Obesity has reached an epidemic level in the United States. A number of epidemiological studies have established obesity as a critical risk factor for postmenopausal breast cancer (post-BC), whereas a reverse association holds prior to menopause. A significant scientific gap exists in understanding the mechanism(s) underpinning this epidemiological phenomenon, particularly the reverse association between obesity and premenopausal breast cancer (pre-BC). This study aimed to understand how folate metabolism and DNA methylation informs the association between obesity and pre-BC. The purpose of this study was to compare the effects of a protein-containing sport drink with a traditional non-protein sport drink has on ratings of perceived exertion (RPE) and finishing speed of an half marathon. Of the possible factors that would support including protein in a sport drink the primary one was its inhibitory effect on serotonin release in the brain. This could help attenuate perceived exertion, thus allowing individuals to compete at a higher level for longer durations (Davis, Alderson, & Welsh, 2000).

With diet being such a huge factor in the development of diseases, emerging research has supported that apple consumption is a promising candidate for disease prevention due to the high phenolic content it possesses. These polyphenols can be found in two forms: extractable polyphenols (EP) and non-extractable polyphenols (NEP). Polyphenols have been shown to have strong anti-inflammatory and anti-oxidant properties, but up until this point, most researchers focus on EP fractions, while NEP are neglected. Background: Most preschool-aged children do not consume an adequate amount of fruits and vegetables (F&V). Accessibility to F&V and parental influence are important factors in determining fruit and vegetable consumption in preschool-aged children. The incorporation of farmer’s markets at childcare centers as part of a farm-to-preschool program provides an opportunity to increase access to F&V and engage parents in supporting positive changes in their children’s dietary behaviors. Gaps in the farm-to-preschool literature include a lack of well-designed intervention trials that include a control group and rigorous evaluation tools.

Background: With increased obesity has come increased ready-made and fast food consumption and decreased homemade food consumption. Previous studies have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Background: It is suggested that increasing intake of fruits and vegetables may lead to decreased energy intake via substitution of higher energy-dense foods, such as snack foods (SF; i.e. candy, chips, cookies). This study investigated the impact of increasing fruit (F; grapes) intake, via increased portion size, on SF (potato chips) intake during a meal and whether increases in F intake affected total meal energy intake, via reducing SF intake (substitutive eating), in normal-weight adults. A secondary objective investigated whether the relative reinforcing value (RRV) of SF was a moderator of the substitutive relationship between F and SF.

Objective: The objectives of this research were to describe the proportion of packaged foods with front-­‐of package nutrition marketing or marketing to children that were high in saturated fat, sodium, and/or sugar content, and to delineate changes in the proportions of these foods from 2007 to 2014.

Methods: Front-­‐of-­‐pack nutrition marketing, child marketing, and nutrient criteria from the Nutrition Facts Label on all packaged food items in a large Midwestern supermarket were recorded in 2007 (n = 5,500) and again in 2014 (n = 6,324). The Live Well Springfield (LWS) movement is a collaborative effort of partner organizations in Springfield, Massachusetts. The project promotes healthy living by increasing knowledge and awareness of food and physical activity. A key LWS strategy was the creation of a website to function as an information hub. In addition to local event and health information, the website features 16 narratives depicting residents practicing healthy lifestyle choices, designed to encourage community engagement. To date, there has been no evaluation of the website’s reach and effect.

Overweight and obesity are risk factors for various chronic diseases. Sleep has been associated with overweight and obesity. One potential mechanism by which sleep may lead to overweight and obesity is through positive energy balance (i.e. energy intake exceeding expenditure). There are few studies examining the impact of sleep timing (onset and wake time) on diet and exercise. This study presents a formative evaluation of an afterschool program that combined youth development and school garden curricula. This program used a novel approach to teach elementary school children about fruits and vegetables and to engage them in advocacy for the physical activity and nutrition environments in their community. The youth development curriculum included sessions on team building, community pride, healthy eating and physical activity, and advocacy. Photovoice was used as a method to allow participants to assess their community and communicate findings with leaders. The purpose of this study was to compare factors that may influence menstrual irregularities of female adolescent high school cross-country runners, ranging from 13-18 years of age. A survey was utilized to determine the subjects age, year in school, exercise history, menstrual history, and training regimens and where the subjects sought nutritional information. The groups were separated according to their current menstrual status. One group (normal) consisted of subjects who currently had a normal menstrual cycle for at least one year (n=17), while the other group (abnormal) (n=18) experienced an irregular menstrual cycle.

The purpose of this study was to examine the correlation between dietary trans fatty acids and levels of total serum cholesterol, high and low density lipoproteins, and the ratio of total serum cholesterol to HDL in apparently healthy post-menopausal women.

Subjects (n = 21) were current members of the Eastern Illinois University Adult Fitness Program. All were moderately active Caucasian women determined to be post-menopausal and not taking hormone replacement therapy or lipid lowering medications. Mean age of the subjects was 69.1 ± 9.1 years.
