In 2015, the rate of adult obesity in South Carolina was nearly 32%, which places South Carolina as the 13th worst state when it comes to the prevalence of adult obesity. Along with overall rates of adult obesity, South Carolina has the 8th highest high school student obesity rate with 16.3% of high school students being obese. These statistics are troubling because obesity is a primary cause of Type II Diabetes, high blood pressure, and many other negative health effects. A Study Of Teacher Practices And Perspectives On Nutrition Education In Maine Elementary Schools, Alexandra J. Courtney

The purpose of this study was to identify how multiple influencing factors on nutrition education, relating to professional development, teacher self-efficacy, teacher beliefs, program use, wellness policies, and environmental factors, influence the amount of time elementary educators spend teaching nutrition in their classrooms. The primary tool for data collection was a comprehensive survey developed using Qualtrics software. The survey was distributed to Maine superintendents and principals who were asked to pass the survey along to K-5 teachers. Introduction and Aims: Falls injuries among older adults, a widespread well-established contributor to high disability levels, excess morbidity and mortality rates, have many causes. This review examines the association between vitamin D levels and postural stability or balance control—a fairly consistent predictor of falls among older adults.

Materials and Method: All relevant English language peer reviewed research publications detailing the relationship between vitamin D levels and balance control among the elderly were sought. Key words included “Vitamin D and Balance or Postural Control.” Databases used were Academic Search Complete, PubMed, Scopus, and Web of Science.

Observationally, coffee is inversely associated with type 2 diabetes mellitus (T2DM), depression and Alzheimer’s disease, but not ischemic heart disease (IHD). Coffee features as possibly protective in the 2015 Dietary Guidelines for Americans. Short-term trials suggest coffee has neutral effect on most glycemic traits, but raises lipids and adiponectin. To clarify we compared T2DM, depression, Alzheimer’s disease, and IHD and its risk factors by genetically predicted coffee consumption using two-sample Mendelian randomization applied to large extensively genotyped case-control and cross-sectional studies. Background: To examine the association of glucose-6-phosphate dehydrogenase (G6PD) deficiency with adolescent physical and mental health, as effects of G6PD deficiency on health are rarely reported.

Methods: In a population-representative Chinese birth cohort: ªChildren of 1997º (n = 8,327), we estimated the adjusted associations of G6PD deficiency with growth using generalized estimating equations, with pubertal onset using interval censored regression, with hospitalization using Cox proportional hazards regression and with size, blood pressure, pubertal maturation and mental health using linear regression with multiple imputation and inverse probability weighting.

Neurovascular integrity plays an important role in protecting cognitive and mental health in aging. Lifestyle interventions that sustain neurovascular integrity may thus be critical on preserving brain functions in aging and reducing the risk for age-related neurodegenerative disorders. Here we show that caloric restriction (CR) had an early effect on neurovascular enhancements, and played a critical role in preserving vascular, cognitive and mental health in aging. In particular, we found that CR significantly enhanced cerebral blood flow (CBF) and blood-brain barrier function in young mice at 5-6 months of age. Indirect calorimetry (IC) measurements to estimate resting energy expenditure (REE) necessitate a stable measurement period or steady state (SS). There is limited evidence when assessing the time to reach SS in young, healthy adults. The aims of this prospective study are to determine the approximate time to necessary reach SS using open-circuit IC and to establish the appropriate duration of SS needed to estimate REE. Food insecurity and poor dietary consumption continue to impact low-income populations in the U.S. However, communities are developing ways to address it at the local level. Community Food Security Initiatives (CFSI) focus on increasing a sustainable, healthy food supply and food system while addressing food insecurity and dietary quality within a community.

The purpose of this study was two-fold: (1) explore CFSIs in low-income areas in a metropolitan Midwest city and (2) examine the effects of the initiatives along with other social-cognitive factors on fruit and vegetable consumption in persons participating in local CFSIs.

Background: The functions, food sources, deficiency symptoms, and toxicity symptoms are important for dietetic professionals to know and apply to community, food service, and clinical settings. Purpose: To assess nutrition and dietetic students' knowledge of vitamins and minerals and identify students' strategies for learning and retaining vitamin and mineral information. Methodology: Students from three universities in the western United States were invited to participate in cross-sectional study. Background Improving access to supermarkets has been shown to improve some dietary outcomes, yet there is little evidence for such effects on children. Relatedly, there is a dearth of research assessing the impact of a structural change (i.e. supermarket in a former food desert) on the home environment and its relationship with children’s diet.

