Due to suppressed metabolisms, powdered probiotics are generally more stable and more convenient for applications than the liquid form, but much work is needed to improve viability of powdered probiotics during processing, storage, and digestions. The goal of this dissertation was to fabricate delivery systems with an enteric biopolymer coating and a core of powdered probiotic ingredients. The principle of preparing powdered probiotics was to directly mix a concentrated cell suspension with hygroscopic food ingredient powders. Relative humidity can affect physical, biological, and chemical changes in biological samples through modification of water activity and is also known to be important in the fabrication of sensitive electronic devices. The HumidOSH is a free, open source, and self-contained system for creating a controlled relative humidity environment within the range of 3 to 97% with a 0.2% tolerance. Each HumidOSH unit also comes with a fan with adjustable fan rotational speed to improve moisture uniformity inside the chamber. Globally, rice producers are faced with the temporal problem of deciding the optimal time to harvest rice. When harvested, paddy rice is typically at a harvest moisture content (HMC) between 15% and 22% and subsequently dried by the mill to a moisture content (MC) of 12.5%. Riceland Foods Inc., the largest miller of rice in the world, uses a stair-step pricing model to charge farmers to dry, which can complicate the timing of harvest as producers try to balance the tradeoff of minimizing drying costs by waiting to harvest at lower HMC vs. maintaining higher rice quality typically observed when …

The ability of high intensity ultrasound to produce stable emulsions without the addition of surfactant was evaluated in a dairy-based formulation. The formulation consisted of protein (4.33 ± 0.05%, whey protein concentrates (WPC80), carbohydrates (21.52 ± 0.75%, sucrose and maltodextrin), oil (2.90 ± 0.05%, soybean oil), and surfactant (0-.05%). Pre-emulsions formulated with either 0, 0.025, and 0.05% of soy lecithin were treated for 5 min at an acoustic intensity of either 42.58 ± 2.98, 56.83 ± 3.01, or 70.48 ± 2.97 W cm-2. Grain in Africa and indeed most developing parts of the world are stored in polypropylene or jute bags arranged in stacks of varied dimensions in naturally ventilated warehouses. This practice is, however, associated with high postharvest losses due to poor temperature and moisture management during storage. This constitutes a major economic and food security challenge in these countries.
