This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. This study examined the differences in parent/caretaker body mass index (BMI) and parent/caretaker-reported child overweight/obesity by food security status in a rural, Appalachian, Mississippi community, as well as the relationship of parent/caretaker BMI and parent/caretaker-reported child overweight/obesity to food security status. A cross-sectional survey of elementary school parents/caretakers recruited at three elementary schools in an economically-distressed Appalachian, Mississippi county was conducted. Parent/caretaker BMI was calculated from self-reported height and weight. Caretaker-reported child overweight/obesity was determined using caretaker report of a medical professional identifying child overweight/obesity within the past year. There is an urgent need to find effective interventions to prevent and reduce obesity as it is associated with chronic disease and decreased quality of life. Gaining a better understanding of how modifiable variables such as stress, sleep, physical activity, and food insecurity are related to eating behaviors associated with obesity is essential to guide the direction of future interventions and research. PURPOSE: To assess the relationship of high school (HS) and collegiate (OM) household food security status (FSS) to current food consumption behaviors in a sample of NCAA Division 1 male, collegiate athletes ≥18 years of age (y). METHODS: A cross-sectional survey of NCAA athletes from a Southeastern Conference (SEC) university was approved by the Institutional Review Board and conducted during August-September, 2016. The questionnaire included the USDA food security survey module and questions related to disordered eating behaviors and food hoarding USDA methods were used to calculate FSS.
