This work studied Black food geographies in Newark, NJ, which represent alternative food provisioning practices and strategies working within but also parallel to traditional food geographies and exist within and despite of foodscapes of domination. Black food geographies not only include the spatial agency of Black residents but also entail the structural intersectionality and organized abandonment that Black residents currently experience as well as their historical production. An agricultural revolution has begun to take place in light of the growing awareness of environmental issues that impact crop production on farms. In the beginning of the fall of 2022, I began to study the culture of regenerative agriculture in rural Pennsylvania using anthropological methods, including participant-observation and semi-structured interviews, working alongside local farmers. Rural communities have historically faced higher levels of food insecurity and lower healthcare access than their urban counterparts. The COVID-19 pandemic has further exacerbated the challenges of accessing adequate and equitable food and healthcare resources, especially in rural pockets of poverty. Maine and Vermont are the most rural states in the US with over 61% of both populations living in rural areas. Rates of food insecurity in Canada’s northern Indigenous communities are at levels that should constitute an emergency. Dominant explanations for these high rates of food insecurity often ignore the ongoing impacts of colonization and over-emphasize individual choices and nutritional guidelines developed by outsiders. The importance of holistic community health is ignored, along with the cultural and social values and practices that support community health and well-being, including traditional food systems. Crop switching, which occurs when a novel crop type is introduced to an agricultural plot, is an adaptation strategy that is used in response to a variety of social, economic, and environmental factors. While past studies have investigated the motivations behind crop switching and examined its role in mitigating future agricultural losses due to climate change, understanding of where crop switching has occurred in the United States is more limited. My dissertation, “Reclaiming the future through Small-Scale Agriculture: Autonomy and Sustainability in the Caribbean,” is a political-economic analysis of land politics, foodscapes and foodsheds, and small-scale agricultural activities in plantation economies on the Caribbean island of St Kitts. Marketing ‘sustainable and humane’ super-premium dog kibble has emerged alongside alternative food movements (AFM). Unfortunately, super-premium pet-food comprised of ‘high-quality’ protein is at odds with sustainability and affect for particular animals. This study analyzed social and geographical (mis)representations of nonhumans in the pet-food commodity chain by tracing how knowledge and value is produced, and mapping the geography of Open Farm dog food. I assess these geographies and discourses and I identify the following: (1) sustainability claims focus on transportation and packaging, ignoring the significant environmental and social impacts of animal agriculture. Produce prescription programs, interventions operating at the intersection of food access and public health, are steadily increasing in number across the United States since 2010. I leverage key informant interviews, participant observations, and event ethnographies to form a four-year institutional ethnography of the implementation of produce prescriptions within West Virginia alongside a legal-policy archaeology methodology to understand how produce prescriptions have been institutionalized and funded within the US Farm Bill. The world is on the cusp of a nutritional crisis: malnutrition, in all its forms, now directly affects one in three persons on the planet. Chronic malnutrition is closely associated with a wide range of public health issues such as stunted growth, increased incidence of disease, school or work absences, and obesity. Northern Canada has struggled with various systemic challenges based on Eurocentric ideologies, policies, and practices. A major challenge Indigenous communities face North of the 60th parallel is their food security and sovereignty. Inuit, First Nation and Métis populations across the North experience 5 to 6 times higher levels of food insecurity compared to the National average (Food Secure Canada, 2020). Over the past four years the Food Justice Lab, now housed within the Center for Resilient Communities at West Virginia University, hosted a series of food access planning workshops across the state of West Virginia. Mobilizing more than 200 participants, the Nourishing Networks workshop training program was designed to build grassroots capacity for food system change. Eighty-percent of workshop participants were women and dialogues recorded at these events revealed how women are disproportionately impacted by food insecurity and disproportionately labor to repair a broken food system. Food environments are influential in shaping dietary behaviours of adolescents. Exposure to food and beverage marketing is known to impact food knowledge, behaviours, and health outcomes, yet food environment research largely overlooks advertisements. Given that marketers tend to advertise less healthy foods to teens and teens predominantly purchase low-nutrient foods, it is crucial to study the information environment in the context of secondary school environments. This dissertation examines the archaeofaunal remains from Skútustaðir, a middle to high-status farm in Mývatnssveit, Northern Iceland, to understand the experience of rural communities and their ecologies during Iceland’s transition from regulated colonial exchange to a capitalist economy during the 17th through 19th centuries. Archaeofaunal analysis is used to reconstruct changes in the ways that people herded, hunted, and fished, providing insights into how they managed their local environments for subsistence and novel contexts of exchange. The mapping of food deserts has become a standardized component of food and health policy work concerned with expanding food access. These maps often follow a similar format of spatially identifying where grocery stores are absent in communities, thus suggesting a straightforward problem diagnosis and intervention blueprint. The amount of food wasted is a topic of societal and academic interest. As academic research in this area is nascent, there are significant knowledge gaps, which this dissertation seeks to narrow, pertaining to: (1) the measurement of food waste; (2) the human behaviors that lead to wasting of food; and (3) the development of efficacious food waste reduction interventions.

A systematic literature review of 55 food waste estimates showed that on average 114.3 kg/capita/year is wasted from consumption (i.e., household) and 198.9 kg/capita/year across the entire food supply chain. There is considerable uncertainty with this data because of the …

This paper will examine the planned development on the Mekong by looking at the historical, political, and economic reasons why largescale hydroelectric dams are now being pushed upon the river. It will then critique the international state sovereignty system focusing directly on the Mekong River Commission and ASEAN (Association of Southeast Asian Nations) for their inabilities to mitigate environmental impact while pursuing development. In this dissertation, I explore ‘green’ urban development and urban agriculture projects from the perspective of residents of an African American majority neighborhood in Kansas City—who reside in an area referred to as a ‘blighted food desert’ by local policy makers. In Kansas City, extensive city government support exists for urban agricultural projects, which are touted not just as a solution to poverty associated issues such food insecurity and obesity, but also as a remedy for ‘blight,’ violence and crime, and vacant urban land. Urban sprawl reflects an inefficient use of land that diminishes both rural landscapes and quality of life turning farms, ranches and open space into siloed suburban communities. This results in less walkable cities with more traffic and air pollution, among other negative consequences. A diet high in fruit and vegetables is associated with the prevention of many chronic diseases; however, only one in ten Canadian students in grades 6 to 12 consume the recommended daily intake of fruits and vegetables. The Millennium Development Goals measure ‘access to improved drinking water’ using an indicator that defines access as the presence of an improved water source within 1 kilometer of a person’s dwelling. This purely linear measurement has significant shortcomings, including a lack of consideration for the difficulty of the terrain being traversed and the weight of the loads being carried.
