Abstract: Alzheimer’s Disease (AD) is a complex neurodegenerative disease that requires interprofessional collaboration. Pharmacological options are currently ineffective, increasing the need for preventative strategies to combat the rise of AD. Considerations of gut-targeted interventions have increased as a key component in the prevention of AD, based on the understanding that the state of the gut microbiome can impact cognitive function through the pathway known as the gut-brain axis.

Methods: This scoping review explored information on the gut-brain axis in persons with AD. A comprehensive search was conducted in November 2023. Forty reviews and 13 human studies were analyzed.

This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. Inonotus obliquus, commonly known as Chaga, is a fungal pathogen of birch trees, known to synthesize a range of phenolic compounds with remarkable health benefits. These presumed medicinal properties have generated increased interest in Chaga consumption. Prior research has demonstrated the diverse chemical composition of Chaga sourced from a variety of geographical locations. Background:The Expanded Food and Nutrition Education Program (EFNEP) is a federally funded program through the United States Department of Agriculture that offers nutrition education to low income families across the U.S.

Purpose:This study assessed the effectiveness of Maine EFNEP on food-related behavior change and diet quality as measured by the Healthy Eating Index-2005 (HEI). This study also explored the relationship between the results on the HEI and participation in food assistance programs such as Supplemental Nutrition Assistance Program (SNAP) and Women, Infants, and Children (WIC), as well as the number of hours spent in the program.

A few examples of these threats include pesticide exposure, habitat loss, and climate change. Ingestion of berries containing polyphenols is associated with lower risk of inflammatory, metabolic, cardiovascular and degenerative diseases. Diet has been shown to modulate the activation of the complement system, a set of over 50 proteins present in the circulation and tissues that reacts in response to damage or microbial encounter and is critical for the maintenance of homeostasis. Imbalanced activation is tightly correlated with inflammation and various pathologies. This quantitative research study explores the relationship between dietary patterns, hiker demographics, and total miles hiked during a backpacking trip on the Pacific Crest Trail (PCT). Long hiking distances, low rate of thru-hike completion, consumption of processed and ready to eat foods, weight loss, and large time and monetary strains are comthemes accepted anecdotally by the backpacking population11. However, these themes have yet to be adequately researched and validated for long distance backpackers and PCT backpackers specifically. PURPOSE: To assess the relationship of high school (HS) and collegiate (OM) household food security status (FSS) to current food consumption behaviors in a sample of NCAA Division 1 male, collegiate athletes ≥18 years of age (y). METHODS: A cross-sectional survey of NCAA athletes from a Southeastern Conference (SEC) university was approved by the Institutional Review Board and conducted during August-September, 2016. The questionnaire included the USDA food security survey module and questions related to disordered eating behaviors and food hoarding USDA methods were used to calculate FSS. The purpose of this study was to determine if green eating (GE), defined as environmentally conscious eating, in college students had an impact on BMI, health behavior, fruit and vegetable intake, physical activity, and perceptions of the campus environment. This was a cross-sectional study of undergraduate and graduate students (n=190) at the University of Maine. The GE Survey was used to determine GE stage of change; participants were classified as either pre-action (precontemplation, contemplation, preparation) (n=113) or post-action (action, maintenance) (n=77). Intercollegiate volleyball is a powerful sport that consists of two to three hour matches; therefore, optimal physical condition is critical for top performance. This study assessed nutrition and anthropometric parameters at the start and conclusion of both the spring 2009 (no intervention) and spring 2010 (intervention) off-seasons as well as additional measurements four months after the intervention. The subject' body composition, total energy, carbohydrate and protein needs were calculated and intakes were assessed. The purpose of this study was to determine whether providing residents of the James H. Quillen Veterans Affairs Medical Center Community Living Center with a choice of nourishment options between meals would improve their satisfaction with the nourishment administration process. As opposed to being given the same nourishment item each day, residents were offered choices from a nourishment cart based upon their diet order. The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

The purpose of this study was to increase knowledge of the effects of prenatal substance use and to introduce the special nutritional needs of pregnancy in two counties in a region with high rates of low birth weight and prenatal substance abuse. The hypothesis that antioxidant vitamins (ascorbate and tocopherols) along with urate protect blood plasma lipids from oxidation was tested. Dietary fat is also an important factor influencing plasma lipid peroxidation. The purpose of this study was to investigate the role of plasma antioxidants and dietary fat on low density lipoprotein (LDL) and plasma lipid oxidation. In the first part of this study, we compared the ability of urate and ascorbate to protect human LDL from in vitro oxidation.
