Sugar Consumption Alters Perception Of And Response To Stress In Undergraduate Students: Understanding The "Freshmen Fifteen", Katherine M Keever

Psychological stress is a common part in everyday life that directly affects the body through the nervous system and neuroendocrine hormones. A perceived stressor leads to the activation of the hypothalamic-pituitary-adrenal (HPA) axis, and the synthesis and release of the glucocorticoid hormone cortisol from the adrenal cortex. Studies have linked the release of cortisol during high-stress periods to an increased intake of sugary and fatty foods, consistent with a suspected glucocorticoid-metabolic-brain- negative pathway, with high sugar consumption leading to lower stress and subsequently cortisol levels. For centuries, Western explorers, missionaries, and travelers have been bringing home tales of cannibals, which became the earliest documentation of the practice. Modern anthropology, however, has identified a serious concern with such early “documentation” in light of the rise of the ethnographic tradition: the authors of early reports did not consider the contexts in which the events they observed occurred. In the past, artificial sweeteners have been touted as weight loss solutions because they theoretically do not interact with the body’s metabolism. However, new research is being done to test this theory, but what is the public awareness of these compounds’ interactions with the body? This study was conducted to evaluate students' satisfaction with and importance of nine attributes of three unique all-you-can-eat university dining facilities at the University of Mississippi, the Grill at 1810, Marketplace at the Residential College, and the Rebel Market. The attributes included food quality, service quality, variety of menu items, cleanliness, nutritional content, availability of healthy options, location, atmosphere/environment, and image/reputation. Additionally, the study evaluated students' satisfaction with each university dining facility overall, the students' satisfaction versus importance at each facility.
