Background: Childhood obesity is continuing to rise, leading to long-term health consequences. Research shows that rural populations have higher rates of childhood obesity. There is a lack of research on how the home environment may affect this health disparity. Parents often enforce food rules to control their child’s eating habits, but the difference between the rural and non-rural populations in enforcing these rules is unknown.
Purpose: The purpose of the present study was to determine if there is a significant difference in food rules between rural and non-rural school-aged children, and if these differences correlate to BMI categories.

Evaluating The Dissemination Of The Icook 4-H Program Using Outcome, Process, And Fidelity Measures., Tara Gould

The iCook 4-H Dissemination Study, conducted in five states, was a control-treatment design to test whether a newly developed program for obesity prevention for youth could be successfully implemented by community leaders with minimal researcher involvement. Community leaders were primarily Cooperative Extension educators. A dyad model was used for youth (control=9.6±0.9 years of age; treatment=9.9±0.6 years of age) and their adult main food preparers (control=38.8±5.7 years of age; treatment=39.4±7.8 years of age). Background: Childhood obesity is a complex issue common in the U.S. today as it not only is associated with health-threatening comorbidities, but also increases a child’s likelihood of becoming overweight or obese during adulthood. To assess accelerometer-derived physical activity and sedentary time from 0 to 24- months in youth in the iCook 4-H program. The iCook 4-H Program was a 5-state, randomized, control-treatment, family-based childhood obesity prevention intervention promoting cooking, eating and playing together. Youth, 9-10 years old, and their main adult meal preparer, participated in the 12-week program followed by monthly newsletters and bi-yearly booster sessions until 24-months. Physical activity and sedentary time were determined for youth who wore an Actigraph GT3X+ accelerometer for 7 days at 0, 4, 12, and 24-months and met defined accelerometer compliance standards. Obesity among children is a public health concern. Preschool-­‐aged children, especially those from low-­‐income families, are no exception to the obesity epidemic. During the RD Parent Empowerment Program, parents of Head Start children in Johnson City, TN completed a structured education program over the course of 4 workshops related to healthy habits of families. The goal was to empower parents to shop smart, cook healthy, and eat right. Efficacy Of A Nutrition Education Program Designed For Grades K-3 Piloted In Johnson County Schools., Allison Nicole Lowry

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.
