This quasi-experimental study examined the impact of a fruit and vegetable (FV) tasting program on third and fifth grade children’s preferences and psychosocial factors associated with FV intake. Four public schools in southeastern Louisiana participated. Two schools served as the intervention group where children were given a taste of four fruits or four vegetables on a rotating schedule for eight weeks followed by two weeks of tasting four months post- intervention (follow-up). Two control schools did not participate in tasting but received brightly colored FV posters which were posted in the cafeteria each week. Previous research has shown that prompting can increase child compliance to adult directives (Tarbox, Wallace, Penrod, & Tarbox, 2007; Wilder & Atwell, 2006; Wilder, Atwell, & Wine, 2006). The purpose of this study was to train teachers to use prompting to increase child compliance to teacher directives. This study builds on the current literature by using least-to-most prompting (Horner & Keilitz, 1975) within the naturally occurring context of the preschool classroom. Research indicates that narcissism may increase antisocial tendencies in children as young as preschool. In this quasi-experimental study, manners lessons on selfless, prosocial behavior were used as an intervention to decrease narcissism and antisocial behavior within second and third grade classrooms. Manners lessons provided children with opportunities to demonstrate prosocial attitudes toward others and thus were expected to decrease narcissism, increase empathy, decrease conduct problems and peer problems, and increase prosocial behavior. Recent research has revealed that high religiosity is associated with positive life outcomes in adolescents and emerging adults. However, the mechanisms and processes that underscore faith development, which is crucial to experiencing these outcomes, are not well understood. Furthermore, most research on faith development in adolescents and emerging adults is based on quantitative data and fails to examine the influence of developmental contexts on faith development. The objective of these studies was to determine the association between dietary intakes of selected food groups, macronutrients, and micronutrients in mother-child dyads. This was a secondary analysis of data on low-income Black, Hispanic, and White children 3-5 years-old (y) participating in Head Start (HS) (n=650), and their mothers. Mothers served as a proxy for their child, and self-reported intake during a multiple-pass 24-hour recall interview for one weekend day. The purpose of these studies was to explore the roles of dietary strategies and bariatric surgery in obesity treatment. The breakfast study was a randomized, crossover trial used to evaluate the role of egg proteins, and a retrospective chart review was conducted to obtain comparative information about two different bariatric surgeries. The breakfast study included 20 subjects who were randomized to receive an egg breakfast (EB) or a cereal breakfast (CB) matched for energy density and macronutrient composition but different protein quality for one week. In previous studies, in has been observed that the addition of resistant starch (RS) in the diet of rodents, a non-digestible fermentable fiber, promotes increases in markers of fermentation and improvements in body weight and body fat analysis when incorporated into low to moderate fat diets. A significant body of literature has focused on the effects of religion on health and marriage on health, as well as on religion and marriage. However, there is limited research on the effects of religion and marriage on self-reported health. Using the first and only wave of the Panel Study of American Religion and Ethnicity, ordinary least square regression models are compared to investigate the causal effects of religion and marriage on self-reported health. The purpose of this study was to determine the mean duration of child attention to a self-selected toy and to determine the longest duration under which teaching condition children attend to toy play (child choice, adult choice, or adult presentation). Forty preschool-aged children were observed under each teaching condition and data were collected on the child’s duration of child attention. Results indicate that children’s sustained attention is significantly different across the three teaching conditions, and it was found that children attended for the longest duration of time during the child choice condition. The purpose of this project was to explore the use of an eco-mapping protocol for measuring children’s social support networks. The project investigated two research questions: (1) what are the similarities and differences in the information provided by three informants in the eco-mapping protocol?, and (2) what information do eco-maps provide about children’s social support networks? In our previous studies, ingestion of prebiotics in low fat diets