BACKGROUND: Grocery food taxes represent a stable tax revenue stream for state and municipal government during times of adverse economic shocks such as that observed under the coronavirus disease 2019 (COVID-19) pandemic. Previous research, however, suggests a possible mechanism through which grocery taxes may adversely affect health. Our objectives are to document the spatial and temporal variation in grocery taxes and to empirically examine the statistical relationship between county-level grocery taxes and obesity and diabetes.
METHODS: We collect and assemble a novel national dataset of annual county and state-level grocery taxes from 2009 through 2016. We link this data to …

Abrasive weeding is a nonchemical weed control tactic that uses small, gritty materials propelled with compressed air to destroy weed seedlings. Organic fertilizers have been used successfully as abrasive grits to control weeds, but the goal for this study was to explore the effects of fertilizer grit, application rates, and background soil fertility on weeds, plant available nitrogen (N) uptake, and crop yield. Crop residue grazing or baling is common in the western Corn Belt. However, its impacts on subsequent crop yields under different irrigation levels and tillage systems are unclear. We investigated the impacts of corn (Zea mays L.) residue baling and cattle grazing on soil compaction, water content, and corn yield under full and limited irrigated no-till in Nebraska during three years. In Years 2 and 3, an additional tillage treatment (strip till) was implemented to evaluate its effects on grain yield under the above treatments. Residue removal effects on compaction and water content did not vary with irrigation level. …

Data-centric technology has not undergone widespread adoption in production agriculture but could address global needs for food security and farm profitability. Participants in the U.S. Department of Agriculture (USDA) National Institute for Food and Agriculture (NIFA) funded conference, “Identifying Obstacles to Applying Big Data in Agriculture,” held in Houston, TX, in August 2018, defined detailed scenarios in which on-farm decisions could benefit from the application of Big Data. Accurate measurement of seed size parameters is essential for both breeding efforts aimed at enhancing yields and basic research focused on discovering genetic components that regulate seed size. To address this need, we have developed an open source graphical user interface (GUI) software, SeedExtractor that determines seed size and shape (including area, perimeter, length, width, circularity, and centroid), and seed color with capability to process a large number of images in a time-efficient manner. In this study, the gelatinization of heat-moisture treated (HMT) corn starch was investigated by rheometer (RHE) and differential scanning calorimeter (DSC) under the same condition of excessive water (starch∶water=1∶10) with heating-rate dependent gelatinization and time-temperature gradient gelatinization tests. DSC and RHE results showed that multiple endothermic transitions (G and M1) and two viscosity peaks (PV1 and PV2) were observed in viscosity curves and DSC traces even in excess water for HMT starches. Gas chromatography-mass spectrometry (GC-MS) was used to determine the chemical composition of Ravansaravolatile oil. The in vitro bacteriostasis experiment was carried out by the paper diffusion method and the microdilution broth method. And its inhibitory effect on pancreatic lipase and α-glucosidase activity was determined. The results characterized 17 chemical components, accounting for 98.5% of the total volatile oils. The main components were 1,8-cineole (30.89%), camphor (21.67%), (-)-allo-aromadendrene (12.38%), p-cymene (10.14%), β-pinene (6.01%). The minimum inhibitory concentrationrange of volatile oils for 18 tested bacteria was 1.25~40.00 mg/mL. The nano-emulsions and microcapsules were used to improve the hydrophilicity of cinnamaldehyde, which were then added to whey protein concentrate solution. Protein gel was produced by heat-induced method. The rheological property, water holding capacity, texture and microstructure of protein gels were characterized to investigate the influence of encapsulated cinnamaldehyde on the property of protein gels. The results showed that the water holding capacity of protein gel significantly increased with the addition of cinnamaldehyde. When cinnamaldehyde was encapsulated by emulsions, the properties of heat-induced protein gels including viscoelasticity, water holding capacity, texture characteristics and network structure were positively correlated with the …

In order to investigate the quality characteristics of banana dried by ultrasound combined with far-infrared radiation drying, the banana slices were dried using ultrasound combined far-infrared radiation drying, and the drying was operated using the radiation temperature of 150, 210, 270 ℃ under the ultrasound power of 0, 30, 60 W. The effect of drying conditions on structure, rehydration ratio, shrinkage, color difference, total phenol content, VC content and antioxidant activity of banana slices were compared. This study reviews the preparation process, properties (mechanical properties, thermal properties, barrier properties, etc.), modification methods, and applications of fish scale collagen films. The performance of the film can be significantly improved through molecular blending, but it is critical that the factors have not been studied in depth. Future research must solve the problems of film modification mechanism, aging mechanism, edibility, biodegradability, barrier property, safety, etc. from the perspective of industrial scale and commercialization, so as to make fish scales collagen films industrially feasible.

