater residual reducing capacity than treatments without reducing agents (p < 0.001). Both alternative and traditional curing systems develop similar cured meat pigment but differences in the nitrosation of cysteine exist.
