Covid-19 Impacts On Food Security And Systems: A Third Survey Of Vermonters, Meredith T. Niles, Emily H. Belarmino, Farryl Bertmann

This brief report highlights the findings from a third survey of Vermonters since COVID-19. We surveyed 600 Vermonters, representative on Vermont demographics on race, ethnicity and income in August and September 2020. We find that nearly 30% of Vermont respondent households were food insecure between March and September, with households experiencing a job disruption, households with children, and respondents without a college degree at greater odds for food insecurity. One-third of respondents used some type of food assistance program since the onset of the COVID-19 pandemic. Concerns about food access and challenges had largely gone down, on average since March …

Food insecurity in the United States is a complex issue. Nutrition interventions and studies are often designed for high-risk populations with others being overlooked. Until recently, few studies and interventions have focused on college-aged students. In order to understand the nutrition-related needs of students at the University of Maine, it is necessary to determine their cooking knowledge, attitudes, behaviors, and food security status. Study participants included college sophomores, juniors, and seniors [n=16 sophomores, (38.1%), n=15 juniors, (35.7%), n=11 seniors, (26.2%)]. BACKGROUND: Parents and early care and education (ECE) are the key influencers of young children's diets, but there is limited information about how each contribute to children's overall diet quality.
OBJECTIVE: This study aimed to determine what proportion of children's dietary intake occurs within the ECE setting and whether diet quality is higher at ECE centers and, consequently, on weekdays than weekends.
DESIGN: This cross-sectional analysis of a larger cluster randomized controlled trial used multiple 24-hour dietary intakes measured through a combination of the Dietary Observation in Child Care protocol and parent-reported food diaries.
