Food insecurity among postsecondary students and especially community colleges is a persistent social problem, but the prevalence continues despite much research. Postsecondary students experience food insecurity slightly differently from the general population and they are held to different rules to qualify for food support such as the supplemental nutrition assistance program (SNAP). In this research I examine the prevalence, frequency, and duration of food insecurity experiences among Mississippi community college students. Food for Harlem is a resource guide for Harlem residents to find local food-focused organizations. It’s a list for you to find where you can get healthy affordable food in your neighborhood. This project was created after the feedback I heard in discussion during my time at a food market in Harlem. The final product includes a complete list of over 70 food-focused organizations in Harlem, an interactive map, some important information about the included resources, and a list of definitions.

Background: Food insecurity amongst South Asian Americans is a major public health issue. The South Asian American (SAA) community is the third largest Asian community in the United States. Despite this fact, very few specific studies have been conducted to investigate the food needs and barriers that exist within the SAA community so as to successfully help them improve dietary habits.

Methods: This study utilized a mixed methods convergent parallel design, where both qualitative and quantitative methods were conducted and analyzed separately and compared and contrasted at the end.

This project uses a literature review and interviews with Twin Cities anti-hunger organizations to answer the following questions: How are anti-hunger interventions and the root causes of food insecurity mismatched? The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Gearhart Full Circle Campus Food Pantry, in hopes to provide a guide to the Center for Community Engagement in their endeavors to reduce food insecurity on campus (Lisnic, 2016). Food insecurity is rampant in the United States in both rural and urban settings. The limited access to affordable nutritious food and education about healthy eating, increase risks for diet related illness and impact community health. Through participant observation and analysis of various community-based initiatives, this thesis explores interconnections between community solutions and public policy. Six cases studies in New Mexico and New York are examined to better understand how communities and government programs must collaborate to create effective change.
