Organic Farming and Food Systems is a senior and graduate level course for students in the Department of Agronomy and Horticulture. This course was previously offered but has been significantly modified as I have taken on responsibility for the course. Goals for the course include student comprehension of the methods of organic and regenerative farming and the impacts of those methods on economic, environmental, and social sustainability. An additional goal is to build student competency in the evaluation of primary, secondary, and tertiary information resources and critical thinking surrounding issues in food production. Streaming With Butterflies: A Whole School Stream Project, Carey L. Averill, Janet M. Herrelko

This study explores the commitment of a school faculty to use the pedagogical practices needed to employ a project-based unit of Science, Technology, Religion, Engineering, Arts, and Mathematics (STREAM). The unit of study concentrated on environmental sustainability of butterflies through project-based learning (PBL). Teacher interviews were analyzed to reveal the similarities and differences, strengths and weaknesses in the teachers’ reactions to implementing a cross-curricula content unit designed for a pre-kindergarten (PK) to eighth grade school. Analysis of teacher data and classroom artifacts provided evidence of: content mastery at the student levels; implementation of scaffolding for developmental levels; and the need …

The University of Arkansas' Apparel Merchandising and Product Development program does not currently offer a course on sustainability in the apparel and textile sector. Due to a lack of sustainability information, students may not have a thorough understanding of their degree. If students had the opportunity to learn about current sustainability-related topics before entering the workforce, they would have a new perspective and a deeper understanding of the industry, allowing them to potentially make good change.

How can the teaching of biology contribute to sustainability education? The authors of this article suggest that their approach has the potential to increase the students’ level of engagement with the natural environment. The scope of biology teaching can be widened by allowing room for more experience and art-based activities. Such a change may deepen and expand the learners’ insights in natural phenomena, which in turn might foster or enhance an attitude of care-taking for the natural environment.

The world is at an energy tipping point. Countries and communities can choose to be proactive or wait and be reactive, however it is much less costly to do the former. In this project, high school environmental science students will examine the current energy use and concerns in a named country or community, analyze the pros and cons of the current energy situation and how it effects the social, economic and environmental aspects of the culture, then create a more sustainable, resilient plan for that country.

From water to energy, and from climate change to natural hazards, the geosciences (marine, Earth, and atmospheric science) have an important role to play in addressing a wide range of societal issues, with particular relevance to how humans can live sustainably on Earth. Although arguably important to developing solutions for many societal issues, more often than not, students have limited exposure to the geosciences in high school or college. Using the survey approach, this investigation examined the attitudes and interest of college students at two universities in different geographic locations within the United States. Approximately 24,000 students from all disciplines and majors at Weber State University (WSU) in Utah, and 4,000 at Purdue University in Indiana, were invited to participate in a study to determine current knowledge, familiarity, and interest in topics within the sustainability and Green Building educational arena. Designing A School Garden Space That Emphasizes Children's Wants And Uses Permaculture Design Methods, Mikhaela Mullins

A case study was organized at Saratoga Elementary school in Lincoln, Nebraska to obtain data on what children desire in a garden space. To collect this data a school garden space was constructed and an after school garden club was implemented. Students who participated in the after school garden club partook in the study by drawing their ideal garden. Elements that the subjects drew were identified and categorized into ‘highly desired’ and ‘somewhat desired’.

These elements were then incorporated into a proposed garden design plan for Saratoga. The proposal plan uses Permaculture design methods to emphasize sustainability.

The purpose of this study is related to Green Information Technology (IT), Green Computing, and/or Sustainability (GITS) curriculum initiatives in institutions of higher education in the US and abroad. An environmental curriculum was created to increase student's awareness about their environment. The purpose was to provide students with knowledge and skills to participate in environmental issues. Three sub-topics were researched, Waste Management, Water Pollution and Water Conservation. Lessons were developed for all three areas to implement in a first grade classroom. The lessons are diverse and will meet the needs of all learning styles.