The free fatty acids and the flavor characteristics of the time-honored sauced duck, Huangshanghuang sauced ducks and Xiangtang sauced duck in Jiangxi province were investigated by gas chromatography-mass spectrometry (GC-MS) and amino acid analysis. The results showed that twenty-three kinds of free fatty acids were detected in the three kinds of sauced duck, which cis-9-oleic acid, palmitic acid and linoleic acid were the main free fatty acids in Jiangxi sauced duck. The glutamic acid content of Xiangtang sauced duck was higher than that of the other two sauced duck significantly, which was 9.27 g /100 g. Ninety-two volatile flavor compounds …

The basic physical and chemical indexes, cooking characteristics, gelatinization characteristics and texture characteristics of different combinations of japonica rice and indica rice were studied. The results showed that the content of amylose had an important influence on food quality. In terms of cooking characteristics, the lower the amylose content and the smaller the water absorption and expansion volume was, the higher the rice soup pH , the rice soup iodine color value and the rice soup dry matter content would be, and the better the cooking and brewing properties was. Community agriculture initiatives are often run by organizations (1) relying on volunteer structures; (2) growing produce sustainably; and (3) aiming to improve health and access to food in their communities. To clarify “growing produce sustainably,” the Utah Conservation Corps Urban Community Farm (UCC UCF) (a volunteer and AmeriCorps-driven community agriculture model based in Logan, Utah) engages in regenerative agriculture practices, which are reviewed in this fact sheet. Community agriculture benefits and challenges are explored.

Roadside vegetation provides a multitude of ecosystem services, including pollutant remediation, runoff reduction, wildlife habitat, and aesthetic scenery. Establishment of permanent vegetation along paved roads after construction can be challenging, particularly within 1 m of the pavement. Adverse soil conditions could be one of the leading factors limiting roadside vegetation growth. The tradition of goal setting at the start of a year—New Year’s resolutions—is deeply engrained in American society: estimates suggest that between 40 and 50% of adults set New Year’s Resolutions. Many of the most common goals relate to weight management—initiating exercise programs, dieting, or both—which is perhaps unsurprising since over 70% of American adults are overweight or obese.

The potassium solubilizing biofertilizer based on selected potassium solubilizing bacteria (KSB) can facilitate availability of potassium in primary silicate minerals containing potassium to be absorbed by the plants. The key to successful application of biofertilizer in showing positive effects on inoculated plants is the selection of a carrier material that can guarantee viability of inoculants during shelf life before being applied in the field. Through a liberationist lens, religion and social justice are more similar than different. Food illuminates opportunities for building collective agency and community resilience in which religion and social justice might serve one another (White 2018). Specifically, faith communities can contribute to local food systems by using church-owned lands to provide access to farmland for beginning and BIPOC farmers, improve access to fresh, healthy produce, and enhance food security (FaithLands 2021). Faith communities are shifting mindsets from charity to justice and scarcity to abundance while addressing rural child hunger (Lietz-Bilecky 2020). The group bacilli represent the Gram-positive ubiquitous spore-forming bacteria. Their diversity, versatility and the ability of producing diverse secondary metabolites including enzymes created enormous potential for applications in agriculture, biotechnology, environment and medicine. The bacilli are considered as one of the most studied groups of bacteria providing plant growth-promotion and biocontrol of multiple diseases reflecting their vital role in enhancing plants’ tolerance to biotic and abiotic stresses. Some of the Bacillus species are available commercially as phytostimulants, biopesticides, and biofertilizers. The dynamics of the dominant industrial agriculture system restrict the seed industry’s innovative landscape, leading to significant negative consequences including an exacerbation of environmental risks which threaten global food security. This thesis explores how exclusionary intellectual property rights (IPRs) in the context of the seed industry constrict innovation, evolutionary pathways, and opportunities for the implementation of sustainable agriculture methods. Mahurin Honors College Capstone Experience/Thesis Projects
In an effort to increase the amount of locally sourced food utilized by dining services at WKU, the Office of Sustainability, WKU Restaurant Group, and the WKU Agriculture & Research Education Center have partnered to establish garden spaces on campus properties. This project developed a detailed plan for implementation of this effort. In addition, this project established a plan to educate students and the local community alike on the benefits of sustainable farming and locally-sourced food, while also creating profiles on local farmers from whom the university could buy crops in order to further supplement items for dining services.
