Food Insecurity And Housing Instability In Vulnerable Families, Christian King

Reducing the prevalence of household food insecurity has been a long-standing objective of the federal government. Previous research has found many negative consequences of food insecurity for families and households but has not examined its relationship with housing instability. Using longitudinal data from the Fragile Families and Child Wellbeing Study, difference-in-difference models show that food insecurity is associated with housing instability. The association remains statistically significant after accounting for potential selection and unobserved heterogeneity using propensity score matching and excluding households that experienced prior housing instability from the sample. To properly evaluate initiatives targeting children's fruit and vegetable (FV) consumption, we need feasible and valid dietary assessment methods that are time, cost, and resource effective. The objectives of this study were to test the feasibility and validity of two methods, digital imaging (DI) and aggregate plate waste (APW), for assessing children's FV consumption. UVM dietary assessment team graduate students prepared and distributed FV snacks in two pre-school classrooms over 30 consecutive school days. Functional foods are believed to improve overall health and well-being and reduce the risk of specific diseases. Research has examined adult awareness and consumption of functional foods. However, research on whether parental awareness and consumption of functional foods results in feeding their children functional foods is lacking. Therefore, this study’s objective was to examine relationships between parental awareness and consumption of functional foods, and feeding their children functional foods. Parents of children in two school districts in Mississippi were surveyed (n=202).
