High temperatures caused by climate change significantly impact society, including child nutrition. Our research focuses on the impact of high temperatures on the anthropometric outcomes of children aged 1 to 5 in 54 countries worldwide. We analyze the historical climate and anthropometric data to evaluate the effect of high temperature on weight-for-age (WAZ) and weight-for-height (WHZ) in children. Results indicate that high temperatures negatively affect child nutrition, particularly in areas above 20°C, and children in rural areas are more vulnerable. The impact of monthly temperature on child anthropometric outcomes varies across countries, regions, and cultural practices. Economic status alone is …

The development of robust and efficient fish classification systems has become essential to preventing the rapid depletion of aquatic resources and building conservation strategies. A deep learning approach is proposed here for the automated classification of fish species from underwater images. The proposed methodology leverages state-of-the-art deep neural networks by applying the compact convolutional transformer (CCT) architecture, which is famous for faster training and lower computational cost. In CCT, data augmentation techniques are employed to enhance the variability of the training data, reducing overfitting and improving generalization. In Alaska, subsistence is a way of life for some communities. The Federal Subsistence Board (FSB) oversees the Federal Subsistence Management Program. One of its responsibilities is to determine areas as subsistence or non-subsistence areas. This decision, in part, is based on whether subsistence is a “principal characteristic of the economy, culture, and way of life”. (James A. Fall, Division of Subsistence, 2018). The federal policy grants these communities priority in the taking of wild resources (Title VIII of the Alaska National Interests Lands Conservation Act). The objective of this research was to explore the influence of intuitive eating (IE) on body mass index (BMI) and diet quality (DQ) among college students.

Methods

A cross-sectional convenience sample of college students completed an online survey consisting of the short-Healthy Eating Index (SHEI) and the Intuitive Eating Scale-2 (23 items). Body mass index was calculated using self-reported height and weight. Descriptive statistics were used to assess group characteristics. A linear regression was used to test if IE scores significantly predicted BMI. An independent t-test was used to compare BMIs of students with IE scores above and below …

According to the Food and Agriculture Organization of the United Nations, 14.5 percent of all global anthropogenic GHG emissions are estimated to be represented by livestock (FAO), and cattle, raised for beef and milk, are the largest animal species responsible for emissions, comprising over 60 percent of the livestock sector’s emissions. Extrinsic cues like plate color have been shown to effect taste perception. Previous studies conducted show a consensus that plate colors can modulate taste perception (Piqueras-Fizman et al., 2012, Stewart & Gross, 2013). No studies, however, have investigated varying color hues and their effect on taste perception. This study aims to determine whether the change in the black to white ratio of plate color can affect consumer perception of sweetness or bitterness.

The architectural design of spaces offering food assistance has received little to no attention since food pantries emerged in the 1970s. Non-profit food initiatives are often sited quickly with limited resources, producing inadequate spaces unable to fully support a food insecure community, prioritize the experience of users, and create a sense of belonging. The current spaces limit services to merely food distribution. They do not take advantage of the opportunity to expand socioeconomic capital through the power of shared food experiences: growing, cooking, eating, and learning.

In this project I work to recover influential yet often erased Asian American female immigrant chefs and food authors from the mid-twentieth century to the present, situating their contributions in a deep-rooted tradition of diasporic women who used cooking as a means of communal agency and care.