Fucoxanthin is a xanthophyll pigment which occurs in marine brown algae (Phaeophyceae). The anti-diabetic, anti-obesity, anti-cancer, and antioxidant properties of fucoxanthin have been widely reported. Macroalgae, particularly brown seaweeds, grow prolifically around Irish coasts, representing a valuable resource of nutraceuticals such as fucoxanthin for functional food applications. The aim of this study was to maximise the solvent extraction yield from three anatomically discrete regions of the seaweed thallus: blade, stipe, and holdfast. The influence of high intensity ultrasound coupled with thermoprocessing on the inactivation of Geobacillus stearothermophilus vegetative cells and spores in skim milk powder was explored using response surface methodology and two polynomial models were developed. Optimization of cell reduction (4.8 log) was found to be at 19.75% total solids (TS), 45 °C, and 30 s, while optimization of spore reduction (0.45 log) was found to be at 31.5% TS, 67.5 °C, and 17.5 s. Purpose: A positive association between cardiorespiratory fitness (CRF) and cognitive function has been demonstrated mainly in children and older adults. Women attending college live in a cognitively demanding setting where optimal cognition matters but often experience declines in CRF. Our aim was to test whether CRF is associated with executive function in young adult women.

Emerging evidence suggests that n-3 polyunsaturated fatty acids (PUFA) promote brown adipose tissue thermogenesis. However, the underlying mechanisms remain elusive. Here, we hypothesize that n-3 PUFA promotes brown adipogenesis by modulating miRNAs. To test this hypothesis, murine brown preadipocytes were induced to differentiate the fatty acids of palmitic, oleate, or eicosapentaenoic acid (EPA). The increases of brown-specific signature genes and oxygen consumption rate by EPA were concurrent with up-regulation of miR-30b and 378 but not by oleate or palmitic acid. Background: Self-efficacy is a crucial component in effective health communication and health promotion interventions and serves as a moderator for behavior change. Although awareness and risk perception are important in the behavior change process, self-efficacy gives people the necessary confidence in their ability to engage in advocated health behaviors. Addressed is how local populations could reach certain objectives and satisfy certain needs using techniques characteristic of SSE and, thus, carve out a social and economic space of their own vis-à-vis anonymous markets, global actors, local and national elites. Trends in adult obesity have been used to motivate key public health policies in the United States. While these analyses provide important insights into the broad historical contours of the obesity epidemic in the U.S., they shed less light on the proximate mechanisms that have generated these changes and that will ultimately determine the long-term course and pace of change in obesity rates. Introduction: Chronic dieting can result in characteristic metabolic adaptations such as a suppression of resting metabolic rate (RMR). Previous research has focused on health outcomes related to metabolic suppression in female athletes, which include impaired menstrual and bone health. The study purpose was to assess the relationship between metabolic suppression and body composition, fitness, and eating behavior traits in exercising men.

Approach: Cross-sectional study comparing exercising men who display evidence of metabolic suppression (MS) and a control group (Con). RMR was used as a surrogate marker of metabolic suppression.

Acute Fatty Liver of Pregnancy (AFLP) is a very rare and fatal condition for both the mother and the unborn offspring accompanied by severe maternal liver dysfunction. AFLP usually develops during the third trimester of pregnancy with symptoms of liver disease. AFLP is associated with a mutation in the enzyme, long-chain 3-hydroxy acyl CoA dehydrogenase (LCHAD) which is involved in the mitochondrial beta-oxidation of fatty acids. Defective beta-oxidation of fatty acids results in the individual unable to metabolize fatty acids which then causes fatty infiltration in their organs, such as the liver. Hyperlipidemia is a condition of abnormally elevated levels of lipids and/or lipoproteins in the blood circulation. It is usually accompanied with obesity, type 2 diabetes, insulin resistance, hypertension and non-alcoholic fatty liver diseases (NAFLD) and has become a great threat to human health. New therapeutic strategies are needed for the prevention and treatment of both genetic intervention-induced hyperlipidemia and environmentally induced hyperlipidemia. In this study, we determined the therapeutic effects of a diseaseprotecting gut bacteria, Akkermansia muciniphila, and an annual legume, fenugreek, on hypertriglyceridemia induced by genetic depletion of cAMP responsive binding protein H (CREBH KO) in mice. Chronic, low-grade inflammation during obesity is associated with the development of metabolic dysfunction. The NLRP3 inflammasome is assembled in response to cellular stressors and leads to cytotoxic cytokines IL-1β and IL-18 production, which implicates the NLRP3 inflammasome in inflammatory conditions, including type 2 diabetes. Tocotrienols are antioxidant and anti-inflammatory forms of vitamin E. Delta-tocotrienol (dT3) displays NF-κB inhibitory and anti-oxidant abilities, and is easily isolated from the Annatto plant. Breastfeeding is frequently described as a woman's decision, yet this choice is often illusionary owing to suboptimal social and structural supports. Despite the passage of the Patient Protection and Affordable Care Act (2010) that requires all qualifying employers to provide mothers “reasonable” break time and a private, non-bathroom space to express breast milk, the majority of women in the United States still do not have access to both accommodations.

Purpose: This study aims to explore the correlation between students’ self-perception of body image and FITNESSGRAM scores, the relationship between children’s body perceptions and their actual body mass index (BMI), and to see if body image in children affects their physical activity level.

Methods: FITNESSGRAM fitness testing protocol and a survey developed for the KidQuest nutrition intervention program by South Dakota State University (SDSU) was used to assess the correlation between students’ (n= 319) self-perception of body image and FITNESSGRAM scores.
