Pastures in Tennessee comprise mainly tall fescue [Schedonorus arundinaceus (Schreb.) Dumort.], a cool-season perennial grass. Tennessee producers feed hay for an average of 143 days per year, there is interest in utilizing stockpiling to extend the grazing season. Although this practice has been proven to reduce hay needs (Freeman et al., 2019), it is vital to maintain up-to-date recommendations using data from across the southeastern US to inform nutritional management decisions. The dam vaginal microbiota is the first major microbial inoculating community within the neonate. The composition of the dam vaginal microbiota has implications in calf commensal microbiota development. Alterations of the dam microbial community prior to parturition could alter inoculating communities and immune responses in both the dam and calf. Thus, authors aimed to elucidate the microbial community composition of the bovine dam vaginal and calf nasal microbiota post-partum after utilizing betadine lavages (BL). To continue to meet the demands of increasing food production and environmental sustainability, new strategies are needed to enhance the efficiency of finishing cattle production. A review of the literature identified several nutritional and physiological constraints that limit the ability for cattle to digest starch and absorb glucose from the small intestine. Comparative sequencing analyses revealed a missing region of the sucrase-isomaltase protein which could affect the capacity for starch digestion in cattle. Post-flaking sampling and handling recommendations were generated based on a series of experiments to improve estimates of starch availability and flaking consistency for commercial feedlots and laboratories. …

Brewer’s spent grains (BSGs), a byproduct from beer production, are generated in excess globally. Most often, they are sold or given to proximate cattle farmers for use as feed. However, spent grain can also be used as a medium for fungal cultivation. Given that certain fungal species have the capability to degrade lignin and produce protein, the cultivation of fungi on spent grains may serve to enhance the nutritional profile of the grains for their use as cattle feed. Recent years had seen a significant rise in the use of beef semen on dairy cows in the United States. This trend was not widely understood, especially as it related to dairy farmers in New Hampshire. A survey was sent out by mail to the ninety-seven dairy farms in New Hampshire. There were thirty-seven responses to the survey. Thirty-two out of thirty-seven respondents bred beef semen to their dairy cows. Twenty-one of these respondents raised dairy x beef on their farms and twenty-six planned to continue breeding dairy x beef. The most common breeds used in dairy x beef crosses …

Animals have trillions of microorganisms living in or on many body sites, these communities of microorganisms are called microbiomes. Microbiomes are typically host-specific, and a lot of information about the host can be determined from investigating them. Microbiome research has many real-world applications, and this thesis utilizes the One Health perspective, which acknowledges the connection of humans, animals, and environments, and emphasizes the need for collaborative, interdisciplinary research. This thesis consists of two chapters discussing the economics of raising stocker beef cattle in the southeast United States. The objective of the first chapter is to estimate supplemental feed cost for spring-calving cows, spring-born stockers, cows calving in the fall, and fall-born stockers, while considering the seasonality of forage production and nutritional needs. The chapter explores ways producers can lower their feed costs and demonstrates the importance of managing hay expenses for cattle producers to control cost. A breeding program utilizing single fixed-timed artificial insemination (AI) was compared to a resynchronization program for a second fixed-timed AI. Angus and Angus cross primiparous and multiparous cows were randomly assigned to one of two treatment regimens; either single TAI (CON; n=468) or two sequential TAI (RS; n=473). The main objectives were assessing pregnancy rates and analyzing fetal age to estimate calving distribution rates between the two treatment groups. The 7-day CO-synch + CIDR protocol was utilized in both treatment groups to synchronize estrus for TAI-1 at 60h - 66h post- Prostaglandin injection (PGf2α). Animals in the RS treatment groups …

