Restaurants are important institutions in the communities’ economy with the potential to promote healthier foods but have been under-engaged in public health nutrition efforts. In particular, independently owned, minority-serving and minority-owned restaurants, remain under-represented in nutrition promotion efforts despite disproportionate burdens of diet-related health outcomes among minority populations. Addressing this gap in engagement, we undertook a process of co-designing and implementing healthy eating-focused interventions in two Latin American restaurants in New York City, combining the Behavior Change Wheel intervention development framework with a Human-Centered Design approach. This paper examines how university students (aged 18 and older) in Buenos Aires, Argentina, navigate the challenges of escalating food insecurity amidst food price inflation and poverty. Utilizing a resilience framework, the research explores the coping strategies of these students. The study integrates semi-structured qualitative interviews and questionnaires. The findings reveal that university students in Buenos Aires are affected by food and nutritional insecurity, impacting their ability to manage their academic responsibilities, and leading some students to question their ability to complete their education. Anthropogenic greenhouse gas (GHG) emissions significantly contribute to climate change. Methane is a potent GHG emitted in landfills as organic material breaks down. Food waste is the single most common item disposed of in Lincoln’s Bluff Road Landfill (LTU, 2022). As such, food waste disposal in the landfill is a preventable issue that could dramatically reduce GHG emissions in Lincoln. Keterkaitan Spasial Produksi Ikan Tawar Dan Dampak Sosial-Ekonomi Masyarakat Di Kabupaten Magelang, Didi Nuryadin, Rodhiah Umaroh, Jamzani Sodik

Jurnal Ekonomi dan Pembangunan Indonesia

This research analyzes the spatial correlation between freshwater aquaculture production in Magelang Regency and the social and economic welfare of the community. Utilizing the Indeks Moran, LISA, and bivariate LISA methods, the results indicate inter-district correlations in freshwater fish production with a clustered distribution pattern. Mungkid and Muntilan districts are identified as production centers and hotspots. Freshwater fish production is also associated with community welfare, showing correlations with farmer groups despite a scattered distribution. However, the analysis of freshwater fish production and freshwater fish-based SMEs reveals a strong spatial relationship, particularly in Mungkid district, a central area fostering local development.

Chapter one devises an approach to adjust estimates of the number of food insecure for changes in sedentarism over time. Existing methodologies are biased upwards and date back several decades. We build a household model utilizing a Stone-Geary utility function, which rationalizes households shifting their labor decisions towards sedentary activities. Our comparative statics examine the impacts of changes in the productivities of sedentary types, as opposed to my physically demanding types, of activities and also their returns. Objective: Describe educator experiences teaching systems thinking in nutrition and dietetics education. Design: Qualitative, semi-structured, online interviews. Setting: Educators teaching in accredited nutrition and dietetics programs. Participants: Purposive sample of thirteen Registered Dietitian Nutritionists (92% female, 77% with > 6 years teaching experience) from each U.S. census region and accredited program type. Phenomenon of Interest: Educators described experiences teaching systems thinking in accredited programs, including benefits. Analysis: Transcribed interviews were analyzed using qualitative grounded theory iterative coding. Excel was used for data organization and thematic coding analysis. Student Exposure To Andhii Improves Confidence With Applying The Nutrition Care Process, Casey Colin, Tad Campbell, Michel Harris, Avalon Mustafa, Lindsay Woodcock

Journal of Dietetic Education

The objective of this study was to explore if using ANDHII improves NCP confidence and documentation quality. This quasi-experimental trial was conducted with n = 43 undergraduate dietetic students. NCP confidence was measured before and after a traditional case study, and after an ANDHII case study. Documentation quality was measured using a validated quality audit tool. Confidence increased from time 1 to time 2 (p = 0.008), and from time 2 to time 3 (p = 0.003). Documentation quality was higher for the ANDHII documentation compared to the non-ANDHII documentation (p < 0.001) but lower when compared to the traditional ADIME (p = 0.03). Familiarizing students with ANDHII improved NCP confidence. Opportunities exist to improve ANDHII functionality and positively impact documentation quality.

Background: Competency-based assessment (CBE) focuses on applying knowledge and skills to progress from novice to expert in clinical areas. The Future Education Model Graduate Program (FEMGP) incorporates CBE to meet enhanced competencies for nutrition and dietetics. Objective: This study explored FEMGP graduates’ perceptions of assessment methods and practices and perceptions of enhanced competency (EC) integration and preparedness for entry-level practice. Methods: This was a basic descriptive qualitative study. Background: Victims of human trafficking (HT) frequently face malnutrition, dehydration, low food security, and infections. When identified, victims of HT are normally treated with interprofessional team (IPT) care that often excludes Registered Dietitian Nutritionists (RDNs). Although RDNs are trained to treat these conditions, they may lack knowledge, confidence, and skills, for working with this population, as well as the opportunities to work on such IPTs. Diabetes camp is helpful in providing hands-on learning experiences and interprofessional learning opportunities through immersive experiences. Currently, there is little research comparing the changes in knowledge and perception during experiential learning in dietetics students at a residential diabetes camp. This longitudinal qualitative case study explored the knowledge, perceptions, confidence, and empathy gained by four dietetics students during experiential learning at the camp. Qualitative research methods (interviews, observations, "photovoice," journals, and focus groups) were used to explore and understand participants’ experiences of hands-on involvement with type one diabetes, and what they learned at camp that cannot be learned in a classroom. …

The objective of this study was to evaluate growth and reproductive performance of heifers developed using 3 different winter systems in the midwestern U.S. Spring-born heifers (n = 1,156; 214 d of age; SD ± 17 d) were used in a 3-yr study to evaluate performance in winter development systems, which utilized cover crop (CC) and corn residue grazing. The grape and wine industry in Iowa is based on non-Vitis vinifera grapes, which are not well-known by consumers and come with their own set of challenges, such as promotion. The Wine Wednesdays workshop focused on promoting awareness and knowledge of local wines and grapes. Results indicate gain in self-perceived knowledge and intention of behavior changes toward local grapes and wines. These workshops also participate in the development of relationships among wineries, which is overall beneficial for the local grape and wine industry.

Despite the importance of seed availability to food and agriculture, seed systems have received scant attention within Extension research and practice. To address this gap, we designed a participatory needs assessment revolving around the 2021 Northeast Organic Seed Conference to assess individuals’ experiences within Northeastern organic seed systems and their opinions concerning their resource access, challenges, and sense of empowerment. Based on a post-conference survey, our findings suggest that Extension’s future efforts should focus on facilitating partnerships between and among community-based/non-profit seed groups, at-home gardeners, seed companies, university researchers, and legal scholars to promote equity and inclusion.

Like racism or sexism, speciesism highlights how people fail to give due respect to nonhuman animals. After more than 20 years since the publication of Dunayer’s (2001) seminal work, Animal Equality: Language and Liberation, speciesism appears to remain a controversial issue. In Victorian England, cultural, industrial, technological, and financial flows led to two industries being subject to processes of professionalisation: catering and hospitality, and the independent press. As such, a new form of media emerged, the trade press, which catered for those working in the catering and hospitality industry. This press content documents not only the industry’s operations, but also the aspirations and attitudes of employees, their employers, and other key stakeholders. Hunger has always been a persistent trauma of mankind in every age. As a matter of fact, “hunger” which according to Seth Richardson can be defined as the "routine and everyday sub-nutrition, less than a famine and more than a temporary inconvenience" is “one of the most powerful, pervasive and (arguably) emotive words in our historical vocabulary” (Richardson, 2016; Murton, 1988).
