Background: There is an urgent need to assess the linkages between diet patterns and environmental sustainability in order to meet global targets for reducing premature mortality and improving sustainable management of natural resources. This study fills an important research gap by evaluating the relationship between incremental differences in diet quality and multiple environmental burdens, while also accounting for the separate contributions of retail losses, inedible portions, and consumer waste. Covid-19 Impacts On Food Security And Systems: A Third Survey Of Vermonters, Meredith T. Niles, Emily H. Belarmino, Farryl Bertmann

This brief report highlights the findings from a third survey of Vermonters since COVID-19. We surveyed 600 Vermonters, representative on Vermont demographics on race, ethnicity and income in August and September 2020. We find that nearly 30% of Vermont respondent households were food insecure between March and September, with households experiencing a job disruption, households with children, and respondents without a college degree at greater odds for food insecurity. One-third of respondents used some type of food assistance program since the onset of the COVID-19 pandemic. Concerns about food access and challenges had largely gone down, on average since March …

BACKGROUND: Breakfast skipping has previously been associated with worse diet quality among adolescents, although research from Canada is relatively sparse. Additionally, many studies do not consider diet quality as a function of calories, which is problematic as skippers tend to consume less energy than consumers.
PURPOSE: This study investigated breakfast skipping habits and Healthy Eating Index-2015 scores among teens in Southwestern Ontario.
METHODS: Cross-sectional, baseline data were used from the SmartAPPetite project, which is currently ongoing. 24-hour dietary recalls and sociodemographic information were obtained from participants and parents (n=512).

Food insecurity in the United States is a complex issue. Nutrition interventions and studies are often designed for high-risk populations with others being overlooked. Until recently, few studies and interventions have focused on college-aged students. In order to understand the nutrition-related needs of students at the University of Maine, it is necessary to determine their cooking knowledge, attitudes, behaviors, and food security status. Study participants included college sophomores, juniors, and seniors [n=16 sophomores, (38.1%), n=15 juniors, (35.7%), n=11 seniors, (26.2%)]. This study explored: (1) the overall frequency of food/beverage provision to children from non-parental sources; (2) frequency based on location/setting, source, type of food/beverage, and special event/occasion; (3) parental attitudes and awareness related to this provision; and (4) parent perceptions of children’s eating patterns during the COVID-19 pandemic. Parents (n =30) and children (n = 44) completed an online survey. BACKGROUND: Parents and early care and education (ECE) are the key influencers of young children's diets, but there is limited information about how each contribute to children's overall diet quality.
OBJECTIVE: This study aimed to determine what proportion of children's dietary intake occurs within the ECE setting and whether diet quality is higher at ECE centers and, consequently, on weekdays than weekends.
DESIGN: This cross-sectional analysis of a larger cluster randomized controlled trial used multiple 24-hour dietary intakes measured through a combination of the Dietary Observation in Child Care protocol and parent-reported food diaries.
