This report describes and analyzes the observations and experiences of the student during eight weeks of field training with the Division of Nutrition in the Florida State Board of Health. The purpose of the training was to supplement the academic education in public health nutrition at The University of Tennessee and the previous background of the student. The experience was designed to increase her understanding of the function of the Institutional Nutrition Consultant in the total public health program in a state agency.

Protein malnutrition is a problem in a major portion of the world where good quality protein sources are in short supply and expensive. Extensive studies have been carried out in order to improve the protein quality of certain existing foods which may be more abundant in a given community.

In this study the protein quality of a Turkish soup, tarhana, was determined by measuring its Net Protein Utilization (NPU), Diets containing tarhana were fed to rats at a level which gave 10 percent protein. The Effect Of Avitaminosis E On The Incorporation Of 35S-Sulfate By Rat Tissue Sulfolipids, Brenda Pearl Todd

The relationship between the sulfation of brain and liver sulfolipids was investigated by comparing the fixation of a test dose of 35S-sulfate by the sulfolipid fractions of brain and liver from rats fed vitamin E-deficient and -sufficient diets. Brain and liver tissue was divided into particulate and soluble fractions and the sulfolipid fraction extracted from each with chloroform-methanol. Following purification of the sulfolipid fractions by dialysis, the radioactivity in each fraction was determined by liquid scintillation.

The topics for investigation were the organization and programs of the Division of Indian Health in the Oklahoma City Area and the role and responsibilities of a public health nutritionist. A field experience of eight weeks was designed for the student to observe and participate in the activities of the Division of Indian Health in the Oklahoma City Area and in the Talihina Service Unit. Data were collected through conferences, interviews, observations, visits, and readings.
