Involvement in collegiate sports among female athletes is at an all-time high with approximately 198,000 currently participating, (National Collegiate Athletic Association, 2012). With this increase in female participation in collegiate sports, the pressures of sport participation and academics lead some women to engage in harmful eating behaviors. These harmful eating behaviors may lead to the development of disordered eating (C. Johnson, Powers, & Dick, 1999; Quatromoni, 2008; Reel, SooHoo, Petrie, Greenleaf, & Carter, 2010; Reinking & Alexander, 2005). Eating pathology (e.g., body dissatisfaction, binge eating, purging, restrictive eating) and substance use (e.g., dietary supplements, legal and illegal drugs) proliferate university settings in the United States. Within university settings, athletes appear to be at particularly high risk for eating pathology and supplement use due to the external pressures to be attractive, the need to perform at optimal levels, and the specific characteristics of sports in which they participate. Furthermore, the degree to which athletes understand what constitutes healthy eating and exercise habits is understudied and may relate to eating pathology and supplement use. Some of the “green” eating behaviors identified through my research included eating a plant-based (i.e. vegetarian or semi-vegetarian) diet, eating locally grown foods, eating organically grown foods, and eating foods that are labeled fair-trade. School Gardens: Reconnecting Children With Nature And Food, Alyssa M. Boyle

This thesis discusses the importance of school gardens. First, two current environmental and societal problems are highlighted: the industrialized food system and what Richard Louv has termed, "Nature Deficit Disorder," in children. School gardens are then presented as an effective tool that can address and remedy such issues. Lastly, a how-to manual for implementing such projects in schools is provided as well as a few sample lesson plans to be used in conjunction with the garden in each subject across the curriculum.

Rats Acquire Stronger Preference For Flavors Consumed Towards The End Of A High-Fat Meal, Kevin P. Myers

Rats learn to prefer flavors associated with postingestive effects of nutrients. The physiological signals underlying this postingestive reward are unknown. We have previously shown that rats readily learn to prefer a flavor that was consumed early in a multi-flavored meal when glucose is infused intragastrically (IG), suggesting rapid postingestive reward onset. The present experiments investigate the timing of postingestive fat reward, by providing distinctive flavors in the first and second halves of meals accompanied by IG fat infusion. Learning stronger preference for the earlier or later flavor would indicate when the rewarding postingestive effects are sensed. Rats consumed sweetened, calorically-dilute …
