Introduction: Fish is an affordable animal source food that provides nutrition and serves as a source of income for many people especially women in Nigeria. Smoking and sun drying are the processing methods in practice that expose the fish products to possible contaminants which may consequentially negate their nutritive value.

Aim: To improve the knowledge of fish processors on nutrition and safe fish handling.

This project is intended to use Black Feminist Health Studies as an interdisciplinary approach to analyze the holisitc impacts of community gardens on nutrition behaviors. The implementation of green spaces such as community gardens have been correlated to both benefits and unintended consequences which this study demonstrates through the Socio-Ecological Wellness Wheel. An empirical and systematic way of measuring garden quality through an audit tool using Black Feminist Health Studies could help measure the nutrition environment of the community gardens and how they may influence fruit and vegetable consumption of food insecure populations. Exposure to environmental pollutants poses numerous risk factors for human health, including increasing incidence of cardiovascular disease and diabetes. Persistent organic pollutants, such as polychlorinated biphenyls (PCBs) have been strongly linked to the development of these chronic inflammatory diseases and the primary route of exposure is through consumption of contaminated food products. Thus, the gastrointestinal tract is susceptible to the greatest levels of these pollutants and is an important facet to study.

The paving of the Interoceanic Highway (IOH) brought rapid development to the Madre de Dios (MDD) region in the Peruvian Amazon. Development brings concerns of toxic trace element exposures, and road development has been a major driver of the transition from traditional to calorie-dense processed ‘Western’ diets in lower and middle-income countries. Typically the farmer has a direct relationship with the processors that puts pressure on them to abide by all laws and regulations. Cardiovascular disease is the leading cause of mortality in Western societies and is linked to multiple modifiable risk factors including lifestyle choices. Emerging evidence implicates exposure to persistent environmental pollutants, such as polychlorinated biphenyls (PCBs), as a risk factor for the development or progression of cardiovascular disease. Diabetes and cardiovascular disease are leading causes of death and disability in the United States. These chronic diseases are clinical sequelae of metabolic syndrome (MetS), a condition that affects approximately one-third (1/3) of American adults. Metabolic syndrome occurs in response to environmental and genetic influences, among them food intake, a sedentary lifestyle, BMI, advancing age, and exposure to persistent organic pollutants (POPs). POPs are known to cause endocrine disruption and PCBs cause oxidative stress, disrupt endothelial cell integrity, and promote atherosclerosis. This has been a debating topic since evolution of the Total Mixed Ration (TMR).