resulted in decreased cecal pH from 8 to about 6 and increases in short chain fatty acids indicating robust fermentation. However, in some preliminary studies this effect on fermentation was not seen when rodents were obese and/or fed a high-fat diet. This comprehensive high-fat diet study was conducted to determine which sources and combinations of prebiotics would enhance fermentation despite a high dietary fat content. The purpose of this study was to investigate the use of humor as a coping strategy among Hurricane Katrina survivors. The data for this study were collected in the first wave of a larger project on families and disasters. Using Geographic Information Systems (GIS) by combining Census data with storm damage estimates and purposive sampling, 50 participants affected by Hurricane Katrina from a single suburban community in Southern Louisiana in early spring 2006 were recruited and interviewed. A large body of literature on the relationship between prejudice and discrimination and the size of minority populations suggests that as a minority population increases so will incidents of prejudice and/or discrimination. This school of thought is led by Hubert Blalock who contends that large minority populations generate prejudice among the majority, who view the minority as a threat to their economic and/or political standing. Minority population size has been tested and widely confirmed as a cause of anti-black prejudice and discrimination. Women, compared to men, are at higher risk for age-related macular degeneration (AMD), the leading cause of blindness in the elderly. The accumulation of dietary carotenoids, lutein (L) and zeaxanthin (Z) within the macula make up macular pigment and provide important protection to the retina. Macular pigment optical density (MPOD) gives a measure of macula pigment density. MPOD has been shown to be influenced by fruit and vegetable L and Z and docosahexanoic acid (DHA, 22:6n-3), cold water marine fish being the dietary source. A high MPOD may protect against AMD. Chronic inflammation is involved in the adipose tissue dysfunction through regulation of endocrine and storage function of adipocytes. As a representative proinflammatory cytokine, TNF-α was reported to inhibit expression of adiponectin. However, the mechanism of inhibition remains to be identified. Here, we provide experimental evidence that TNF-α inhibits adiponectin at both transcriptional and posttranscriptional levels. In three animal models (aP2-P65, ob/ob and high fat diets-fed mice), an increase in TNF-α expression was associated with a decrease in adiponectin expression. In 3T3-L1 adipocytes, TNF-α inhibition of adiponectin was observed at mRNA and protein levels. Luciferase reporter assay and mRNA stability tests …

Inflammation has been widely reported to regulate adipocyte functions in adipose tissue. Our early study suggests that NFkB signaling pathway is activated by inflammation and involved in inhibition of insulin sensitivity in adipocytes. NFkB was found to inhibit PPARg function through several possible mechanisms in 3T3-L1 adipocytes. To test this possibility in vivo, we increased the NFkB activity in adipocytes in transgenic mice by expression of NFkB p65 subunit under the aP2 gene promoter. The increase in blood levels of GLP-1 with dietary resistant starch is thought to be associated with the activities of hypothalamic NPY/AgRP neurons and the gene expression of glucokinase in the ARC of the hypothalamus. The purpose of this study was to assess the perception of Louisiana Food Stamp Nutrition Education Program (FSNEP) participants’ diet and other lifestyle measures and their consistency with the current Dietary Guidelines for Americans and MyPyramid compared to eligible non-participants in Louisiana. The study sample included FSNEP adult participants (Group 1; n=30) and adult non-FSNEP participants (Group 2; n=26) from 5 parishes in Louisiana. This study is an examination of infant communication and maternal responsivity in order to determine the impact of training on mother-infant communicative interaction. A sample of three mothers and their infants were observed during 10 minute free play sessions before and after a training intervention. The focus of the training was the principles of parenting contained in the Right-from-Birth: A Parenting Series (Grace & Lindsey, 2003) training. Reduced insulin sensitivity and abnormal nutrient metabolism in gestational diabetes mellitus (GDM) may compromise polyunsaturated fatty acid (PUFA) content of breast milk. The purpose of the present study was to evaluate and compare PUFA milk composition of women with and without GDM. Breast milk collections were performed in GDM (n=6) and controls (n=12) at weeks 2, 6, 10 and 12 postpartum using a hospital grade breast pump. Estimated dietary intake of PUFA and use of prenatal supplements containing DHA (PS/DHA) was determined by 24-hour dietary recalls conducted after each milk collection.
