Heart Disease has many different risk factors, including hypertension (high blood pressure) and high cholesterol. Research has shown that hypertension can be identified as early as adolescence, and preventative measures can be instilled in this age. However, the relationship between hypertension, high cholesterol, race, and income have not been studied in detail among adolescents. The present study analyzed the effects of different health factors on blood pressure and cholesterol levels in Caucasian and African-American girls ages 9-21 years old, the prime of adolescence. Background
Previous research on Uganda's poststroke population revealed that their level of dietary salt knowledge did not lead to healthier consumption choices.
Purpose
Identify barriers and motivators for healthy dietary behaviors and evaluate the understanding of widely accepted salt regulation mechanisms among poststroke patients in Uganda.
Methods
Convergent parallel mixed methods triangulation design comprised a cross-sectional survey (n = 81) and 8 focus group discussions with 7-10 poststroke participants in each group. We assessed participant characteristics and obtained insights into their salt consumption attitudes, perceptions, and knowledge. Qualitative responses were analyzed using an inductive approach with thematic analytic procedures. Relationships …

I make an annual summertime return to Naknek, a town on Bristol Bay where the salmon have made their own annual summertime return for thousands of years. My thesis is a series of nonfiction essays about my background there, both as a commercial fisherman and my upbringing. It is something I consider the “Part One” of a book still under the process of writing. It is a series of essays, alternating these two motifs of the salmon and of my experiences growing up somewhere like Naknek.

Pararescuemen are one group of Air Force Special Operations Forces (SOF) who engage in vigorous physical training to achieve mission readiness. This type of training requires high energy expenditures and matching dietary intake to support basic physiological needs and to meet performance demands. However, few studies have investigated the energy expenditure and dietary intake of SOF and none have specifically examined these behaviors in Pararescuemen. Santa Clara County conducts a Senior Nutrition Program (SNP) in conjunction with the City of San Jose, the Outreach Paratransit Program and local community-based organizations (CBOs) like Sourcewise (Lam, 2015). These programs combined represent a significant investment of public funds, with more than 45% of the SNP program’s funding coming from the county General Fund (Lam, 2015). Such a large financial commitment needs to demonstrate some benefit to the participants, and some positive outcomes from the current program design. Background: In a survey conducted between the years of 2011 and 2014 it was suggested that 36% of adults in the U.S. were obese with over 40.2% being middle aged adults. Obesity is associated with a number of comorbid conditions including diabetes, heart attacks, and strokes. Due to this it is one of the major factors driving up our annual medical care costs. iven the violence, objectification, domination, commodification, and oppression inherent in industrialized food production, some conscientious consumers have adopted vegan practices. This chapter discusses two conceptions of veganism, lifestyle/identity veganism, VI, and veganism as a goal/aspiration, VA. It argues that due to conceptual and practical flaws with VI, conscientious consumers should adopt VA. It considers and rejects the so-called compassionate carnivore movement. It then explores arguments denying the casual efficacy of adopting any form of veganism. It concludes that VA can make a difference, and those in consumer cultures are obligated to adopt and practice it.

This article discusses a dairy advertising campaign featuring skeptic Derren Brown. I explore the various health claims made in the ads as well as a report Brown featured on his website that claimed consumption of cow’s milk is linked to longevity. I discuss how dairy consumption is largely linked to race and ethnicity. It is a practice enjoyed primarily by European whites as most nonwhites are lactose intolerant. Lactose intolerance is a normal biological process associated with weaning, but it is medicalized and made deviant because it is not part of the white experience. I also mention comments made by …

Background:
Electronic word-of-mouth on social network sites has been used successfully in marketing. In social marketing, electronic word-of-mouth about products as health behaviors has the potential to be more effective and reach more young adults than health education through traditional mass media. However, little is known about what motivates people to actively initiate electronic word-of-mouth about health behaviors on their personal pages or profiles on social network sites, thus potentially reaching all their contacts on those sites.

Typically the farmer has a direct relationship with the processors that puts pressure on them to abide by all laws and regulations. Secondly, the shorter time between the farm and your table, the less likely that nutrients will be lost during the time it takes to transport food across the country. Some say that their downfall was a result of famine and inadequate nutrition. Surprisingly, most of the archaeological evidence surrounding the Classic Maya diet and subsistence methods indicates that they both adequately sustained the population to the point where there has been practically no change over hundreds of years. Our goal with the present proposal is to bring modifications to the dining experience in Kimball Hall at the College of the Holy Cross, so to encourage a more well-rounded approach, which would best represent the values of continuous learning and education of the whole person and reflect the mission of the College. In order to meet these goals, we recommend five changes to Kimball dining , which we plan to implement during the Spring 2017 semester in collaboration with two Montserrat seminars.

