Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Context—Improving diet can reduce the risk of chronic health conditions such as cancer and heart disease. However, people continue to make poor dietary health decisions. A novel intervention based on the science of behavior change and incorporating Human-Centered Design (HCD) methodology is needed to boost informed dietary decision-making.

Objective—This research presents a Behavior Change Wheel (BCW), Human-Centered Design (HCD) approach to develop a novel high-usability video intervention that will increase informed decision-making for whole-grain dietary decisions. Nondeprived rats receiving every 3rd day access (E3DA) to 4% sucrose solution consume more sucrose on access days compared to rats with everyday access (EDA). Rats receiving EDA or E3DA to 16% sucrose do not consume different amounts, but if placed on every 2nd day access (E2DA) to 4% sucrose E3DA-group rats consume more than EDA rats (Eikelboom, Hewitt, & Adams, 2022). E3DA affects rats’ value of sucrose but effects appear hidden with high sucrose concentrations. Valyear and Eikelboom (2021) suggested that calorie ceilings limit E3DA-induced consumption with high sucrose, but this ceiling could also be caused by …

In recent years, psychiatrists have reported a trend that individuals with social anxiety disorders are more likely to also have disordered eating and vice versa. Research into this connection has suggested that risk factors, such as stress reactivity, negative self- esteem, perfectionism and fear of negative evaluation are potential links. All five senses contribute to the experience of eating, giving feedback on whether to continue or stop the process of consumption. Sensory feedback loops help the consumer modulate food ingestion by determining nutritional value and possible hazards. Texture is one sense integral to the eating process that may lead to a food being accepted or rejected. The purpose of the study was to evaluate the effectiveness of using a video model, graduated exposure (i.e., touch, smell, try, eat), and positive reinforcement to first increase food exploration, and then increase consumption of non-preferred foods in young children that exhibit food selectivity in a school setting. A multiple probe design across behaviors replicated across participants was used to evaluate the effectiveness of a treatment package. The treatment package consisted of a video model of each target behavior (touch, smell, try, eat) and positive reinforcement which included preferred foods and materials. The amount of food wasted is a topic of societal and academic interest. As academic research in this area is nascent, there are significant knowledge gaps, which this dissertation seeks to narrow, pertaining to: (1) the measurement of food waste; (2) the human behaviors that lead to wasting of food; and (3) the development of efficacious food waste reduction interventions.

A systematic literature review of 55 food waste estimates showed that on average 114.3 kg/capita/year is wasted from consumption (i.e., household) and 198.9 kg/capita/year across the entire food supply chain. There is considerable uncertainty with this data because of the …

Objective: This paper investigates the role of peer support in food security among deaf college students. Participants: The sample included 166 college students who took the survey between May and October 2017. Methods: Participants completed a bilingual online survey in ASL and English. This survey included questions about peer support, the USDA’s 6-item food security module, and sociodemographic characteristics. Results: Out of 166 students (mean age=23; SD=6), 60.7% were food secure. About 26.4% (n= 43) were at-risk for food insecurity and another 12.9% (n=21) had very low food security. This research introduces the serving temperature bias, which is defined as the belief that a food or beverage served hot has more calories and is considered more fattening than the same item served cold. Six studies, including an observational field study and follow-up controlled experiments, demonstrate that people indeed hold the serving temperature bias. This belief is grounded in the conceptual associations between warm foods and beverages and consumers’ affiliative semantic associations regarding home and hearth - concepts captured by the phrase “homelike.” Specifically, hot foods and beverages are perceived to be labor of love and reminder of home (homelike) …

This study explores socio-cultural influences that impact South Asian women’s self-perceptions and eating behaviours. The findings revealed that cultural gender ideologies played a substantial role in shaping the way women view themselves and their bodies. The analysis of interviews conducted with seven South Asian-Canadian women between the ages of 19-29 years, demonstrate that women’s perceptions of their own physical appearance is framed within the context of their South Asian cultural identity and cultural norms. Food insecurity arises when one does not have physical, social, or economic access to safe, sufficient, and nutritious food. According to the United States Department of Agriculture (2016), food insecurity affects 15.6 million U.S. households. Its effects go beyond the physical consequences that might arise from not having adequate nutrition, influencing subjective well-being and behavior in both adults and children. In addition to increased intake of sweet solutions by mammals, learning, particularly classically-conditioned “Pavlovian-like” learning, also plays an important role. An orosensory conditioned flavor preference (CFP) can be elicited by pairing one novel flavor (conditioned stimulus, CS+) with a fructose solution and a second novel flavor (CS-) with a saccharin solution. Rats will prefer the CS+ flavor in a subsequent 2-bottle choice test with both flavors mixed in saccharin. Previous pharmacological analyses revealed that systemic administration of dopamine (DA) D1 and D2 as well as NMDA, but not opioid, receptor antagonists eliminated the acquisition (learning) of fructose-CFP.
