This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. Food Insecurity (FI) is defined as a condition in which individuals lack access to adequate food due to limited financial resources. FI is estimated to impact 12% of households in United States. Adults and children who experience FI are an increased risk for developing metabolic disease such as type 2 diabetes, obesity, hypertension, and cardiovascular disease. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers’ Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. Users are able to spend these dollars on fruits, vegetables, eggs, meats, dairy, jam/jelly, honey and food producing plants. DYD’s goal is to incentivize healthy eating among individuals of low income, promote local purchases, and increase spending at farmers markets. School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens.