The United States is a rapidly aging nation. Older adults have higher rates of falls than any other age group. One in four older adults fall each year. Many of these falls are associated with sedentary lifestyles and decreased muscular strength effecting balance and gait performance. Physical activity (exercise) can reduce the risk of falls among older adults, yet adherence remains low. Exergames can increase adherence to interventions that promote health and physical activity. Social engagement can increase self-efficacy and motivation to exercise. Internalization and trafficking of ligand-receptor complex rely on a particular set of proteins, e.g. small GTPase protein Rab5 and its activators called guanine nucleotide exchange factors. Rab5-activating protein 6 (RAP6), a Vps9-containing protein, may participate in Rab5-mediated insulin signaling and receptor trafficking. A dicarbonyl compound methylglyoxal was found to alter insulin signaling in preadipocytes. This dissertation aimed to investigate the association of RAP6 activity on 3T3-L1 preadipocyte differentiation and those driven by methylglyoxal. Overexpression of RAP6 inhibited preadipocyte differentiation, Ser473-phosphorylation of Akt1, and expression of adipogenic marker PPARγ, but not C/EBPα. Methylglyoxal (10 µM) increased preadipocyte differentiation, proliferation and expression …

This brief is about the nutritional intakes of veterans with peripheral arterial disease, and expands on previous studies. For policy and practice, the research shows that physicians should play a role in educating veterans about long-term effects of their nutritional intakes, and that the DoD and VHA should create an educational program about nutritional intake. Suggestions for future research include using daily or weekly food diaries to increase reporting accuracy and using a more representative sample in randomized controlled tests.

Community garden interventions provide policy, system and environmental change at the community level to establish health behaviors, which act in contest to obesity risk factors. Limited research examines factors, which influence the sustainability of community garden interventions. Therefore, in this study, a sample of 10 Midwestern community gardens associated through funding from a health promotion organization in 2013, collected data through the interviewing and surveying of 10 garden administrators and surveying of 12 garden volunteers. This course is an introduction to food waste, and the impact waste has on our food system. We will introduces the current food recovery hierarchy, and examines how consumers, producers and distributors waste food. We will explore the environmental and social impact of food waste in our food system, and introduce social and policy initiatives employed to recover food. Students will read, refect and discuss the actionable steps being taken to shift our local food system's food waste into food recovery.

In December 2016, a panel of experts in microbiology, nutrition and clinical research was convened by the International Scientific Association for Probiotics and Prebiotics to review the definition and scope of prebiotics. Consistent with the original embodiment of prebiotics, but aware of the latest scientific and clinical developments, the panel updated the definition of a prebiotic: a substrate that is selectively utilized by host microorganisms conferring a health benefit. This definition expands the concept of prebiotics to possibly include non-carbohydrate substances, applications to body sites other than the gastrointestinal tract, and diverse categories other than food. Nonprofit Pay In A Competitive Market: Wage Penalty Or Premium?, Christian King, Gregory B. Lewis

Two competing theories argue that the nonprofit sector pays differently: Nonprofit employees may accept lower pay to be able to do meaningful work for a good cause, or they may earn higher pay due to nonprofit organizations’ tax exemptions and weaker incentives to hold down wages. To test these opposing expectations, we use the 2005-2013 American Community Surveys to examine pay differences among registered nurses working for nonprofit, for-profit, and public hospitals. We also test hypotheses that public and nonprofit hospitals have smaller pay disparities by gender, race, and relationship status. We find that pay is highest in nonprofit hospitals, …

Food security research with resettled refugees in the United States and other Global North countries has found alarmingly high rates of food insecurity, up to 85% of surveyed households. This is well above the current US average of 12.7%. However, the most common survey tool used to measure food security status in the US, the US Household Food Security Survey Module (HFSSM), has not been sufficiently validated for resettled refugee populations, leading to the risk that the HFSSM may actually be underestimating the prevalence of food insecurity among resettled refugees in the US.
