In this analysis, we plan on developing vegetable mixes with high nutritional qualities and instant fuel consumption. These are to be used as a nutritional supplement in the feeding of children from 6 months of age. Initially, I selected the raw material, due to its high protein content and low cost (soy, tarhui, Cuban corn, rice, wheat, barley). They formed mixes with nutritional characteristics similar to the control for reference (15.5% of protein, 419 kcal of energy). From these formulas, different tests of completed production of mixtures, going so far as to obtain eight mixes with good nutritional and organoleptic …

Various studies have been done to determine the prevalence of anemia in our country, but these studies don't reflect the true magnitude of this sickness, considered in Ecuador a problem of public health since these investigations correspond to urban sectors and margins and not to rural places where the care is very deficient and in certain cases useless, mainly because of the difficult access and the lack of economic resources of the government institutions. To a large degree, the political and economic conditions of third world countries influence poverty levels, especially in rural areas. This poverty affects the availability of basic services, such as potable water, refuse elimination, housing, and sewage systems. As a consequence of these deficiencies, more diseases are transmitted through the water and environment. These diseases include acute diarrhea and acute respiratory infections in children younger than five years of age. Consequently, it is important to have available water and sewage elimination to control these diseases among children and the general population.

Obtaining And Sampling Of High Quality Energetic-Protein Mixtures (Pottages) Of Tuber-Cereal-Leguminous Bases In The Candelaria Area, Maria Lilian Maldonado Chavez

Theses and Dissertations

Specially designed foodstuffs destined for children of weaning age in the community of Candelaria were developed and evaluated biologically. These victuals had as bases combinations of tubers-cereals-legumes of high nutritional quality to be implemented in the home. Based on the availability of food and alimentary habits of the region, seven mixtures were formulated of triples and quadruples containing tubers (potato, oca, papaliza, and isano); cereals (rice, wheat, corn, and quinua); and legumes (tarwi, broad bean, and peanut). The cereal-leguminous proportion was maintained as one complement and the addition of the tubers. These mixes were subjected to biological tests, obtaining incremental …