Programmed Nutrition Beef Program (Alltech Inc.) is a dietary supplement that contains Aspergillus oryzae fermentation extract with α-amylase activity that could reduce the use of feed additives such as monensin and tylosin in conventional feedlot diets. This study examines the changes in rumen fermentation resulting from feeding monensin/tylosin and Programmed Nutrition Beef Finisher. The goal was to determine if these shifts in rumen fermentation contribute to the Programmed Nutrition response observed in vivo. Failure of beef carcasses to achieve desirable carcass specifications represent inefficiencies within the supply chain, namely greater carcass processing costs and the inability of the resulting primal cuts to conform to high-value market specifications. Analysis of a representative sample of prime Irish beef cattle conducted in this thesis determined that 59% of cattle fail to achieve the desired carcass specifications of the supply chain at slaughter. Three studies were undertaken to examine strategies to mitigate environmental stress faced by Northern Plains cattle feeders. In the first study, 46 feedlot managers from SD (n = 21), MN (n = 6), and NE (n = 19) were surveyed on use and perceptions of heat stress (HS) mitigation strategies. All respondents avoided cattle handling during heat stress events and incorporated some method of HS mitigation. Buildings or shades were perceived as the most successful strategy (60.9%) and were most commonly named as strategies managers would like to employ (63% for shades and 17.4% for buildings). Utilizing summer annual grass-legume forage mixtures has the potential to improve forage yield and nutritive characteristics, and/or animal performance during times when cool-season pasture growth is limited by high temperatures. Legumes can utilize atmospheric nitrogen, which can increase crude protein and forage digestibility in mixtures. As nitrogen application generally improves both the yield and nutritive characteristics of summer annual forages, but can have a negative effect on legume competitiveness, nitrogen fertilizer recommendations for legume-containing summer annual mixtures are not well established.

Experiment 1 tested the hypothesis that ad libitum consumption of a 1:1 blend (MIX) of sodium selenite (ISe) and SELPLEX vs solely ISe as selenium (Se) supplements (27 ppm) in a vitamin-mineral mix (V-M) by steers subjected to summer-long grazing of toxic endophyte-infected tall fescue (TE) would ameliorate the negative effects of TE by positively affecting the expression pattern of prolactin (PRL) and NF-kB pathway genes by circulating leukocytes (WBC). A survey of East Texas beef cattle producers was designed to evaluate the management practices that were prevalent in the area. Demographic and cattle operation data from 103 respondents were analyzed using SPSS (Version 25; Chicago, IL). This electronic-based survey was distributed through Qualtrics. Respondents were located in Angelina, Nacogdoches, or Cherokee county. Most producers (38.8%) had a Bachelor’s degree. A negative correlation was established between castration method and weaning weight (p = - 0.204). Calves were weaned 50 pounds heavier when band or surgically castrated. Females were less likely to castrate their calves or utilize a mineral program. Approximately, …

The purpose of this study is to determine if a optimal time of year exists for beef producers to have cows give birth in southwest Missouri for maximal net returns from calf sales and increased cow reproductive performance. The purpose of this research study was to compile regional profiles of the consumers who intend to consume grass-fed beef in the U.S. and to create marketing strategies that would assist producers in marketing their product to consumers. The researcher sent an online survey to a panel of 484 consumers across the U.S. to learn about their perceptions of and intention to purchase grass-fed beef.

Two experiments were conducted to determine animal performance of alternative feeding strategies to heifers grazing endophyte-infected tall fescue during summer months. In Experiment 1, 40 Limousin heifers (261± 40kg initial BW) were stratified by weight and assigned to either a spring harvested tall fescue silage diet or grazing endophyte-infected tall fescue pasture with grain supplement having either natural or artificial shade for 80 days. Production of beef cattle represents a $60 billion industry in the United States (USDA, 2015). The American beef cattle industry loses an estimated $370 million annually due to heat stress (St-Pierre, 2003). As of 2003, this was equal to nearly 99 million pounds of beef lost (USDA, 2015). The average American consumed roughly 65 pounds of beef in 2003; this means that the 99 million pounds of beef lost to heat stress would have been enough to feed approximately 1.5 million Americans for an entire year (Barclay, 2012).
